There are two interesting dictionary descriptions: Spirits - Strong distilled alcoholic liquor such as brandy, rum, whisky, or gin Spiritual - Relating to the human spirit or soul as opposed to material or physical matters The origin of the word Spirit actually comes from the old French word esprit, and from a Latin word spīritus, both meaning breath and spirit. There is certainly a beautiful connection between them and when it comes to old and rare whisky and cognac such as what we are offering in these pages … there seems to be a spirituality in these old spirits that is beautiful to both taste and breath. Spink Fine Wines hope that whether you are a collector, investor or a simple hedonistic drinker you will enjoy the offerings in this sale. Sláinte (Scottish Gaelic, pronounced slahn-ch ) "health" 乾杯 Anna Lee WWW.SPINK.COM AN EVENING OF EXCEPTIONAL SPIRITS AND COLLECTIBLE ACCESSORIES WWW.SPINK.COM MARCH 20, 2014 - HONG KONG Rare & Old Scottish Single Malt Whisky Spink Fine Wines is honored to present an impressive Single Malt Whisky collection from Lowland to Islay, all bottles lying in Hong Kong. There was a rather incredible run of casks from 1972 numbered in the low 700s (this one now is 718) that were … simply put … awesome. One was a Malt Maniacs award winner … another earned some Whisky Mag accolade. Perfect label, very top shoulder HK$9,500-11,500 Perfect label, very top shoulder HK$7,500-8,500 7 AN EVENING OF EXCEPTIONAL SPIRITS AND COLLECTIBLE ACCESSORIES Speyside 3 4 Glendronach - 20 year old - 1990 70cl 57.9% Distillery Bottling Oloroso Sherry Butt, Cask No 2621 546 bottles produced Glenfiddich 18 year old Ancient Reserve - Black 75cl 43% Distillery Bottling This Glendronach 1990 has multiple personalities, it shows a typical nutty sherry but also fresh fruits and hints of matchsticks that associate with some Karuizawas. Glenfiddich's "Ancient Reserve" 18 year old whisky, packaged in a black ceramic Spode decanter. A Glenfiddich that scores with an impressive smoothness rather than complexity. Perfect label, very top shoulder Perfect label, very top shoulder HK$2,500-3,500 HK$3,500-4,500 WWW.SPINK.COM MARCH 20, 2014 - HONG KONG Speyside 5 Glenfiddich Ultimate 70cl 40% Distillery Bottling 1 decanter in presentation box Glenfiddich Ultimate represents the pinnacle of our exceptional whiskies, distilling 125 years of experience into an exclusive and rare expression produced in small vattings. Aged 38 years old, this sublime single malt comes in a special decanter cast in flawless, hand-blown lead crystal. Each bottle is hand-numbered and accompanied by a brass identification card. Only 600 were ever made for the China market. This expression is deliciously smooth and the colour of rich gold, with a wood spiciness imparted by sherry butts, complemented by layers of creamy vanilla and rich flavours of caramelised fruit. Level: Top shoulder HK$70,000-80,000 9 AN EVENING OF EXCEPTIONAL SPIRITS AND COLLECTIBLE ACCESSORIES Speyside 6 7 6 Glen Grant - 37 year old - 1974 70cl , 49.3%, Berry Brothers & Rudd Bottling, Cask No 7646 8 This Glen Grant was bottled by Berry Brothers and Rudd in 2012 and packs thirty-seven year of cask ageing. Glen Grant was the first distillery to be built in the Speyside town of Rothes. Perfect label, very top shoulder HK$3,000-4,000 7 Glen Grant - 21 year old - 1967 75cl, 40%, Distillery Bottling, 1 crystal decanter in presentation box Glen Grant was the first distillery to have electric light and they introduced the tall slender stills and purifiers which creates the fresh malty flavour and clear colour that defines Glen Grant whisky to this day. Perfect label, very top shoulder HK$5,500-6,500 8 Glenlivet - 29 year old - 1969 70cl, 52.76%, Distillery Bottling The declared age on a whisky label refers to the number of years the youngest whisky in the bottle spent maturing in oak casks. In the case of this Scotch whisky from Glenlivet that is 29 years. Perfect label, very top shoulder WWW.SPINK.COM HK$9,500-11,500 MARCH 20, 2014 - HONG KONG Speyside For reasons not even Science can wholly explain … Whisky has always matured best in oak casks that have contained sherry. Due to increasing expense and scarcity, other distilleries no longer insist on sherry casks. THE MACALLAN DIRECTORS DO. Journeying annually to the bodegas of Jerez, they buy fresh oak casks into which they pour mature, carefully chosen sherries, then keep them for two further years in Spain before having them shipped over to be filled with whisky. The results are shown partly in the Macallan’s rich golden colour, partly in the ‘nose’ and wholly may we venture in the tumbler. 