We specialise in Italian wine and pay extra attention to the south of Italy, due to its compatibility with our food -‐ our extensive Sardinian selection being the highlight. We have a diverse range of local wine too, largely from our own state of New South Wales, as we love to showcase local produce. We continue to offer a range of Sardinian wine imported exclusively for us. This programme is made possible through our ongoing partnership with importers Enoteca Sileno, Trembath and Taylor, Godot Group and Negociants, and we thank them for their continued support. In 2016, we continue to offer a selection of rare wine from the cellar of a private collector -‐ these wines have been aged in a natural underground cellar and are in the very best condition possible. For a quicker selection, you can turn to the Sardinian wine section, complete with maps and information on the history and varietals of each region. In the main list, Italian and Australian wines are listed together, by varietal, to assist in navigating through the list more easily. We have a large range of wine by the glass, as well as small and large bottles. If you require guidance, a member of our wine team will be happy to assist. Cin Cin! Although it may all seem a little new-‐ age to some, it is worth noting that many of the best wines in the world from some of the most prestigious estates are made using these methods. Organic wines are produced from grapes grown without the use of chemical fertilizers, pesticides, fungicides and herbicides. Biodynamic methods were developed by Austrian philosopher Rudolf Steiner and wines are made using a wholistic and sustainable approach. Grapes are grown using the same core principle as organics, with the addition of special preparations added to the soil, which improves soil structure, nutrient and mineral levels, as well as plant growth and development. Recycling of farm and wine residues back into the vineyards improves overall sustainability of the land. Natural wines are more difficult to define, as there is no governing body set up to control production methods, resulting in various interpretations. They are generally made with ‘minimal intervention’, using natural yeasts, and minimal or no sulphur is added. Wine is often left on skins (both white and red) and there is no filtration, fining or adjusting. Natural wines look and taste a little different to ‘conventional’ wines, they will be darker in colour and cloudy, and will evolve dramatically in your glass. They are food friendly, vibrant and interesting though, so whilst not for everyone, they are most certainly worth trying. 3 Aperitivi Aperitif -‐ 60ML 2005 Contini -‐ Vernaccia di Oristano DOC Vernaccia di Oristano Sardinia 1990 Contini -‐ Vernaccia di Oristano Riserva DOC Vernaccia di Oristano MUSEUM RELEASE Sardinia NV Rallo ‘Soleras Riserva’ -‐ Marsala Vergine DOC Local Blend AGED 20 YEARS Sicily Our bitters and spirits are served on ice, or with your choice of Fever Tree Soda, Tonic Water, Lemonade or Dry Ginger Bitters -‐ 60ML Aperol Lombardy Campari -‐ 45ML Lombardy Rosso Antico Emilia Romagna Pimms -‐ 45ML England 16 25 21 11 11 10 11 Vermouth -‐ 60ML Punt e Mes Cinzano Rosso Cocchi Americano ‘Aperitivo’ Cocchi Americano ‘Vermouth di Torino’ Lombardy Lombardy Piedmont Piedmont 10 10 11 11 Sweden France Sardinia Rosebury Tasmania 11 13 15 13 12 England England Scotland Sardinia Kangaroo Is. is the second largest island in the Mediterranean and is 200 kilometres off Italy’s west coast. It is a unique region that has spent much of its history under Spanish rule -‐ the Spanish influence remains in Sardinia’s food, culture and wine. The Phoenicians were Sardinia’s first foreign invaders and introduced winemaking to the island, but it was the Spanish, controlling th th the island from the 14 to 18 centuries, who contributed the most to Sardinia’s wine production. The climate is Mediterranean, with short, mild, wet winters and long, hot, dry summers. With rugged mountains and dry plains, soil types vary from sandy clays in the south, the granite of Gallura in the north, to alluvial, gravelly soils around Oristano in the west. Today Sardinia is home to a unique range of grape varieties, predominantly of Spanish origin. Previously known for producing