The summer brings warm temperatures which heightens my craving for a crisp,
fruity wine. I almost always go for a cool glass of Sauvignon Blanc. With its juicy
stone fruit and citrus aromas, and cool lingering finish, it’s a downright refreshing
experience. This is the kind of wine that makes a great aperitif, or accompaniment
to light summer dishes and salads. It's complex yet ideal for picnics or outdoor
dining. Be sure and try the Summer Salsa recipe that’s included in this wine
release. It’s a refreshing alternative to the standard tomato based salsa, and the
fruitiness of the Sauvignon Blanc balances out the spiciness from the jalapeno
pepper.

Perfect Pairing
We love cheese and we all know that wine loves cheese. Simply put, wine and
cheese are made for each other! Mary Dedrick of Dedrick’s Main Street Cheese
here in Placerville supplies us with incredible cheese from around the globe
which we sell in our very own tasting room. We’ve asked her to pair some of our
wines with the specialty cheese, and here are her recommendations:
{Explorateur cheese} This sensuously rich triple-cream cheese is made from
cow's milk. When ripe, the ivory interior has a delicately piquant flavor. Wonderful as a snack or after-dinner cheese served with a dry, fruity white wine such as
our 2010 Sauvignon Blanc.
{Midnight Moon} from Cypress Grove is a goat's milk cheese that is aged for at
least one year, resulting in a nutty and brown-buttery flavor, with prominent
caramel notes which pairs well with our 2009 Boejerlais. This artisanal goudastyle cheese has a beautiful pale, ivory color, the texture is firm and dense and
the taste is smooth with a slight graininess long-aged cheeses have.