9 10 The Macallan-Glenlivet Crystal Decanter 35 year old 75cl 43% Bottled by Gordon & Macphail, Elgin Edinburgh Crystal Decanter and Stopper in presentation case Macallan-Glenlivet - 27 year old - 1971 70cl 54.2% Good label, Level: 3cm below cork Perfect label, very top shoulder HK$20,000-30,000 HK$8,000-10,000 A 1971 vintage Macallan from independent bottlers Signatory. Only 1953 bottles have been produced for the UK market to mark the 60th anniversary of Elizabeth II's coronation in 1953, with the Windsor red, blue and gold packaging having been designed by David Holmes. The golden whisky features an iconic photo of the Queen in 1953, taken by Cecil Beaton, and was matured in American Oak whilst the bottle with the deep bronze (mahogany in the bottle) hue features a portrait taken by Julian Calder in 2004 and is matured in European Oak casks from Spain. Cecil Beaton Bottle (58.1%) Nose: Initial Sherry gives way to lightly salted cashew nuts, Sun-Maid raisins and orange oil. Wine gums and banana develop on a rich, syrupy nose. Palate: Dignified but creamy oak and spice with sultanas. Creamy Wine Gums again on the tail with a little water. Finish: Pleasing, subtle oak and a touch of cherry. Overall: Majestic. Julian Calder Bottle (55.7%) Nose: A sweet, rich start becomes more substantial with dark oak notes and honeycomb. A little water opens this up for fuller, rich, dark Christmas cake, dates and demerara. Palate: Oak intensity is saved by exquisite espresso. Again, water helps here, revealing prunes, dates and tobacco. Finish: Long with oak and cocoa. Overall: Magisterial. It also happens to be one of the greatest Macallans ever release. It is recognized as a classic Macallan. WWW.SPINK.COM MARCH 20, 2014 - HONG KONG Speyside 30 31 Macallan Diamond Jubilee - 60 year old - 1952 70cl 52% Distillery Bottling Macallan - 41 year old - 1967 70cl 43% Bottled by Gordon & Macphail This is a limited edition sherry-matured bottling of Macallan for the Queen’s Diamond Jubilee and suitably only 2012 bottles were made to commemorate the year. The casks selected were taken from relevant dates, for example the 6th of February (the date of the Queen’s accession) and the first week of June (when Jubilees tend to be celebrated). If this was not enough it has been bottled at 52% ABV as a reference to the year of the Queen’s coronation. Is that enough figures in one whisky? This Speyside whisky was distilled by The Macallan in 1967. Bottled and released by Gordon & Macphail this is a good example of an indie bottling of The Macallan. At a volume of 43% ABV this whisky is bottled at an optimal drinking strength. Karuizawa (軽井沢) Distillery Karuizawa Distillery was established in 1955 in the foothills of Mount Asama (淺間山), an active volcano north-west of Tokyo, to make a single malt whisky in as traditional a manner as possible. At 850 metres above sea level, the distillery is the highest in Japan; low temperatures and high humidity provided an ideal micro-climate for whisky production. The Karuizawa Distillery ceased production in 2000, and was officially closed in 2011. Therefore Karuizawa became one of the legendary single malts no longer produced in Japan. Karuizawa whiskies have received numerous awards in the recent years and because of their extremely limited availability, they are heavily sought after by private collectors. 