Chaîne des Rôtisseurs Association Mondiale de la Gastronomie 47ème Grand Chapitre d’italie Palermo, October 15 – 18, 2015 Sicily is the largest island in the Mediterranean Sea and - together with the Egadi, Aeolian, Pelagie, Pantelleria and Ustica - it forms an autonomous region with its own legislative power. There are three tips delimiting Sicily on the map; that's why the ancient name of this island was Trinakria (= three tips). The emblem is the head of Medusa (one of the gorgons) - as you can see rapresented top of the page in the logo of the event - from which come off three legs that run, that is the symbol of the sun in its three forms (god of spring, summer and winter), or the moon, or simply the movement. The new name of the island, Sicily (and the most likely hypothesis wants it means fertile), however, has not dimmed this evocative image so it is still used. Crossroads of various civilizations, which alternated in its domination, the island has inherited from each of them a piece of the mosaic that makes up the typical character of its people, as well as evidence of its extraordinary cultural and artistic heritage rarely equaled in the world. A mild climate, a natural environment with wonderful islands and islets, some of the most beautiful beaches and uncontaminated seabeds, active volcanoes, mountains, plains and Baroque cities, make Sicily one of the most original tourist destinations in the Mediterranean and in the world. Palermo is the regional capital; this city is stretched over a large inlet at the foot of Mount Pellegrino. In the past Palermo was considered one of the most prosperous cities in the Mediterranean. Nowadays it is still an extremely fascinating city that hides true gems of art, inherited from periods of splendor Arabs, Normans and Spanish. The imposing Norman Palace with the Palatine Chapel represents the wealth of the Arab-Norman style; the wooden ceiling with stalactites and the mosaics (XII sec.) are among the most beautiful ones in the Byzantine art. Other beautiful mosaics can be seen inside the Martorana Church, built in the twelfth century. Nearby, the Arab cupolas of San Cataldo hide a relevant Norman floor mosaic. St. John of the Hermits (1136) is a famous Norman church surmounted by five red domes and adorned with a lovely garden that contains the ruins of a cloister. At the intersection of Via Vittorio Emanuele and Via Maqueda, we have the spectacular Piazza Vigliena, known as the Four Corners, symbol of the baroque Palermo with the four concave sides of the buildings located at the four corners. Not far from here you get into Piazza Pretoria, where you can find a fountain of the sixteenth century that is one of the rare examples of Renaissance art in Palermo. Underground the Catacombs of the Capuchins contain about eight thousand embalmed bodies of wealthy Palermitans, still dressed in their own clothes, gathered here in the seventeenth century to the end of the nineteenth. Another point of interest is the Regional Archaeological Museum, located in what was the Filippini convent on the seventeenth century, which contains one of the most important Italian archaeological collections. A few kilometers from Palermo, we can reach Monreale, with its cathedral of the twelfth century, fully decorated with Byzantine mosaics with gold background. Finally Mondello beach is another must-see destination just outside the city. Since its early years the local, in its typical Art Nouveau style, has reached heights of success, being internationally known for its cuisine. Over time, the restaurant has hosted many famous personalities from the worlds of politics, culture, entertainment, gastronomy and oenology. After a long period of activity in the famous bathhouse of Mondello, since 2010 the Charleston restaurant has moved to Villa Bernard de La Gatinais, located a few meters from the sea, in the heart of Mondello Waterfront. The unique architecture of the villa recalls the colonial feel; it has an elegant indoor, a precious terrace overlooking the picturesque Gulf of Mondello, a lush garden with beautiful outdoor sofas, waterfalls, fountains and a lovely patio. The cuisine, appreciated even internationally, has cleverly reinvented its historic tradition giving way to innovation. Today the kitchen is leaded by Chef Angelo Gervasi who has represented Sicilian cuisine in New York (for a dinner event in the Madison Square Garden), Toronto (Four Season Hotel), Paris (Plaza Athenee Hotel), Berlin (Four Season Hotel), Bruxelles (European Parliament) Tokyo (Royal Park Hotel), as well as in many other parts of the world. His concept is that there is space for both the tradition and the innovation in cuisine. Hence the