Welcome to the 2014 Real Wine Fair!
The Real Wine Fair is an independent festival of natural growers and
winemakers, comprising those who work organically and/or
biodynamically and with few or zero interventions in the winery. That
said, natural wine is relative rather than an absolute or precise term and
embodies a certain spirit of endeavour in the vineyard and the winery.
We understand that each grower has a highly specific approach; we
should celebrate those differences.
Natural wines tend to be made in small quantities by artisan or
independent producers who work without chemicals (which means no
artificial fertilizers, pesticides or herbicides) in low yielding vineyards and
then vinify without artificial yeasts or enzymes, or recourse to
acidification or other adjustments. Many are made with only tiny amounts
of added sulphur and some with none at all. ‘Nowt taken out and nowt
put in’, as the saying goes. The motivation is to rediscover the true
flavour of wine by capturing the sense of place (terroir) and the very
nature of the vintage.
These wines are individual, hand-crafted, thrilling and unpredictable.
They remind us that wine can be a living thing rather than a denatured
product and that less intervention means more real flavour.
This booklet contains details of hundreds of wines from many countries
around the world presented by growers and winemakers who have
stories to tell.
We hope you enjoy these wines as much as we do. And if you want to
buy a bottle or several, or order something you have tasted at the fair
there is a pop-up shop by the entrance!
And wine is only part of the Fair. Check out the artisan food tables and
grab a bite from one of the stalls manned by some of London’s top
restaurants.

Les Caves de Pyrène – www.lescaves.co.uk – Les Caves de
Pyrène, a wine importer, distributor and agent, was founded in
1988. Initially it was four people, a battered van and a small
handful of wines from South West France. Despite our subsequent
growth, our philosophy remains the same as it did from the
beginning: to source the best quality wines directly from the grower
and the vineyard; that these wines should reflect where they come
from (the expression of “terroir”); that these wines should be
sustainable, with low intervention and preferably organic or
biodynamic; that we not only sell these wines with energy and
passion but provide the service that helps our customers to
connect more effectively with their customers.

Fiamma started Tutto Wines in the summer of 2012 to share with the
people of London the wines of Italy that they love to drink. These
wines are made by artisan growers who have a respect for the
grape, the land and winemaking traditions. They represent Italy’s
grapes, the places they come from and the wonderful vignaioli who
guide the passage from vine to glass. They seek to champion Italy’s
unrivalled diversity, from delicate, tense mountain Nebbiolo, to the
salty, thewy wines of Western Sicily. They travel to Italy regularly to
seek out wines of personality, interest and most of all drinkability.
Wines that speak of where they are from and complement the food
on the table.
Indigo Wine – www.indigowine.com - Indigo Wine is an agency
business supplying high quality wines to the on-trade and retail
sectors. We specialise in fresh and balanced wines with a sense of
place from family-run estates in Spain and France, with some real
gems from Portugal, Italy, Austria and New Zealand. We now work
with some of the most renowned winemakers in Spain, from the wellestablished to up and coming ground breakers creating one of the
best selections of Spanish Wines in the country. This was recognised
in 2009 and 2010 when Indigo was named Specialist Merchant of the
Year for Spain at the International Wine Challenge. Most of our
producers are small holders and grape farmers who aim to make
wines that show the flavours garnered from their wonderful fruit
rather than from lots of new oak. We believe that this stylistic
approach makes our wines fresh and balanced. Increasingly, we
have moved towards a more natural style of winemaking, which
reflects our personal tastes. Indigo also seeks out interesting
indigenous grape varieties that offer vinous sanctuary in an

Aubert & Mascoli http://www.aubertandmascoli.com/ We offer
superb French and Italian artisan wines from ambitious vignerons –
growers who use their intuition and savoir-faire to make truly
wonderful wines. These wines are well kept secrets, made on a
small scale and sold regionally. The reasons these winemakers do
not export are the small quantities available, and more
importantly, they are not on the radar of the English wine trade yet.
Each vineyard has its own story, but what these artisan winemakers
share is a passion to produce – without compromise – exceptional,
handcrafted wines which express the characteristics of a place, a
soil, a plant and a climate.

Carte Blanche Wines was founded in 2009 to represent a group of
producers who we knew and loved, and who produced their
wines in accordance with a philosophy we felt to be sound and
sustainable. We now represent over 30 growers from around the
globe and have gained a reputation for importing wines with
‘tension’ (this was a word a Galician friend came up with; we know
it’s a cliché!). But it’s true, (as all clichés are, in the words of Lloyd
Cole) we like to drink our wines and as we grow ever further into
the future, it is this style of wine that we constantly aim for (tension
seekers… another friend came up with that one.)

focus on very traditional winemakers from all over Italy who
showcase wines that can provide resonant examples of the culture
and geography of Italy by virtue of their uncompromising taste.
Run exactly with the same style and passion as when Luca &
Federico started it back in 2003, Passione Vino has grown
consistently since, step by step, wine by wine, to cover the whole
UK. We travel the length of Italy as often as possible, driven by our
motivation, in search of these hidden pearls, surely unknown to the
modern commercial wine scene, but of great meaning for our

Jacques grandfather bought the domaine located 50 kms southeast of
Bordeaux at the Garonne side of Entre-Deux-Mers in 1935. Surrounding the
two-centuries-old residence and cellar, lies the south facing vineyard of
4.3 hectares of well drained sandy-clay soil. The vines, aged from 25 to
over 70 + years represent the three classic Bordeaux grape varieties –
Cabernet Sauvignon, Cabernet Franc and Merlot as well as the rarer Cot,
or Malbec. In 2006, Jacques gave up classical viticulture and vinification
with chemical products and fertilizers and reformed the whole domaine to
biodynamics.

Domaine du Pech is now run by Magali and Ludovic who have applied
biodynamic methods of cultivation including the use of medicinal plants
as well as minerals, thereby necessitating minimal treatments with copper
or use of sulphur. Only natural yeasts are used and the wines are bottled
without fining or filtration and virtually no sulphur. The reds are a mix of
Merlot, Cabernet Sauvignon and Cabernet Franc.

Château du Cèdre has been run by the Verhaeghe brothers – Pascal and
Jean-Marc for fifteen years. It must be said that they benefit from an
exceptional terroir: a cone of limestone boulders and rocks in constant
motion - the famous “Tran”, which provides fine and elegant wine second floor of pebbles on ferruginous sand, giving more power style.
Always colourful, the wines have an unusual level of quality and
consistency, from ripe and carefully selected grapes. With a lot of talent,
the wines of Le Cèdre offer a delicious balance between the valuation of
land to bourguignionne and wine typical of Bordeaux.

Mas de Périé is run by the young Fabien Jouves and located on the Haut
Plateau south west of Cahors in Trespoux Rassiels. The soil here is complex
clay and Quercy limestone, a brilliant white tufo style limestone that is soft
and very permeable. There are incidences of gravel here and there and
this serves to produce wines with more immediacy and freshness, perhaps
Vins de Soif. The theme continues but there are also areas of
Sidérolithique, a complex blend of sand chalk clay and mineral. Where this
can be found, so the wines develop more complex deeper tones. The
vines are managed along biodynamic principles. The fruit is handpicked
and selected at the winery prior to fermentation in inert tank of oak
depending on the cuvee and maceration is usually by Pigeage for around
30 days. The resulting wines are neither filtered nor fined, and Fabien’s 5
years in Bordeaux have lent him the skill to manage the tannins extremely
well.

