The ongoing analysis of images enables the user to grade the sorting operation with high precision, depending on targets and initial grape quality. The user is just as free to select exclusively healthy berries as they are to keep crushed berries or those with a piece of stem attached. Delta Vistalys is now used by many wineries around the world. The trailer integrates a vibrating platform and draining grid enabling reception of manually or mechanically harvested grapes for transportation without grinding from the vineyard to the winery to be distributed by vibration across the reception hopper’s vibrating table, in a destemmer or other equipment, with regular and continuous throughput. Delta Extractys grape skin extraction unit Dual-purpose cross-flow filtration for juice lees and wines Delta AEV vibrating hopper The vibrating platform hopper is designed to take manually or mechanically harvested grapes, to efficiently drain off the free juices and ensure the even distribution of grapes by vibration. User safety is guaranteed, hygiene is ensured and cleaning is simplified. 3 VOLETS_Multilangues.indd 4-6 A physical, selective extraction process, Delta Extractys is designed to quantitively and qualitatively enhance the extraction of skin compounds from grape berries - such as polyphenols (anthocyans and tannins) and especially aromatic precursors - from a thermovinification process. Bucher Inertys inert gas pressing Bucher Inertys is an exclusive process of pressing under inert gas, 100% of pressed grape must is protected from oxidation. Colour, typicalness and aromatic potential are then full of promise for pleasurable, fresh and fruity white wines and rosés to match consumer taste. For more information www.bucher-inertys.com A true touch of simplicity to run the XPlus press Organ programming Thanks to the press’s active juice trough, Organ defines, unassisted, the parameters for pressure, holding times, pressure rises, tank rotations... based on the parameters set by the user: type of grapes to be pressed, final level of draining, maximum duration of pressing. Adaptable and upgradable press Bucher XPlus new generation press As a user of Bucher XPlus presses, you could need additional accessories, you might wish to integrate the Inertys process for increased aromatic intensity or Organ programming for greater peace of mind during harvest… this press will keep abreast of your winery improvements. For red wines of irreproachable œnological quality Bucher JLB basket press The basket press benefits from exclusive advantages for the undeniable quality of juices obtained: optimal flow throughput and controlled automatic filtration of juices until the end of pressing. The press control system is automatic. User safety is guaranteed. Flavy FX/D filter The filtration of wines and juice lees at harvest time by cross-flow filtration is now possible. This dual application is ideal for private wineries and cooperatives alike offering the following advantages: • a simple, automatic and economic solution, • optimization of winery organization during harvest, • environment friendliness (no input to be managed, no treatment of used diatomeous earth-DE). For a significant increase in productivity For brilliant and subtle wines Flavy FX Tandem concept Flavy FX cross-flow filters The Flavy FX Tandem concept is especially suitable for the filtration of large wine batches. Indeed, the association of two cross-flow filters operating in parallel but differently allows the filtration of wines for one filter and the concentration of retentates from the first filter, for the other. The fully automatic operations are controlled by a central computer with data files consultable on the Internet. Whether for « traditional » wines where terroir or typicity of the vine are sought or « modern » wines with more innovative characteristics, Bucher Vaslin’s Flavy FX cross-flow filtration provides an optimal filtration solution: respect for the wine’s physicochemical properties, the guarantee of a brilliantly clear wine, a fully automated process, time savings and easy implementation. On-demand concentration of grape must Flavy MT reverse osmosis unit Reverse osmosis* is designed to extract a proportion of water contained in red or white grape must to improve the structure, aromas and colour and raise its potential alcoholic strength. Several applications are possible with this technique, particularly: • concentration of the wine’s phenolic structure, • reduction of sugar content in grape must, • elimination of acidity in the wine. * Nota: the technique is subject to authorization depending on the country and region. 