constant commitment to celebrate the traditional cuisine in a modern and never dull way, enhancing the purity of the flavors and the quality of the products processed, taking particular care into the cooking. The cuisine of Charleston is strengthening its ties with the Sicilian territory using the products of the sea and his land, as well as favoring only the use of seasonal products. PRIVATE TRANSFER BACK TO GRAND HOTEL VILLA IGIEA BY BUS AT THE END OF THE DINNER Program designed by Chaîne des Rôtisseurs Association Mondiale de la Gastronomie 47ème Grand Chapitre d’italie Palermo, October 15 – 18, 2015 Friday, October 16th OPTION 1 – Tour 1: NORMAN PALERMO + VISIT AND LUNCH AT VILLA MALFITANO h. 09:00 AM - Departure from Grand Hotel Villa Igiea by bus; from Piazza Indipendenza guests will walk few minutes to reach the Palatine Chapel, located into the Royal Palace (the Norman Palace). The church was dedicated to the Saints Peter and Paul and represents a splendid combination of architecture and mosaic decoration… the best example of norman art. The chapel was built starting in 1130 at the behest of King Roger II and was consecrated in 1140 as a private church of the royal family. The work was completed in 1143. The three naves are separated by granite columns and onion marble in composite capitals supporting a structure of pointed arches. The dome is erected over the three apses of the sanctuary. The dome, the transept and apses are entirely decorated in the upper part of Byzantine mosaics, the most important of Sicily, representing Christ Pantocrator in blessing, the evangelists and various biblical scenes. The oldest mosaics are those of the dome, dating back to the original construction. The wooden ceiling of the central nave and the beams of the side naves are decorated with carvings and paintings in Arab style (muqarnas). In each segment there are representations of animals, dancers and scenes of the Islamic court life. Then guests will be escorted to the Cathedral. Nothing remains of the place of worship built around the fourth century and later destroyed by the Vandals. A second temple in the Byzantine era was dedicated to the Virgin Mary of the Assumption; it was rebuilt on the ruins of the previous church in the 604 and now it still visible in the crypt and in the basilica plan with its square shape. With the invasion of the island by the Saracens, in the long context of Arab rule in Palermo since 831-1072, the Basilica became a Mosque and it returns to the Christianity with the advent of the Normans. To celebrate the re-conquest of the island, the House of Altavilla promoted and encouraged the building of some beautiful and monumental Norman cathedrals in all the places that has been theater of the bloodiest battles, reserving to Palermo the most laborious and sumptuous building. In 1184 - 1185 the reconstruction of the new cathedral has completed. The church was changed yet again, but the plan of the new cathedral still reveals the past religious and architectural influences. OPTION 2 – TOUR 2: MONREALE CATHEDRAL AND MARTORANA CHURCH (PALERMO) + VISIT AND LUNCH AT VILLA MALFITANO h. 08:30 AM: Departure from Grand Hotel Villa Igiea. You’ll take a brief drive to Monreale, to visit the Monreale Cathedral, which is considered to be one of the finest examples of Norman Architecture in Sicily. Santa Maria Nuova, the Cathedral of Monreale, is the main place of worship in town, seat of the Monreale Archdiocese. The Cathedral houses the precious relics of St. Louis IX of France, the great Crusader King of France who is also considered the father of the Chaîne des Rôtisseurs in its early stages back in the Middle Ages. Built starting in 1174 by William II d'Altavilla, King of Sicily from 1166 to 1189, the cathedral is famous for the rich Byzantine mosaics that decorate the interior. The construction of the great temple was started in 1172 and ended in 1267. It was conceived first as a church of the annexed Benedictine territorial abbey, independent chair of Palermo. In 1178, thanks to abbot Guglielmo, the abbey church became cathedral. Among the most fascinating Byzantine churches of the Middle Ages in Italy, it represents the Orthodox religious culture and art still present in Italy, further strengthened by the Albanians exiles refugees in Sicily under the pressure of the Turkish persecutions in the Balkans. This influence has left significant traces in the painting of icons, in the religious rite, in the language, in the traditional costumes of some colonies Albanians still present in the province of Palermo. The community now belongs to the Catholic Church. The church is characterized by the multiplicity of styles that here come together; today