‘The magic of terroir and a love of wine, working to captivate the
senses…’ – Marc Penavayre.
In 1991, Marc Penavayre took over and expanded the family vineyard
that had been growing wines for generations, following in the footsteps of
his father Louis. Like many others, the domain initially employed modern
viticulture and vinification methods, but in the early 2000s Marc turned to a
more environmentally friendly way of making wines. His recipe is simple:
the vines are worked in harmony with the terroir, eschewing fertilisers or
weedkillers in favour of natural products. Grapes are harvested ripe and
healthy, then hand-sorted before vinification, which is geared to
expressing the essence of grape and soil, using only native wild yeasts.
Château Plaisance wines are neither fined nor filtered. They are fine
ambassadors for the Négrette variety, which has captivated drinkers with
its incomparable and original flavours for nearly 2,000 years. Today, more
than ever before, Château Plaisance is dedicated to producing wines
that are 100 percent grapes.

These are “haute de vies” from a distillerie artisanale. Made without
sulphur, artificial yeasts or enzymes, Laurent Cazottes lets nature do the
talking. It is all about picking the fruits when they have reached optimal
maturity – that is to say (in the case of pears) when they have dropped to
the ground. The work is a labour of love and totally artisanal.

For three generations, the Larrieu family has been growing vines on the
steep hillsides facing the Pyrenees. “Our wish is to make highly expressive
wines which reveal our terroir and express a sense of place. On converting
to organic methods of agriculture, we had to rethink the way we grow
vines at Clos Lapeyre: no more weedkiller, the use only of organic
manures, a return to ploughing the land and to using sulphur compounds
and plant extracts for protective spraying. We also selectively harvest and
ferment different plots separately.” These wines are about the glory of the

Parc Naturel de Haut Languedoc. Vines are worked organically (Ecocert).
Pickers throw any grapes not good enough to eat on the ground. We
believe that in the south, we should make wine from ripe grapes (god
gave us the sun) and get balancing acidity by using old adapted
varieties like Carignan, high altitude vines on limestone, and working
organically.

Thierry Navarre has a dozen hectares of vines planted on dark brown schist
terraces around Roquebrun. The achingly beautiful countryside is an
amphitheatre of small mountains clad in a sea of green: a forest of small

which captures the scented spirit of the high Languedoc. The culture in
the vines revolves around the respect for the soil, the cycles, the seasons.

Frédéric Mezy is a young man who has been handed the reins of the
estate by his father, Roger, a patriarch passionately involved in the wines
of Pic Saint-Loup. The wines of Augustin are produced from small plots
located all over the region, but never out of sight of the impressive and
ever changing Pic St Loup. The terroir ranges from clay to limestone to
slate and quartz. Organic since 2005, now biodynamic in all but
certification (which will come in the next year or two), there is an energy
and enthusiasm about the place that is engaging. The cellar from the
outside is unprepossessing, but inside are spotless steel tanks for
fermentation and ageing, and a selection of Austrian cuves, French
barriques and demi-muids, but as yet, no Nomblot Eggs!

Roc des Anges was created in 2001 in the wild Northern Catalunya. The
vineyard lies on a north exposed schist hill and is based on old vines,

perfectly made for food. Terres de Fagayra was created in 2008 and is
dedicated to fortified wines only, with its old vines planted on schist and

there is an important philosophy: to take pleasure in our everyday farming,

The Tour du Bon estate, located in the extreme north-west of the Bandol
appellation, faces the sea. This garrigue-scented landscape is washed with
a very special, fantastic, dazzling light, so often captured by the world‘s
great painters. Here the dry wind from the north flirts gently with the southern
breeze. Aleppo pines spread luxuriantly, supplanting the dominant tree, the
oak, which has had a rough time as a result of repeated assaults by the
scourge of the region, forest fires. This domaine works sensitively with low
interventions and makes strikingly aromatic wines majoring in the local
Mourvedre (blended with Grenache, Cinsault and Carignan in varying

The estate was found in 1968 by François Klein, and is now run by his son
Remy and grandson Olivier. The aim of the estate has always been to
reflect the different terroirs existing on the land they owned using local
varieties. The domaine is 38 hectares spread over sandy loam, limestone
and clay and between 200 and 280 metres above sea level, looking
predominantly south east. This altitude and the fact the exposed vineyards
are subject to the Mistral helps to keep the wines fresh, giving them a lift
that makes them both drinkable and excellent wines to serve with food.

co-op in 2007 and started out on their own mission to convert their
tiny plots of vines to organic viticulture and produce their own wines.

they produce vibrant, vital and uplifting. Each cuvée they produce is
a fine example of terroir as well as their love of freshness and purity,
making wines that are interesting and appetising. The wines see no
oak, with only one token barrique in the winery for use should the
need arise, favouring cement tanks and stainless steel, and the
Vacqueyras Blanc is made in infinitesimal quantities.

Graveirette is located outside the village of Bédarrides, and we have a
small plot of vines here, as well as a plot of old vines on la Crau plateau

the vines by hand, use rigourous sorting, and the wines are fermented in
traditional cement cuves, with a little old oak used where needed. We
prefer to age our wines before release, and this year we have our first
vintage of Châteauneuf Blanc.

From a terraced vineyard this is a blend of Grenache (80%) the remainder
being equal parts Mourvèdre and Syrah. The grapes are harvested at the
beginning of October, trodden in the traditional way, and, after a
cuvaison of 18 days and regular remontage, the wine is put into foudres.
No filtration, nor fining, from the vineyard where strictly organic practices
are observed to the sympathetic treatment in the winery, this is southern
Rhône red at its purest.

While many of France’s co-ops go out of business or struggle to sell
uninteresting plonk, the cave co-operative in Estezargues has an artisanal
approach to winemaking and is making some of the best value wines in
the Rhône Valley. Things began to change in 1989 when Jean-François
Nicq arrived to take over as winemaker. Rather than blend everything
together, J-F decided to bottle the member estate's production
separately, highlighting the individual terroir of the 10 domaines. By the
end of the 1990s, everything was being made in a hands-off, natural way conscientious farming, no yeasts, no enzymes, no new oak and no sulphur
before bottling. The results were fantastic and following Nicq’s departure
to set up his own domaine (Les Foulards Rouge), his assistant Edouard
Laffitte took over. When Edouard left to set up his own domaine (Bout du
Monde) he was replaced by Denis Deschamps who has since overseen
the continual improvement at this most innovative of co-ops.

organic and biodynamic winemaking techniques. The wines express purity
and delicacy from the mineral mountain Gamay to the pretty Ardèche

Domaine des Vignes du Maynes comprises about 6.5 hectares. Facing
due east, the vines benefit from the rising sun. They grow on a terroir of a
clay and limestone mixture. Avoidance of weedkiller and modest yields
characterise these authentic wines produced from Pinot Noir, Gamay and
Chardonnay. From the time the grapes are picked by hand to the time
the wines are bottled neither additives nor SO2 are used. The pressing
operation is slow, carried out on wooden wine presses dating from 1895.
Fermentation takes the form of carbonic maceration over a period of ten
days (Jules-Chauvet method).
All wines, regardless of creed or colour, are left on the lees in oak
barrels for eleven months producing wines full of character.