73 74 Karuizawa - 30 year old - 1981 70cl 55.9% Distillery Bottling Karuizawa 45 year old 70cl 59.6% Distillery Bottling A rare bottling of whisky from Karuizawa, offering a great tasting overview of the distillery's character. It is situated to the west of the town of Karuizawa, which is a popular mountain resort for Tokyo highflyers. Karuizawa whisky is rare, due to the low production capacity and the distillery prides itself on its use of traditional whisky making methods. They import Golden Promise barley from Scotland, which was historically the most common barley used there and mature their whisky mostly in sherry casks imported from Spain. The water used in production has flowed through or over the volcanic lava rock and soil that surround the distillery, giving it a unique quality. Early releases were mostly blends appearing under the ‘Sanraku Ocean’ brand name, a 1970's favorite. Released in 1987 commemorating the 120th Anniversary of Port of Kobe. Sadly only 2000 bottles of this nectar were released - but quality such as this just can't be mass-produced. Blended from 11 of the finest vintages of the 20th century (1900, 1918, 1929, 1939, 1947, 1953, 1959, 1961, 1970, 1983 and 1990 vintages) and overseen by master blender Yann Fillioux, this is a stunning connoisseur's cognac. The beautiful pebble-shaped crystal decanter for Hennessy "timeless" was designed by Thomas Bastide of Baccarat, France’s most prestigious crystal house. Captured in an eye-catching steel frame, the Timeless decanter caused a sensation on release and is today recognised as a genuine design classic that many have sought to emulate, but most have failed to achieve. Producer's Tasting Notes: Colour: Luminous golden colour and exceptionally bright for such a cognac. Each eau-de-vie in "timeless", through its extraordinary quality and ageing potential, has benefited from being aged in barrels with a very low tannin content. Only this type of ageing favours the perfect, natural blossoming of aromas of those eaux-de-vie which are suited to a long ageing period. Aromas: Delightful aromatic bouquet, a blend of fresh floral and fruit aromas quickly giving way to the headier scents of cinnamon and spices. On the palate: An astonishing balance born of the marriage of lively sharp fruit flavours and the more complex notes of antique leather, oak and pepper. A very harmonious combination with good length. Made in France, it has a full flavor and a rich tradition that dates back to 1559 when St Vivant de la Salle produced the first bottle of Armagnac Brandy. The famous "crooked bottle" recalls the original bottles used by St Vivant. Today, St Vivant still uses select white wine grapes, native to the southwestern French region of Gascony. These grapes are fermented and distilled in a traditional copper pot still. The resulting spirits are aged in oak casks until they are transformed into a full-flavored 80 proof brandy. The St Vivant cellar master then begins his delicate task of blending the brandy until he achieves the St Vivant Armagnac's smooth, consistent flavor and golden amber color. 75cl / 40% volume HK$1,200-1,500 142 Lagarde Bas Armagnac Selection This is singled distilled from grapes sourced from the Laquy village area, creating a rounded, supple, medium bodies spirit with delicate floral and citrus notes. 75cl / 40% volume HK$3,000-4,000 143 Lagarde Bas Armagnac Reserve It features the subtle aromas of plums, peaches and nuts with a touch of citrus peel and prune. The palate is smooth and rich with an incredibly long, warming finish. 75cl / 40% volume HK$5,000-6,000 65 AN EVENING OF EXCEPTIONAL SPIRITS AND COLLECTIBLE ACCESSORIES This book is essential reading for all wine enthusiasts. It is also an unrivaled reference for dealers or collectors. "Robin Butler’s new book is a wonderful guide and compendium to the fascinating physical evidence of all this that lies around us today, still as useful (much of it) and beautiful (some of it) as ever. The objects themselves are fascinating – and increasingly valuable. The explanations and anecdotes that surround them, and sometimes the identities of their makers and their original owners, all add up to a rich and vivid chapter of our social history."