it is considered as a church-historical monument, as the result of many changes, and it is a listed building. The villa fully reflects the optimism and the lively and cosmopolitan atmosphere that reigned in the so-called "golden age" of Palermo at the end of 800, a happy and sumptuous season, well represented by the splendours of many villas built at the times in which Palermo was the crossroads of major trade interests between Europe and Mediterranean Africa. Beyond the gate we enter in a 7-hectare park made of monumental and exotic trees, like araucarias, ficus and palm trees. Royalty and noblemen had lunch in its terraces overlooking the horizon; this building has never known crisis thanks to its landscape and cuisine. At the beginning of the twentieth century, the aristocracy of the Central European society have sipped tea, coffee or have tasted the delicious dishes served with this unique sea view. The nobility then had its sunset, giving way to the bourgeoisie, the real drivers of the economic boom of the sixties. In addition to dinners and receptions, the halls lighted up with shows and parades. The lounge restaurant is confirmed as the living room of the elite of Palermo, with the new faces of actors, directors, singers, writers. The managing of the restaurant continues and renews that tradition today always combining the respect of what is handed down from the past to the pleasure of the best of what is offered by modernity. In the ancient liberty environments now we find modern design furnishings, such as the chairs of the great hall designed by Philip Stark who, captivated by the beauty of the building, wanted to be portrayed there on one of his own creations. Built in 1893, Villa Chiaramonte Bordonaro is the most significant work of the first period of Ernesto Basile, full of Moresque memories. The villa has been commissioned by Baron Gabriele Chiaramonte Bordonaro, Senator of the Kingdom; its park, located in the center of Palermo, is a green oasis with ancient and exotic trees. The villa halls are full of golden stucco, Murano glass chandeliers and satin purple wallpaper. In this sumptuous location, the cuisine is the result of careful research and a modern reworking of ancient tastes. At the end of the dinner, guests will be back to Hotel Villa Igiea by private bus. H. 09:30 AM – Starting from your hotel on board your comfortable bus you will motor on the freeway to the east of Sicily. After approx. 1 hour and 10 minutes drive you will reach Cefalù, a very charming town in the Northern coast of Sicily. Romans, Arabs and Normans have left an imprint in this town which is well known for the famous Norman Cathedral, built by Roger II in 1131. Arriving at the parking area you shall leave the bus and proceed on foot for a walking tour of the attractive places with its narrow streets, colourful shops, antiques and ceramics. You shall see the ancient Medieval wash house where in the old days women were washing their laundry and the Cathedral: the two towers give the church at once a fascinating and worrisome appearance. The interior is large and solemn with three aisles divided by tall columns. It will be possible to admire, among other treasures, the mosaics. Then we will drive to Castelbuono. Lunch in a local restaurant. After lunch we will reach the center of Castelbuono, a charming village, located on the Madonie mountains, famous for its position and its castle around which the city grew up in the 14th century. From here the view over the valley of Castelbuono is absolutely enchanting! It is a Medieval town belonged to the Ventimiglia family with picturesque narrow streets. Inside the Castle you could admire the Palatine Chapel, decorated with enchanting stuccoworks picked out from a gold-leaf background, attributed to Giuseppe Serpotta. Then you will visit the crypt of the Old Cathedral decorated with many stuccoes. Then guests will be back to Palermo by private bus. OPTION 2 – TOUR 4: BAROQUE PALERMO (half day tour) h. 09:30 AM - Departure from the Hotel Villa Igiea in bus in the direction of the Church of Jesus also known as the Professed House. The Jesuits who arrived in Palermo in 1549 began, in the late sixteenth century, the construction of a church attached to the mother house (Professed House), one of the most spectacular churches of Sicily. The large building was designed by the Jesuit John Tristan and, at first, it appeared a single nave church with large transept and large side chapels. At the beginning of the seventeenth century, it was adapted to the needs of grandeur typical of Jesuit and, according to the design of Natale Masuccio, the dividing walls of the chapels were shot down, with the spectacular result of