With Jean-Claude Lapalu‘s wine you can detect the fists behind the fruit.
This is one of the new crew of sternly-made rock steady cru Beaujolais.
Grapes are hand-picked and sorted, loaded by conveyor to avoid
damage, and given neither SO2 nor cultured yeasts during the
fermentation. During 8-10 days maceration a wooden grill is used to
enhance extraction. The wine stays at least a half year on its fine lees
gaining power and complexity. And yet the Brouillys are neither heavy nor
clumsy and one could easily imagine them ageing ten to fifteen years.
Croix des Rameaux, from beautifully exposed prime parcels of eighty year
old vines and aged in three-to-five year old barriques after a long
cuvaison, disports a wonderfully wild nose of leather, tar and red cherry
and palate-punching dark fruits: stylistically it seems to straddle Burgundy
and the Rhône.

The domaine comprises approximately 13 hectares of vines, mostly Melon

many of the vines well over 50 years of age; for Miss Terre the vines are up
to 80 years old. He works organically, labouring the soil and opting for
irabel, essential oils and copper treatments over synthetic products. This
‘natural’ feel continues into the cellar where he uses a minimal amount of

Former jazz and blues pianist Nicolas Reau one day decided to tickle the
vines rather than the ivories. He studied winemaking and viticulture at
Montreuil and supplemented these studies with time spent in Bordeaux.
Nobody‘s perfect. He makes a Chenin from vines on clay-limestone soils
that displays characteristics of minerality and ample fruit combined. The
grapes are fermented in old barrels and aged for a further year without
racking. The grapes for the Anjou Rouge Pompois are de-stemmed before
fermentation which place in cement tanks, followed by maturation in oak
barrels. No filtering, no fining, no sulphuring and twelve months in used oak
barrels (used for two to five wines). A lovely rumpus-pumpus red with
prominent black fruits on the nose and palate and, typical of the vintage,
easy on the gums.

Agnès and René Mosse live and work in the village of Saint-Lambert-duLattay, in the Coteaux-du-Layon area of Anjou. The Layon is a small tributary
to the Loire that lazily digs its way through well exposed and drained hills of
schist and sandstone. Its micro-climate allows for a long hang-time, and
when the mornings are foggy in the fall, with no rain, botrytis develops easily
on the Chenin grapes. Previously, the Mosses had owned a wine-bar/wine
retail in Tours, and they credit the great vignerons they met there, among
them Jo Pithon and François Chidaine, as the impetus to become
winemakers. They studied viticulture and oenology at the agricultural lycée
in Amboise where two of their teachers were Thierry Puzelat (Clos du Tue
Boeuf) and Christian Chaussard (Domaine le Briseau). They adopted
organic viticulture techniques from the start, ploughing between and under
the rows, and use biodynamic preparations to treat the vines and soil. In
their area of Anjou Noir (Black Anjou, so called because of the dark colour
of the soils of slate and volcanic rocks), the soils are shallow, with subsoils of
schist and sandstone, and varying amounts of clay on the surface. With all
the efforts put into vineyard work, it is equally important to them to vinify in a
natural fashion, and they are particularly attentive to minimizing
manipulations and the use of sulphur. All the wines are barrel-fermented
and aged, and usually the whites go through their malolactic fermentation.
The barrels are renewed as needed.

Serious wines are produced at this estate run by the charismatic Thierry
Germain. His approach is closer to a Burgundy wine-maker than a typical
Loire producer. This 50-acre domaine, situated in a superb viticultural
location in the appellation of Saumur-Champigny, has been a winery
since 1850. Germain, from a long line of Bordeaux winemakers, arrived
here in 1991, attracted by the region’s perfect balance of grape varietal,
climate and terroir, which he considers one of the finest in France. The
vineyard is worked in a natural way with the goal of keeping the vine and
the soil at its healthiest, and proudly holds biodynamic certification. The
harvest is manual, selecting grapes at their very ripest level. Vinification is
handled in small batches with bottling unfined and unfiltered.

The Caslot family have been farming their domaine of thirty-three hectares
since 1640 from their farmhouse which sits on the hill overlooking the vines
in the heart of the superb terroir of Restigné. Several cuvées of varying
degrees of intensity and complexity are made from different soils and
organically farmed vines. Some wines are to be quaffed with a smile and
some smoked meats, the more profound versions (which will age
decades) should be decanted to allow the fruit and mineral perfumes to
mingle.

since 1634. Sebastien practices organic farming at his estate, and is

preserve the maximum of the fruit characteristics. The wines are bottled
without filtration, fining and virtually no sulphur.

The Ramones’ battle cry has been a constant source of inspiration since I
got started out in wine making, back in 2010. The punk rock movement
taught me a few positive things about getting the nerve to do my own
thing in viticulture. What’s foremost to me is the inspiration of the moment
and the spontaneous energy it takes to make it all happen, without
regards to conventional practices or being worried about what people
might say. For example, I don’t filter my wines. I discovered organic and
natural wines thanks to Thierry Puzelat, one of the pioneers in the Loire
Valley. This man simply went back to basics, renewing with ancestral
methods that were in vogue before the post-war industrial onslaught. Low
cost, extensive production, in order to feed the starving masses, with little,
or no regards to long term effects on human health, or the environment.
That was the “noble” argument of the time. In my opinion, a winemaker is
a humble assistant to nature. He, or she, use their technical abilities, and
their creative inspiration, to make the best of an ever-changing
cosmological context. Every year, each variety, terroir, and climatic
situation imposes decisions on the way grapes are grown, harvested, and
fermented. In that glass of wine you behold, you can see, breathe, and
taste, a concentrate of an eighteen to twenty four month cycle that is the
result of passion, energy, and an alternative to standardisation.

the kings of France. The family name Puzelat is mentioned in 15th century
documents. History, though, is not the story here. It‘s about two brothers,
Jean-Marie and Thierry Puzelat, who tend their 10-hectare family estate in
Les Montils (in the Cheverny AOC) and rent 6 hectares in a village nearby, in
the Touraine AOC. The region, near the hunting grounds of Sologne, has

In 1992, Eric Bordelet (previously sommelier at ARPEGE, Alain Passard’s
Restaurant in Paris) took over the production of this family property in
Normandy. Believing that cider and poire should be produced like wine, he
grows 20 varieties of apple and 14 varieties of pears. Connaisseurs admire
his entire artisan and apothecary style of working. His range includes several
products, all worth the detour. He has dubbed his ciders “Sydre”, “Cydre”
and “Sidre”, the former spelling of these words. Location: situated in the
South of Normandy on the Amorican Massif, extending from Domfrontais to
the outermost borders of the Mayenne and the Orne. Terroir: the property is
situated on schist, sedimentary rock dating back to the Precambrian era.
This has produced silt and clayey-silt soils. The 15 hectares are divided into 3
hectares of 40-50 year old fruit orchards, 7 hectares of vineyards (planted
and trellised in 1992), and 5 hectares of pear orchard dating back to 1992.

