Therefore, we cook our noodles and then plunge them
into cold water to stop the cooking process. Then we
package our piping hot broth separately so that the
noodles don’t continue to cook.
When you get to your final destination all you have to
do is add the broth (you can heat it up and give it a stir
first) to your noodles and toppings.
