or MYP for the 2015-2016 school year? The new Roland Park Homeroom Parent
Guidelines and Homeroom Parent Application are now available!
Being a Homeroom Parent is a wonderful opportunity to help your child's teacher
see their wishes come true during the school year and to be a part of your child's
educational and social growth. Becoming a Homeroom Parent also allows you to
help create a strong community within Roland Park through working together and
having many occasions for fellowship. It is dedicated parents like you that will
help to make Roland Park a huge success!

Dragons with Mallets and Dragons in Harmony will have their Spring Concert
June 1st in the Roland Park Multipurpose Room at 6pm. Please join us for an
evening of excellent music.
CUB SCOUTS PACK 19
We have several activities and campouts planned for summer time! June will be
our Canoe Outpost trip. We are looking forward to a safe and fun summer. If
you are interested in joining or just coming along to see if Scouting is for you, all
are welcome.

THE GARDEN
We would like to extend our sincere thanks to all of the Roland Park families,
faculty, staff, and administration who have helped kick start the revitalization of
the Roland Park Discovery Garden this spring. In a few short months, we
established four garden beds, built out an irrigation system, planted peach trees,
set up our seed table, and started composting. The garden produced kale, green
and red chard, collards, Romaine lettuce, pole beans, carrots, heirloom
tomatoes, yellow corn, three different types of cucumbers, avocado squash,
many different herbs, and our eggplant is almost ready for harvest. In just the
last couple of weeks, we have also had all of the Kindergarten classes visit the
garden for a lesson on natural resources and sustainability while a fourth grade
class visited for a lesson on composting. We hope to coordinate with more of our
teachers next fall so that more students can take advantage of all our garden has
to offer. With some of the basics already established, we look forward to kicking
off the 2015-2016 school year with early fall planting as well.
Our final garden meetings will be held Tuesday, June 2nd from 8-9 AM and from

this summer as there is a possibility that we may hold a few garden meetings
over the summer months. There you will also find many pictures of all of the
work we have completed in the garden this year as well. Have a wonderful

Summer Vegetables – what to do with them?
Summer is the best time to enjoy and experiment with the bounty of beautiful
vegetables and fruits available in your local market. If you need inspiration, just
visit our Discovery Garden. Here are some suggestions for ways to incorporate
fresh vegetables into your summertime cooking.
1. Eat them raw in salads or cold soups. Try a new gazpacho recipe that
substitutes watermelon for the tomatoes (see recipe below).
2. Roast them – everything tastes great basted in olive oil and roasted in a 425
degree oven or on a grill.
3. Pickle them. Most vegetables can be pickled and used as sandwich
toppings, in salads, or as the basis of a great slaw (see recipe below).
4.
Create a beautiful vegetable quiche for a simple summer dinner.

Watermelon Gazpacho (from EatingWell.com)

8 cups finely diced watermelon
1medium cucumber, peeled and diced
½ red pepper, seeded and diced
½ cup chopped fresh herbs like basil, oregano, mint
3 tablespoons red-wine vinegar
2 tablespoons minced shallot (can sub in onion but use less)
2 tablespoons extra-virgin olive oil
Salt to taste
Toss all ingredients into a bowl. Measure out six (6) cups and set aside the
remaining chopped mixture to use as garnish. Puree the six cups in a blender or
food processor (you may need to do this in two batches). Adjust flavoring with
salt and herbs as needed. Serve either at room temperature or chilled, with the
chopped ingredients as a garish.
Pickled Vegetable Sandwich Slaw (from SmittenKitchen.com)
Pickling Mixture

1 cup distilled white vinegar
·
4 tablespoons sugar
·
2 tablespoons Kosher salt or sea salt
·
2 tablespoons yellow mustard seeds
·
1 cup cold water
Slaw mixture
·
3-5 cups of mixed julienned raw vegetables
Experiment with different types like carrots, peppers, radishes, red or yellow
onion, cucumber, firm squash, sugar snap peas, zucchini, and jalapenos. You
can purchase vegetables already julienned but they are more expensive. You
can cut them by hand or use a mandoline slicer, food processor attachment or
julienne vegetable slicer to cut down on the time.
**Reuse pickle jars from the store. You may need 1-2 for this recipe depending
on the amount of vegetables you plan to use.
Heat the vinegar, sugar, salt and mustard seeds to a simmer in a small pot on
moderate heat, stirring until the sugar and salt dissolve. Stir in water, turn off
heat and let the mixture cool.
Place vegetables in your clean jar(s). Pour vinegar mixture over vegetables and
refrigerate until needed. They will taste pickled within about one hour and last
about one month.
Use to top sandwiches or mix with shredded cabbage for a great slaw.