Gerbais have been certified by AMPELOS since 1996, in accordance with
its standards for integrated viticulture. This rigorous certification defines and
informs all of their viticulture practices and demonstrates the importance
of respect for the environment in the development of high quality grapes.
To maintain their strong characteristics, each of the vineyards (terroirs) and
grape varieties are vinified separately, without artifice or excess. Gerbais
create their champagnes from the traditional appellation varieties of Pinot
Noir and Chardonnay. Gerbais produce exceptional champagne and are
the first to make champagne from 100% Pinot Blanc Vrai, which they call
“L’Originale”.

Dominik Huber has been producing wines in Priorato since the revolution in
the region 15 years ago. Of German decent he quickly made a name for
himself as an absolute traditionalist and terroir-focused winemaker. In 2004
he and Eben Sadie, who remains shareholder but no longer has any
practical influence on the estate, scoured the region to find the vineyards
that they felt best represented this amazing place, which at the time was
seriously under rated. They settled on old vines of Carignan and
Grenache clinging to steep slopes of llicorella slate around the village of
Torroja, in the heart of the region where Domink now produces 35,000
bottles from 25 hectares. He uses biodynamic principles with strict intensity
and will not use new oak/small format oak in the cellar preferring the
calming influence of concrete and 1800 litre old oak to allow the wines to
gently evolve and reflect their own character. He also uses Grappe Entier,
with virtually no extraction techniques, save the odd jug of juice poured
over the top of the grapes. This is infusion wine making and serves to
reduce alcohol and improve elegance and complexity.

Bodega Mengoba’s vineyards span over Espanillo, Valtuille, Villafranca de
El Bierzo and Carracedo on the slate, calcareous and stony soils of these
areas. Two varieties of grape are cultivated to make their white wine,
Doña Blanca and Godello. The Mencía vines are located in Espanillo at
about 2500 ft above sea level. The vines are between 25 and 80 years old.
Winemaker Gregory Pérez takes great pride in the bodega’s artisanal
vineyard work; the vines are grown organically and ploughed by cows.
Green pruning and integrated pest management are utilized, and they
only intervene in the vineyard when absolutely necessary.

to align ourselves with. The Orotova valley on the far cooler north side of

The estate has some incredibly old, low yielding vines. The wines have
everything we look for; freshness, balance, purity of fruit, floral aromas,
minerality and an authentic terroir character. The wines are made in newly
installed concrete tanks and used French oak and are bottled unfiltered
and unclarified. The white is Vidonia made from Listan Blanco. We think
these unique wines will intrigue all who try them.

Bodega Marañones is located in San Martin de Valdeiglesias, a sub-region
of the Vinos de Madrid DO. Young winemaker Fernando ‘Fer’ Garcia is
one of the stable of natural wine fanatics who has been heavily
influenced by the biodynamic wines of the Loire and Burgundy. He is also
good friends with Dani Jimenez Landi and part of the ‘Chicos del Terruar’
group of like-minded ‘Terroiristas’. It is no great surprise then that his old
vine Garnacha, Syrah and Albillo wines have a balanced freshness and
sense of place. The vineyards are aged between 30-80 years old and are
farmed organically across 5 different parcels. Whole bunch fermentation
in open top barrels started off by natural yeasts influence the style of wine
greatly and both wines are a pure expression of the variety and terroir.
Undoubtedly one of Spain’s most talented up and coming winemakers.

The winery is situated in the backwater DO of Mentrida in Toledo Province,
but their approach is very unique. Their family vineyards near the bodega
were planted fairly recently, but it is the magical tiny, one hectare sites of
old bush vine Garnacha in the mountains that make Dani’s wines some of
Spain’s best, whoever the judge. Taking a stylistic lead from the likes of
Château Rayas, Dani uses a combination of biodynamic treatments, well
timed picking, use of cover crops, mules, whole bunch fermentation in
open-topped old oak barrels, and no filtration, stabilisation and absolute
minimal use of sulphur to produce wines of delicacy, elegance and
minerality.

Bodega Comando G is made up of Fernando García, Daniel Gómez
Jiménez-Landi and Marc Isart. They met in 2005 while at university where
they forged their friendship based on a mutual passion: making first-rate
Garnacha wines, which capture and express the terroir of the unique plots
where the grapes are grown. Three years later, in 2008, they launched the
Comando G (G for Garnacha) business venture. Although there are some
who affectionately call them the ‘enochalados’ (‘crazy oenologists’), in
reality, this 'online cooperative bodega' (as described by El Mundo Vino) is
carrying out the very serious task of searching for old-vine vineyards
planted with the Garnacha grape variety in the Sierra de Gredos, located
between the provinces of Madrid and Ávila. And the truth is that their work
represents an authentic breath of fresh air, both in the winemaking
process — extracting the personality from each individual plot. There are 3
hectares of old Garnacha vines spread out among the villages of Cadalso
de los Vidrios and Rozas de Puerto Real, near the Sierra de Gredos
mountains, on granite soil and at an altitude of between 900 and 1,000
metres.

I prefer to use local native grape varieties (Garnacha, Albillo, Chelva, Airén,
Tempranillo), and always use native natural yeast. My aim is to express the
terroir and make delicious authentic wines with nothing added and nothing
taken out. I don’t use chemicals (herbicides, pesticides, insecticides,
fertilizer, etc) in the vineyards. I believe that the over-use of ‘international’
grape varieties out of their native homeland makes for boring standardized
wines and that their over-manipulation in the winery is a tragedy for all
winelovers. I make white, red and ‘orange’ wines; Young wines and aged
wines; I use stainless steel, wood, plastic, clay amphorae and cement. I
believe that each type of container has its advantages and disadvantages.

These are pure, “minimal intervention” wines at the forefront of Spain’s
slow move towards more elegant, terroir-driven styles. The whites are
fermented in old barrels or tinajas (amphorae) and feature Merseguera &
Moscatel, the reds showcase local grapes such as Garnacha Peluda,
Monastrell and Rojal. High altitude vines, organic farming, low yields and
minimal interventions makes for beautifully pure whites and reds.

This project in Murcia, is coordinated by Pedro Olivares and aims to
develop organic natural wines from Bobal, Monastrell and Garnacha from
vines between 50-80 years of age in different zones within the region of
Murcia. Whilst all their vineyards are at high altitude they have also
planted the highest vineyard in Europe at 1700 metres above sea level
with the aim of producing white and sparkling wines, late harvest wines &
even ice wines! Pedro writes: “This can only be achieved through
dedication and effort. On each foot of land we lay our heart and soul,

For more than four generations, the most important thing for the Mitjans
family, located in Vilobi del Penedès 50 kms west of Barcelona and some
600 metres above sea level, has been the care of their vineyards with the
aim of achieving the best quality for their wines and sparkling wines. The
name Loxarel is an inversion of the variety they seek, perfect Xarel-lo. The
actual estate is called Masia Can Mayol. Now a new ethos has crept into
the process, one that works on biodynamic lines and incorporates as
much nature as possible in the winemaking process, down to using goats
to de-leaf the vines. The estate has a strong line in Cava production,
producing one cuvée that is laid sur latte for 10 years. It is not even
disgorged, which makes for a fascinating wine, and one which everyone
should taste if possible.