bulk, fortified and ‘Meditazione’ wines (including the famous Vernaccia di Oristano from the west coast), Sardinia is now known for its high quality table wine from Vermentino, Cannonau and Carignano. Beyond these, lay an exciting range of lesser known varieties such as Nuragus, Torbato, Monica and Bovale, adding diversity and interest to the Sardinian range. Spumante e Frizzanti Sparkling wines are produced from a variety of local and international grapes in Sardinia (if only in fairly small quantities) and can be dry or sweet. Mesa, Vigne Surrau and Tenute Olbios both make a sparkling wine in the ‘Metodo Classico’ (Champagne method) with Sella e Mosca using the Charmat (Tank) method. 2006 2011 NV NV NV Tenute Olbios ‘Bisso’ -‐ Vermentino di Sardegna DOC Vermentino ORGANIC Vigne Surrau ‘Millesimato’ -‐ Vino Spumante di Qualita Brut Vermentino Sella e Mosca ‘Terre Bianche’ Brut -‐ Alghero DOC Torbato Mesa ‘Gioiamia’ -‐ Vino Spumante di Qualita Brut Vermentino-‐Chardonnay Cantina del Vermentino ‘Vigne del Portale’ -‐ Vermentino di Sardegna DOC Vermentino 11 Olbia, Olbia 130 Arzachena, Olbia 115 Alghero, Sassari 85 Sant Anna, Carbonia 115 Monti, Olbia 80 Sardegna Vermentino th Sardinia’s most important white varietal arrived on the island in the late 19 century via Corsica. Thought to be a sub-‐variety of Malvasia, it is grown widely throughout Sardinia. Flavour characteristics include citrus, melon, fennel, peach, herb and honey, with floral notes and lemony acidity. The best examples are found in the granite soils of Gallura in the islands north-‐ east, with Vermentino di Gallura being Sardinia’s only DOCG. 2015 2014 2014 2011 2014 2013 2014 2014 2014 2015 2013 2013 2013 2012 2013 2012 2007 2015 2013 2013 2009 2006 NV 2014 Cantina del Vermentino ‘Aghiloia’ -‐ Vermentino di Gallura Superiore DOCG Olbios ‘Lupus in Fabula’ -‐ Vermentino di Gallura Superiore DOCG ORGANIC Jankara -‐ Vermentino di Gallura Superiore DOCG Cantina del Vermentino ‘Arakena’ -‐ Vermentino di Gallura Superiore DOCG Masone Mannu ‘Costarenas’ -‐ Vermentino di Gallura Superiore DOCG Masone Mannu ‘Roccaia’ -‐ Vermentino di Gallura Superiore DOCG Masone Mannu ‘Petrizza’ -‐ Vermentino di Gallura DOCG Vigne Surrau ‘Branu’ -‐ Vermentino di Gallura DOCG Vigne Surrau ‘Sciala’ -‐ Vermentino di Gallura DOCG Santadi ‘Cala Silente’ – Vermentino di Sardegna DOC Contini ‘Tyrsos’ -‐ Vermentino di Sardegna DOC Capichera ‘Lintori’ -‐ Vermentino di Sardegna DOC Mesa ‘Primo Bianco’ -‐ Vermentino di Sardegna DOC 6Mura – Vermentino di Sardegna DOC NATURAL Pala ‘I Fiori’ -‐ Vermentino di Sardegna DOC Pala ‘Stellato’ -‐ Vermentino di Sardegna DOC Olbios ‘In Vino Veritas’ – Vermentino di Sardegna DOC ORGANIC Agricola Punica ‘Samas’ -‐ Isola dei Nuraghi IGT Vermentino-‐Chardonnay Pala ‘Entemari’ -‐ Isola dei Nuraghi IGT Vermentino-‐Chardonnay-‐Malvasia Pala ‘Silenzi’ -‐ Isola dei Nuraghi IGT Vermentino-‐Nuragus Capichera ‘Classico’ -‐ Isola dei Nuraghi IGT Capichera ‘Santigaini’ -‐ Isola dei Nuraghi IGT UNFILTERED Dettori ‘Renosu’ -‐ Romangia IGT Vermentino-‐Moscato NATURAL Dettori ‘Bianco’ -‐ Romangia IGT NATURAL 65 98 Calangianus, Olbia 99 Monti, Olbia 120 Monti, Olbia 95 Monti, Olbia 130 Monti, Olbia 80 Arzachena, Olbia 71 Arzachena, Olbia 85 Santadi, Carbonia 70 Cabras, Oristano 75 Arzachena, Olbia 99 Monti, Olbia Olbia, Olbia Sant Anna, Carbonia Giba, Cagliari 65 105 Serdiana, Cagliari 55 Serdiana, Cagliari 74 Olbia, Olbia 105 90 105 50 190 350 Sennori, Sassari 74 Sennori, Sassari 100 Santadi, Carbonia Serdiana, Cagliari Serdiana, Cagliari Arzachena, Olbia Arzachena, Olbia Nuragus Nuragus is Sardinia’s most planted varietal and is found mostly in Campidano and Cagliari. Nasco is grown only in the southern half of the island, and is usually made into sweet wine styles. It makes a robust and fruity dry wine, with musk, banana and pineapple flavours. Dry versions can be consumed with rich fish and white meat dishes. 