the three aisles. The interior decoration is an important example of fusion of architecture, painting and plastic decoration. The most spectacular part of the building is the grandstand of the apse, adorned by the ‘Adoration of the Shepherds’ (1710-1714) and by the ‘Adoration of the Magi’ (1719-1721), marble bas-reliefs made by Gioacchino Vitagliano on Giacomo Serpotta design. After this visit the tour continues at the Oratory Rosary of Saint Cita, built in the seventeenth century south of the neighboring church of Santa Cita by the homonymous company and dedicated to the Virgin of the Rosary in gratitude for the Virgin’s miraculous intervention at the Battle of Lepanto (1571) against the Turks. It emphasizes the model of the oratory as a place of assembly and worship, with liturgical and at the same time social function. It has been entirely decorated by Giacomo Serpotta between 1686 and 1718, with several angels and cherubs that seem to play with each other, climbing on the frame of the windows, peering from floral garlands, turning his back irreverently. The quadrangular presbytery was decorated by Serpotta between 1717 and 1718 with the addition of two statues of Judith and Esther. Along the perimeter of the Oratory are the wooden benches with inlaid ivory, ebony & mother-of-pearl, where the monks sat to attend religious ceremonies and meetings. A recent restoration has revealed the presence of some of the Serpotta autograph drawings on the walls of the oratory. Today Natale is part of the Pastry Executive Chefs Team of Palermo, is director of the Association of Italian Chefs of Palermo, is one of the Palermo delegates for the Association of Professional Italian Chefs and has participated into numerous Cooking competitions earning lots of medals. His cuisine is truly Sicilian but reinterpreted in a modern way, with shorter cooking times and without fried. The chef's recipes are a set of creative, innovative and traditional Sicilian cuisine, served in an elegant and refined way. All the rates on this form and the annexes will be updated without notice from the organization, for any changes to VAT rates or taxes or finally for the introduction of any new taxes required by law. In case of full cancellation for the event at any time, the Organization will withhold the registration fee for each participant. EXCURSIONS TERMS AND CONDITIONS The reservation will be reconfirmed upon receipt of full payment for the services booked by each participant. For several excursions there is a minimum number of persons required, and sometimes a maximum number, of participants. Failure to meet minimum numbers of participants, or in case of adverse weather conditions, force majeure and unforeseen events, can cause the cancellation of one or more excursions; in this case the organization will provide alternative proposals or a full reimbursement of the excursions booked through us. The cancellation fee for all tours is: - 50% for cancellation received between the 10th and the 30th of September 2015. - 100% after the 10th September 2015. CATERING TERMS AND CONDITIONS For lunch / dinner / cocktails a minimum and sometimes a maximum number of participants is required. In case of failure to achieve the minimum number by 10th September 2015, the organization could decide to cancel a lunch, dinner or refreshment, in which case the relevant amount would be reimbursed. If maximum numbers are not attained, CHAINE may decide, at its sole discretion, whether or not to accept any further bookings after the deadlines. Penalties will be not applied for any cancellation made not later than the 10th September 2015, while those made after this date will be subjected to a penalty of 100%. HOTEL TERMS AND CONDITIONS Hotel reservations will be confirmed only upon receipt of payment corresponding to the entire cost of the stay. • There will be a penalty of 10% for any cancellation or reduction of stay notified within 90 (ninety) days before the date of arrival; There will be a penalty of 50% for any cancellation or reduction of stay reported between 89 (fifty-nine) and 60 (thirty) days before the date of arrival. • There will be a penalty of 70% for any cancellation or reduction of stay between 59 (fifty-nine) days and 30 (thirty) days before the date of arrival. • There will be a penalty of 100% for any cancellation or reduction of stay between 29 (twenty-nine) days before the arrival date. Hotel rates will be valid for bookings received up to the 15th of June 2015; after this date for any further request our office will apply individual tariffs for each case based on hotel availability; this means we cannot guarantee contracted rates and availability after the 15th of June 2015.