Ribeira Sacra is a remote, Atlantic influenced region in Galicia with
precipitous, terraced vineyards reminiscent of the Douro or Priorat. This is
extreme terroir country and Dominio do Bibei has set out to try and
capture its unique character using the local and indigenous varieties that
include Mencia, Garnacha, Brancellao and Mouraton for the reds and
Godello, Albariño, Treixadura and Doña Blanca for the whites. This is a
bold, inspiring project and reclaiming and rebuilding the mostly
abandoned, ancient terraces is a major undertaking, however what
Dominio do Bibei has achieved so far has more than justified the effort and
expense. There is so much more potential to unlock and rediscover in
these vineyards and the future holds much excitement. No stainless steel is
used here, the whites being fermented and aged in French demi-muids for
15 months with a proportion being aged in concrete Nomblot eggs, whilst
the reds are aged on fine lees in barrique and foudre for 18 months and
released to drink after 2-3 years. Lapola is a single vineyard white wine
made in very limited quantities and has freshness, depth of flavour and
complexity. Lalama, at 12.5% alcohol, is tautly structured with pure
raspberry fruit, floral notes, intense minerality and fine tannins. These are
exceptional wines and certainly at the forefront of the renaissance of one
of Spain’s most intriguing D.O’s.

Many of Rodrigo Mendez’s vineyards are just a stone’s throw from the
ocean. The soil is granitic sand, covered with a layer of humus, over granite
bedrock. It is very poor, fast draining soil that vines struggle in and phylloxera
cannot live in, hence many of the vineyards are deceptively old, up to 200
years! Even Rodrigo’s joven Albariño comes from vines with an average age
of 40 years. Rodrigo is perhaps best known in Spanish wine circles for his
stellar reds produced from the indigenous Galician varietals Caiño,
Espadeiro and Loureiro, however his whites are also outstanding. They are
fermented with natural yeasts and then matured on lees for months to give
complex, full-bodied wines with a fresh acid backbone and a briny tang on
the finish. This year we have a small quantity of the 2010 Cos Pes, a foot
trodden Albarino which spends 8 months on skins prior to pressing and
settling. It is disconcerting to see this wine in its production stage, but once
bottled is displays finesse, concentration and intensity, whilst retaining the
essence of the variety. We also have the 2010 Finca Genoveva, a foudreaged wine.

Mauro Vergano is a retired chemist who makes amazing small batch
Vermouth, Chinati and other treasures in his house in Asti. These drinks
come under the banner of vino aromatizzato, essentially wines that have

wines full of healthy fruit, be it the biodynamic Cortese of Stefano Belloti,

We are wine makers who have been and always will be linked to the
Artesana hills. These are lean and mean hills, but wonderfully suitable for
the production of quality wines. According to ancient chronicles “the
greatest fruit of these lands is its wine, dainty and perfect.” In 1758 our
forefather Giovanni Battista Bera acquired some vineyards in Canelli that
belonged to the sovereign of Malta, who then transferred them into a
family run estate. Since then we have continued to cultivate that same
estate and to vinify the same grapes that have always been grown.
This sense of continuity has led to the choice of becoming organic since
1964 and it is now our true philosophy in life. Nowadays, the ten hectares
of land are worked on by Vittorio Bera and family in Canelli, at the heart of
the classic Moscato d’Asti producing area. The vines are cultivated with
the most stringent organic methods and are certified by ICEA. The
“naturalness” that is adopted in the vineyard is then pursued in the wine
cellar as well. Our wines are vinified according to traditional methods and
we reject any modern “interventionist” ideas such as the use of selected
yeasts, enzymes, and various chemical treatments, etc.

Elio is a quite unique producer, silent, serious and impeccable like his
mighty Barolo. He would always say that his wines are made 80% of terroir
and 20% of seriously long ageing period in very large barrels, 4500liters. The
much loved terroir has its origin in the Third Era and it is characterized by
the Lequio formations from the Tortoniano-Serravalliano time, which is
mostly made of compact greyish loam, with some pockets of very fine
and old sands and decaying organic materials. Once the wine is made, in
an old fashionened and natural way, Elio simply forgets it in large barrel, as
the minimum ageing is around 60 months, then bottle refining for another
36-48 months or even longer depending on the vintage. And when finally
he decides to sell it, he is never too happy and sounding a bit sad he says:
“we could have probably waited a bit longer to help the Nebbiolo to
express itself and its terroir better...”

San Fereolo is located in south Piemonte, near the village of Dogliani.
It is a 12 hectare estate made by eight different vineyards with
different soils that bring complexity to the wine. It’s a variegated
landscape that moulds calcareous marn and alluvional quaternary
red soils, dominated by the circle of the Alps and its fresh breezes: an
ideal location for such a right temperature-demanding grapevine
like Dolcetto. San Fereolo is certificated by Demeter and CCPB and
works 12 hectares of vineyards producing 40.000 bottles. Half of them
are Dogliani DOCG and we are deeply involved to understand the
attitude to evolution in time and the expressive strength of the wine.

Young and humble Paolo Veglio tends the vines at his micro-estate in
Barbaresco. Paolo’s family has owned the estate since 1920, but he is the
first of the family to be a winemaker and bottle his own wines. Before this,
his family was selling the grapes of the estate to his neighbour Giacosa
from 1990-2005. His approach to winemaking is to start in the vineyard and
produce healthy grapes. He loves to be on his tractor and tend the land.
He only works organically and takes care of many things by hand. The
resulting wines are rich in flavour, complex in the terroir of the land, joyful
and balanced.

Despite being situated in some of Franciacorta’s top crus, Aurelio and Emilio
del Bono have decided not to bother with the trials and tribulations of the
DOCG. The wines are certainly atypical for the area and we think all the
better for it. The family have called these hills home for the past 12
generations and their 7 hectares of vines are tended biodynamically.
Vineyards are blessed with strong soils and great expositions and they are
one of a handful of producers in the area practicing guyot training.
Grapes are fermented with wild yeasts, see little or no dosage and spend as
much time on their lees as the del Bonos consider necessary. A remarkably
patient, deft hand in the cantina (some wines are kept decades before
release) results in sparkling wines of incredible purity.

Alfonso Soranzo makes wines from vineyards surrounding his home and
cantina in the tiny hamlet of Zovon di Vò in the little-known Colli Euganei.
Fortunately, like all the great vineyards in the Veneto, this was previously
an area of significant volcanic activity and the fossilised soils that remain
are perfect for growing its native grapes. Alfonso tends his 4.5 hectares of
vines organically and the winemaking setup is humble to say the least. All
wines are wine fermented on the skins with wild yeasts in concrete vats
and spend several months resting here on the lees until bottling. These are
fresh, delicate and pure wines, vibrant expressions of grape and place.