2013 Argiolas ‘Iselis’ -‐ Isola dei Nuraghi IGT 12 Serdiana, Cagliari 99 Sardegna Torbato Torbato is most likely a member of the Malvasia family and of Spanish origin; it is known as Tourbat in Southern France. Traditionally grown only around Alghero, in chalk rich white soil, today it is only produced by the Sella e Mosca estate, who make both sparkling and still versions. It makes a viscous and exotic wine, with creamy texture, pistachio and spicy fruit characters. Vernaccia di Oristano is unique to Sardinia and unrelated to Italy’s other Vernaccia’s -‐ it may be indigenous, or was introduced by the Phoenecians. Vernaccia di Oristano is a historical wine, usually dry, made from over-‐ripe grapes in a similar style to Spanish Sherry. Wines are aged in a system similar to Sherry’s ‘solera’ where the wines will develop ‘flor’, but Vernaccia di Oristano is rarely fortified. These are complex wines, with deep colour and flavours of orange rind, dried apricot, roast hazelnut, tobacco, tea and winter honey. Granazza is the local name for the same grape around the area of Nuoro in the centre of the island. Contini ‘Karmis’ is made in a dry table wine style and is great with rich fish and white meat dishes. 2005 Contini -‐ Vernaccia di Oristano DOC MUSEUM RELEASE 2015 Cantina della Vernaccia ‘Terresinis’ – Valle del Tirso IGT Vernaccia-‐Vermentino 2014 Contini ‘Karmis’ -‐ Bianco Tharros IGT 2013 Sedilesu ‘Perda Pinta’ -‐ Barbagia IGT Off-‐Dry ORGANIC-‐UNFILTERED Malvasia Cabras, Oristano 110 Oristano, Oristano 75 Cabras, Oristano 90 Mamoiada, Nuoro 120 Malvasia is of Greek origin (from the Peloponnese) and is thought to have been brought to Sardinia in the Byzantine era. It has become the base of some of the countries most famous reds, including Sella e Mosca’s ‘Marchese di Villamarina’. 2007 Sella e Mosca ‘Marchese di Villamarina’ -‐ Alghero DOC Santadi ‘Terre Brune’ Alghero, Sassari 195 Santadi began it’s Sardinian wine legacy in the 1960’s, first growing grapes for local wineries and then moving into producing their own label in the 1980’s. Like Argiolas, they procured the wine making knowledge of Italy’s premier wine maker Giacomo Tachis and landed themselves international fame and exceptional quality wines. The ‘Terre Brune’ is their flagship red with 95% Carignano and 5% Bovaleddu. The wines are bold and concentrated whilst showing finesse and restraint from the time spent in oak and in bottle. Barolo was one of the first three Italian wines to be awarded DOCG status when the classification was introduced in July 1980. The Barolo area is restricted to a handful of ‘communes’ which produce slightly different styles according to soils and mesoclimates. Wines from the villages of La Morra and Barolo are generally aromatic and fruity with La Morra producing the most perfumed and graceful wines, while the one from Barolo tend to be more complex and textural. Castiglione-‐ Falleto, Serralunga d'Alba and Monforte produce more structured wines that require longer aging with Serralunga d’Alba barolos being the most tannic of the five. Castiglione-‐Falleto produce full-‐bodied wines of good balance and aromas and the Monforte D'Alba wines are rich, concentrated and intense. Barolo wines must undergo at least 38 months' aging prior to commercial release of which 18 must be spent in barrel. For the riserva, the total aging time increases to 62 months. Traditionally Classic Barolos are subjected to long fermentation and aged in large wooden casks requiring at least ten years cellaring to tame their tannins. Modern Barolo producers however have reduced fermentation times and introduced the use of new French barriques resulting in a fruitier and more accessible style which is approachable at a much earlier stage in its life. * Wines noted with an asterisk denote producers making Barolo in the traditional style 1990 Terre del Barolo ‘Baudana’ -‐ Barolo Riserva (Castiglione Falletto) DOCG* MUSEUM RELEASE 2011 Brezza ‘Sarmassa’ – Barolo (Barolo) DOCG * 2011 Bartolo Mascarello – Barolo (Barolo) DOCG * 2011 Elio Grasso ‘Ginestra Casa Mate’ – Barolo (Monforte d’Alba) DOCG * 2009 Paolo Scavino – Barolo (Castiglione Falletto) DOCG 2009 Roagna ‘Pira’ -‐ Barolo (Castiglione Falletto) DOCG * 2010 Paolo Scavino ‘Canubi’ – Barolo (Castiglione Falletto) DOCG 2010 Poderi Colla ‘Bussia’ – (Monforte d’Alba) Barolo DOCG * 2011 Conterno Fantino ‘Vigne Del Gris’ – (Monforte d’Alba) Barolo DOCG 2010 Oddero ‘Rocche di Castiglione’ – Barolo (La Morra) DOCG * ORGANIC 2009 Bruno Giacosa ‘AA Falletto’ – Barolo (Serralunga d’Alba) DOCG * 2008 Renato Ratti ‘Marcenasco’ – Barolo (La Morra) DOCG * 2005 G.D.