Pier Paolo and Stefano have been farming grapevines since 1992 on their
own land in the hilly region of the town of Marano, Valpolicella, San Pietro in
Cariano and Negrar. They take care of their wines throughout the entire
production chain - from the vineyard to the cellar to the delivery to
customers. The Antolini vineyards cover a total surface area of 9 hectares.
From the beginning they have always chosen to respect the environment
using special guidelines - using the minimum amount of antiparasitic
products. The composition of their land is prevalently clayey, this is good for
the vines because the clay holds the water which in turn slowly releases into
the roots, which means there is no need to have an irrigation system.
A fundamental value for Antolini’s company is to ignore trends and
attempt to maximise the value and importance of traditional vines, the
territory and work of the winemaker - every Antolini wine must be a
complete expression of all these factors.

Entering my vineyards is the equivalent of entering in an oasis of green

Casa Coste Piane is a small estate in Santo Stefano, heart of the
Valdobbiadene area. For generations their wine had been sold in bulk but
since 1983 they decided to bottle the production themselves.
The vineyards lie on slopes close to the cellar. The vines are on average 60
years old (some are pre-phylloxera!!) and their roots can grow up to 30-40
metres long. This Prosecco is a gem, it is one of the few made in the
ancestral method wherein the second fermentation takes place in the
bottle. In April the wine is bottled without the addition of yeast and sugar,
subsequently the indigenous yeast contained in the wine starts a second
spontaneous fermentation that lasts for approximately four weeks. After
this the wine spends a further four weeks sur lie. The process of
“disgorgement” is not practised, therefore the yeasts are still present in the
bottle… any haziness is entirely natural.

We like a bit of turbid poetry in our Colfondo Prosecco. Casa Belfi features
Glera grown in the vineyards of San Polo di Piave. The estate works
organically with natural manures and green fertilisers to achieve the
healthiest possible grapes. They use biodynamic practices as well and are
now in full conversion. Vinification is also natural with the grapes crushed
gently, and the must clarified by cold decantation. The juice is then
fermented in stainless steel tanks with indigenous yeasts at a cool
temperature. After fermentation, the wine remains in contact with the lees
in tanks for approximately six months. When spring arrives the Prosecco is
bottled according the Maria Thun biodynamic calendar, after which, the
wine completes its secondary fermentation as the residual sugars are
transformed by the yeasts into alcohol and carbon dioxide. There is no
added sulphur or filtering or fining, of course.

In spite of his young age, Carlo, 32, proudly continues to be one of the
very few Amarone producers who has maintained an untouched
traditional style of winemaking and grape growing. 11 hectares, mostly on
" pergola" and sticking to the classic grape varieties, which means at 25%
of Molinara, the real delicacy of the Valpolicella blend assuring finesse of
flavour and perfumes and that typical light ruby colour. The withering of
grapes is made on "Arele", on which bunches are laid and checked thrice
times daily during the "appassimento". Then, the stunning ageing: 72
months in old Slavonian barrels followed by 12 months of bottle refining.
Carlo once told me:....some people always wonder why I don’t
participate in en primeur tastings or guides, but when my fellow producers
release their vintage offerings, I am only considering releasing wine from
six vintages earlier... Otherwise, how could i make a real Amarone without
letting this mighty wine mature properly? Keep being stubborn Carlo!

When Alessandra and Carlo Venturini first discovered Monte dall’Ora it was
love at first sight. As children of farmers, they were excited and challenged
by the hard work it was going to take to restore these ancient vineyards.
Located in Castellroto, in the hills outside of Verona, the vineyards of Monte
dall’Ora are planted on a base of limestone soil and form a natural
amphitheatre facing southeast towards the city. In fact, portions of their
vineyards are planted on ancient dry stone terraces called marogna.
The Venturinis are firm adherents to biodynamic principles. As such, they
encourage the growth of biodiversity by planting herbs such as rosemary
and lavender in the summer, whose fragrant blooms are attractive to bees;
and sowing cereals in the winter, whose roots move and aerate the soil.

The Azienda Zidarich is located in Prepotto, near Duino Aurisina, which is a

The estate of Pian dell’Orino is 2km south of Montalcino on the road
towards Castelnuovo dell’Abate. All the vineyards are located south east
of Montalcino, spread over 4 plots all with various characteristics.
We look to integrate and respect the rules of Chronobiology (biological
rhythms) of nature in our vineyards. We produce three wines which are
exclusively Sangiovese. We have created our very own “zoning” of the
terrain on the estate in order to reflect the great diversity of the
composition of Montalcino soils which are expressed in our wines.
Some of the fundamental aspects of this “zoning” are the incline of the
terrain, its vigour, structure and permeability but also the organoleptic
characteristics of the grapes in different areas. We leave the indigenous
yeasts which are already present in the grapes in the vineyard to do their
work. For this reason, we do not add any kind of artificial yeasts.
Our wines do not come into contact with any other artificial/industrial
oenological product type. This is the unique expression of our terrain where
vineyards have their roots. In Montalcino, aging is traditionally carried out
in large Slovenian wooden barrels.

Giovanna Morganti is quickly becoming recognised as one of the best of
the new generation of Tuscan winemakers. Her small estate is only three
hectares and her only wine is called “Le Trame” (the intrigues) signifying
the wheeling and dealing required to purchase the land. Giovanna‘s
father was a legendary winemaker who believed in Tuscan varietals long
before the flying oenologists identified this area as super pay-dirt. She
studied oenology herself and went to the work in the mid 1980s for San
Felice wines in Castelnuovo Berardenga, near Siena, on a project to plant
around 300 traditional Tuscan grape varietals collected from old
vineyards. When Giovanna‘s father gave her a small farm with olive
groves, called Le Boncie, she added a vineyard planted with her
favourites from the experimental project – Sangiovese, obviously, but also
Ciliegolo, Colorino, Fogliatonda Mammolo and Prugnolo. She makes only
one wine – Le Trame Chianti Classico – and releases it a year later than
most winemakers.

Colombaia is a 4 hectares vineyard south west exposed, rounded by the
house and the cave, located in the hill of Colle Val d’Elsa nord of Siena
Tuscany. The soil is clay/calcar full of fossil shells. Dante and Helena work
the vineyard as a big garden, the byodinamic method allowed them to
work in active perception, following the rhythm of nature, helping the vine
to reach in the earth the mineral elements of the soil. The activity in the
cellar is held in full respect of the fruit, the fermentation is spontaneous with
natural grape’s yeasts, working strictly in respect of the vintage. The
extraction process is slow and careful, keeping the vital cycles of
fermentation, without clarifying, filtering or stabilizing. The unique
SO2 added is a tiny dose at bottling.

Montenidoli’s vineyards are organically grown. For fifty years no herbicides,
insecticides or any other chemicals have been used. This is a microclimate
brimming with life. The vineyards are aglow with fireflies by night and
dancing with ladybugs by day. “We began to break up the clods of earth
and make humus, raising earthworms and also rabbits, for their precious
manure. Now, we leave the hoeing to the roots of plants we sow in the
vineyards, and till under each spring”. Sulfur and copper are the only
substances used to treat infection. And only if absolutely necessary,
because sunlight and clean air are perceived to be the best medicine to
make the vines healthy, strong, and resistant to disease and bad weather.

La Stoppa is an ancient estate with its vines climbing along the slopes of the
Val Trebbiola, not far from the River Trebbia, in the province of Piacenza.
The estate covers 58 hectares, 28 of which is woodland – oak, chestnut and
locust-tree and 30 of which are vineyards, all merged together and
dominated by a medieval tower. More than a hundred years ago, the
previous owner, lawyer Ageno, planted French vines and produced wines
from meaningful names which were a little peculiar because they were
Italianised: Bordò, Bordò bianco e Pinò. In 1973, La Stoppa was purchased
by the Pantaleoni family, who recently modernised and transformed the
cellar. Today the estate is run by Elena Pantaleoni, who along with Julius
Armani wanted major investments to be devoted to the vineyard, worked
on organically and certified by ‘Suolo e Salute’. The low yields and the
fundamental quality of the grapes mean that the wines are characterised
by the vineyard and not betrayed by excessive work in the cellar.

Alfonso Arpina‘s vineyard holding is tiny, a mere 2.7 ha located in the
commune of Tramonti, in the heart of the Monte Lattari and a stone‘s throw
away from Costa d‘Amalfi while 45 km from Naples. The terraces on which
the vineyards have been planted consist of volcanic ashes, originating from
former eruptions of the nearby Vesuvius as well as red clayey soils. Although
a secluded spot, well hidden from Naples, there is continuous ventilation
coming from the nearby coast as well as inland winds blowing from the
north, which not only have a mitigating effect in summer as well as winter,
but the constant thermal movements provide to the special micro climate in
this part of the hills. A delicious peculiarity. Consider 120 year old vines from
ungrafted vines unaffected by phylloxera. The organic methods used at
Monte di Grazia also further limit the yields. The vines were planted in the
traditional “tendone method”, their leaves trained to form a canopy that
protects the grapes from the sun. It is like a pergola with an overhead trellis
from which the grapes hang down. The poles that hold up the tendone are
made of chestnut wood from trees in the nearby hills and the vine branches
are attached to the tendone by willow shoots. All the grapes are naturally
picked by hand (usually in the first ten days of November) and yields are
typically low: 30 hl/ha. Different vineyards are vinified separately and, while
malolactic fermentation is hoped for it does not always occur. Sulphur is
never added to the wine.

Arianna Occhipinti’s biggest challenge is to understand what the terroirs’
needs without disturbing or modifying it, so that she is able to make the most
from it. She believes this unique balance is represented in the rigour and
harmony of the Nero d’Avola and in the freshness and elegance of the
Frappato. The organically grown estate, is spread over 10 hecatres of Nero
d’Avola and Frappato vines and 1 hectare of Albanello and Muscato, two
white varietals native to Sicily. Arianna Occhipinti believes it to be essential in
Sicily, to work with the particular climate – hot sunshine during the day and
coolness at night, the red sands, the low yields per hectare, natural
agriculture and careful attention in the cellars. To give is to receive;
according to these winemakers this means maintaining what they have
received, in terms of land and biodiversity. The wines must be the fruit of the
terroirs represented by the land’s characteristics and its own history.

Davenport Vineyards have been making wines for nearly 20 years, building
from a small start up to a collection of vineyard sites that total 20 acres.

the village of Chardakhi, Mtskheta Region, for over 50 years. The vineyard

approximately 3000 bottles of dry white wine named “Iagos Wine”. All of
the viticultural and vinification processes involved in the production of this
wine follow environmentally pure, and traditional Georgian techniques.

The newly-formed wine company Teleda has been named after the
ancient name for Telavi. Teleda was chosen as the title because the wine
making processes of this new company follows the traditions fermenting
wine in Qvevri [clay jars] known in ancient Georgia. The company
produces a limited quantity of top quality, selected wines which are
fermented in this traditional ancient style. Through the centuries, wines in
Georgia have matured naturally without additives and filtration. The topquality character of Teleda’s wine is dependent upon the 60 to 80 year old
deep-root system of the vineyards, the high mineralization of the soil on the
banks of the Alazani river, and the special grapes which are carefully
selected for producing natural wines. The expertise of selecting the
distinctive grapes and making them into wine has been handed down
through the Dakishvili family for many generations. The current winemaker
for Teleda wines is Temur Dakishvili, who is a fourth generation professional

I was engaged in vineyard farming and making natural wines from
childhood when I used to help my granddad. I was 13 years old when I
made my first natural wine on my own. Since then, viticulture and
winemaking comes within as my greatest love. My winery is in the village
Dablatsikhe (English translation “Lower Castle”), which is located in
Chokhatauri municipality of Guria region of country Georgia.
Guria region is located in the western part of Georgia, bordered by the
Black Sea subtropical costal lowlands from the west and mountains from the
east. The region is rich in cultural traditions and natural beauty, famous for
its polyphonic music, humorous people, and used to be well-known with its
delicious rosy wines. When I married on Tamar, origin from village
Dablatsikhe, I bought small house in the village and big enough land for
viticulture and started planting and reinstating the variety that my
Granddad loved very much. This is the variety Chkhaveri, rosy variety,
native to Guria region, currently categorised as rare variety. Currently the
farm comprises with vineyard and small winery (“Marani” in Georgian). I am
making natural wines in underground pottery tanks (“Qvevri”).

For the first few years Kakha Berishvili made wine using glass containers

Pheasant's Tears produces natural wines from Georgian varieties, we own
several vineyards that are farmed organically. All of our wines are made in
qvevri, earthenware jars buried entirely in the ground used for
fermentation and storage up until bottling in accordance with ancient
Georgian wine making traditions. We focus on rare varietals and
preserving an expression of unique terroir.

S & I Wine Company is made up of two qualified winemakers (husband
and wife) who in September of 2010 purchased a 30 acre estate with 20
acres under vine (majority planted in 1978). The property is situated just
south of the Margaret River township, Western Australia. Our motivation is
to hand craft natural wines, which are expressive of the vineyard and subregion. Since purchasing the property, the vineyard has been farmed
100% organic/biodynamic. All our wines are made without any of the
usual additives used in commercial winemaking, apart from a small sulphur
addition at bottling. We bottle our wines without fining or filtration. We also
have a small old garnacha vineyard, in the denomination of Calatayud,
Spain with which we have started a natural wine project in the mountain
village of Acered.

Tom Shobbrook is a young man who thinks outside the square. He’s into
biodynamic viticulture and natural, or low-intervention, winemaking, but
he’s also quality orientated. He’s no hippy winemaker, but he has a strong
sense of nature and respect for the earth. After a year studying agricultural
science he went to Italy, and spent five years with the esteemed Chianti
producer Riecine. The Tuscan experience affected him deeply and gave
him a different sense of a way of life involving various agricultural pursuits.
Upon returning to his Barossa Valley home, he couldn’t find anyone
he wanted to work with. He was interested in biodynamic viticulture
and natural winemaking, and those ideas were eccentric to
Barossans. Tom picked up the Gourmet Traveller/Wine Australia
medal 2010 for Best Young Winemaker. He built the shed in which he
works, by hand. He’s into biodynamics in the vineyard and minimal
intervention in the winery. He doesn’t do cultivated yeasts, uses only
minimal sulphur, doesn’t add acid and doesn’t do fining.

De Martino winery was founded in 1934 by Pietro De Martino, who arrived
in Chile from Italy in search of a place to satisfy his passion for winemaking.
Looking for the perfect site, he found Isla de Maipo in the Maipo Valley,
just 50 km from Santiago between the Andes Mountains and the Pacific
Ocean. Seeking the maximum expression of terroir they are linking the
grape variety to the most appropriate soil and topography. Organic
farming, wild yeast ferments and no new wood in the winery is the key to
more balanced, purer wines.

The Villalobos family estate is located close to the village of Ranguili and is
entitled to Colchagua Valley appellation of origin. Colchagua is a region
close to the coast, recognized for its dry summer days and refreshing cool
nights. The vineyard is essentially Carignan as far as anyone can ascertain,
and was originally planted during the 1940’s and 50’s. Villalobos vines
have never been treated; indeed, the vines have always grown wild and
free from any chemical processes for sixty years amongst native Chilean
flora such as maitenes, rosehip, Culenes, pine trees, blackberry bushes etc.
Given this context the winegrowers wish to distance themselves from the
traditional industrial monoculture. Their main goal is to produce wines
which reflect the seasonal conditions and qualities of the terroir, taking
advantage of the organic and wild characteristic of the aged vines. This
unique terroir allows them to harvest grapes which give the wine an
aroma that is perfectly harmonized with the Chilean countryside.

Craig Hawkins is a young winemaker who has travelled extensively in
Europe and worked in Portugal and Austria. He makes three white wines
under his own Testalonga label and has taken over the winemaking at
Lammershoek. He experiments in each vintage. In 2009 vintage he used
100% undestemmed bunches and the wine did carbonic maceration on
the stems for three to four weeks. The same block of Chenin was used from
Lammershoek. His other wine, called Cortez, is also from Chenin, but in this
case the grapes are sourced from an adjacent valley from a farm called
The Observatory (which is also on granitic soils). His wines are incredibly
pure; he believes that the lees are the soul of the wine.

Established in 2009 Sacred Microdistillery is located in a residential back
street in Highgate. It is unusual in that it distils its spirits under a vacuum in
glassware, and thus at a lower temperature than traditional pot stills, which
operate at atmospheric pressure. Launched by Ian Hart and Hilary Whitney
initially as a pure Gin distillery, Sacred has now branched out into
flavoured vodkas, such as Sacred Vodka, produced using the same
process. The gin is 40% ABV and uses 12 botanicals including juniper,
angelica root, fresh orange peel, fresh lemon peel and fresh lime peel,
cardamom and frankincense, whilst the vodka is a wholly redistilled
flavoured vodka using 7 botanicals including cubeb, angelica root,
nutmeg and frankincense. Sacred Gin came first in its category in the
Ginmasters 2009 competition, a blind tasting competition organised by The
Spirits Business magazine.

Jasper Cuppaidge’s family ran Queensland regional brewer MacLachlan’s
in Australia, and, so when Jasper came to England, it wasn’t long before he
decided to run his own pub. Taking over the Horseshoe in London’s leafy
Hampstead six years ago, he soon began brewing in his pub cellar. Last
year, he established the Camden Town Brewery – nestled beneath five
railway arches on Wilkin Street Mews in North London. Today, he has four
core beers: Camden Hells Lager, Camden Pale Ale, Camden Gentleman’s
Wit and Camden USA Hells Unfiltered Lager. Jasper’s intention is to make
beers with delicious purity.
Camden will be pouring all of the following on tap, and will also have a
selection available to purchase from their stand, in bottle.

Workshop Coffee run a cafe in Clerkenwell, serving breakfast, lunch,
dinner and brunch, all manner of drinks and bakery treats. They also have
a Marylebone coffee-bar, with a focus on really great drinks, a concise
food range, and plenty of customer interaction. At the heart of everything,
though, they are a coffee roasting company, who strive to source, roast
and supply the cleanest, sweetest and freshest coffee they can find.
As early as 2009, James Dickson set about opening an East London
destination, dedicated to sourcing, roasting and serving truly great coffee.
Two years late Workshop Coffee Co. opened the doors of its Clerkenwell
site, followed by the one in Marylebone. Wholesale coffee supply to other
independent cafes soon followed, In 2013 they launched an online
‘Dispensary’. Although the company continues to grow the artisan ethos is
as strong as ever.

Slow Food is the global food and drink NGO supporting small artisan
producers. We champion natural wines, and small scale sustainable
viticulture. Within London we run numerous events for consumers to taste
interesting products, as well as visits, talks and one of the largest school
food programmes in the capital (though sadly without wine!)

The Real Wine Wine Bar & Bistro
The folk behind Terroirs (Brawn, Soif, Green Man & French Horn) are
popping up with a pop-up at this year's Real Wine Fair.
Their bistro, winningly monickered The Unfiltered Dog, will be open
for dinner only on Sunday 13th April. It'll serve up a short-but-punchy
à la carte menu of platters, hot and cold dishes and desserts.
There will be a terrific value wine list available, listing wines from
many of the growers at the fair.
Dinner will be served from 6pm-‐10pm (last orders).

Androuet Cheese, Spitalfields

experts, the House of Androuet was established in Paris in 1909.
Brothers Alex and Leo set up Androuet in London in 2009. Alex
takes care of the cheeses and Leo runs the restaurant.
Androuet sources their cheeses from all over Europe directly from
the producers. They mature their cheese in their own cellar in Old
Spitalfields market where the cheese shop and restaurant are
based. At the Real Wine Fair, Alex and Leo will present their
Androuet “Camembert de Normandie” (exclusively produced for
them), ”Comte” 18 months, “1909″ (ewe’s milk cheese they
created for their 100 years anniversary) produced by Jean-François
Dombre, and their English cheeses like Westcombe..
Donostia, Marylebone

Donostia – San Sebastian, fell in love with the gastronomy, left our
day jobs and opened Donostia Restaurant in London.
San Sebastian has the highest number of Michelin stared
restaurants by square mile. Mugaritz, Arzak, Akelare are just some
of the well know names. Donostia restaurant takes inspiration from
these ambassadors of modern Basque cuisine, but also focuses on
the everyday pintxo bars and restaurants.

London. It is a cross between a deli/cafe-south London’s answer to

such as fresh pates, beetroot infused couscous, Thai fish cakes,
curry mutton or crispy pork belly for you to take away, or eat in the
gallery upstairs. The meat, veg and fruit are from independent

practice good animal husbandry.

2011 it was runner up in Time Out’s Best New Restaurant award and
nominated for Condé Naste Traveller Best Design award.