9/11/09 11:51:11 Organ® Programming for Bucher XPlus 22/30/40/50/62/80 Bucher XPlus 22 An “dynamic” trough to run presses Organ® is a new process for running Bucher Xplus presses. Organ® uses the “dynamic” trough as the transmitter of the necessary information to the software to run the press. Organ® leaves the operator free from any constraints related to a complicated programming due to pressure, pressure keeping-up, number of tank rotations… Operation • The “dynamic” trough is fitted with a juice drain-off measurement system. The basic principle of operation is based on the intermittent recording of the depth of liquid in a measurement well. • Leaving the slotted channels, the must is conveyed to the measurement well upstream of the collection juice trough. • The steady measurement of juice draining allows the good running of pressing and draining cycles. • Depending on the operator’s quality or production targets, the process analyses the reaction of the crop and adjusts programming on an ongoing basis. • Operation is automatic. • Bucher Vaslin has studied and gained experience of grape behaviour over many years. Organ® integrates all the physical and oenological parameters of that behaviour. Dynamic trough for the reception of juices Rear view of press Measurement well Operator targets • The operator defines his needs: . the level of desired draining on a scale of 1 to 9, . maximum duration of pressing, . type of grapes to be pressed, . maximum pressure. • The level of drain-off corresponds to the desired degree of extraction. The higher the degree the drier the pressed pomace. • The maximum duration of pressing is the time assigned for pressing. • The type of grape is an indication of crop behaviour. The operator can select one of the following 4 criteria: . gentle pressing (e.g.: Pinot gris, Riesling, Pinot noir…) . normal pressing (e.g.: for red grapes from the tank) . dynamic pressing (e.g.: Chardonnay, Ugni Blanc…) . pressing for late harvest (e.g.: for liquor-like white) • The maximum required pressure is parameterizable up to 2 bars. Applications • Once the targets are set, Organ® operates automatically. It detects the presence of free juice, triggers the draining phase, determines the pressing phases (pressure buildup, pressure hold, decompression) and orders a stop to pressing. • Organ® is suitable for any variety of vine. Organ Programming ® Jean-Pierre Bernheim Chief Executive Officer A touch of simplicity for your winery Organ® is a new process for running Bucher XPlus presses from 22 to 80 hl, which is mainly dedicated to small wineries. The process is very simple as it uses the trough of the press: discontinuous recordings of juice drain-off are made through the “dynamic trough” and then transmitted to the software for the running of draining and pressing cycles. Delta Extractys ® For fruity, supple and coloured red wines Organ® defines by itself the parameters for pressure, pressure holding, pressure rise, decompression to be applied, etc. depending on juice draining and the user’s needs: • type of berries to be pressed or type of extraction to be run (soft, normal, dynamic, late harvest), • level of final required dryness, •maximum duration of pressing. Delta Extractys® allows the winemaker to control selectively the skin extraction in order to obtain the required œnological result: fruity, supple and coloured red wines. Cascade Twin Delta Extractys is a patented, physical and selective extraction process and is designed to enhance, both quantitatively and qualitatively, the extraction of membranous compounds of grape berries – such as polyphenols (anthocyans and tannins) and aromatic precursors – from a thermovinification process. Cascade Twin enables to treat wine effluents coming from wine production in cellars and the washing of harvesting machines as well as phytosanitary effluents gathering waste waters containing pesticides. ® The alternated treatment of wine and phytosanitary effluents Simple and reliable, this mixed solution is well adapted to the needs of large wineries, cooperative wineries, wine growers organizations, etc. The company Bucher Vaslin (leader in wine effluents treatment by aerated storage) and the company Agro-Environnement (specialist of cleaning up devices for wine growing effluents) have joined their skills in order to adapt the process Cascade to treat alternatively wine effluents and phytosanitary effluents. Cross-flow filtration for lees and wines The original idea consists in the double use of one cross-flow filter within the Bucher Flavy range to filter all year round: • wines on one hand, • lees during harvest on the other hand. The filter is then equipped with additional accessories, among which a pre-filter with a Flavy D3 rotating drum in order to eliminate large particles and organic membranes that allow the filtration of heavy-loaded products. The Flavy FX solution is perfectly suitable for small and large wineries as it allows: • to get the benefice of a simple, automatic solution, mobilizing very few labour work during harvest, •to optimize the organization of the winery during harvest, •to contribute to the respect of the environment (no input to manage, no treatment of used diatomeous earth - DE). Organ® programming Organ® is a new process for running Bucher XPlus, from 22 hl to 80 hl. Organ® uses the « dynamic » trough as the transmitter of the necessary information to the software to run the press. Dynamic trough for the reception of juices Organ® leaves the operator free from any constraints related to a complicated programming due to pressure, pressure keeping-up, number of tank rotations… Functioning : Discontinuous recordings of juice drain-off are made through the “dynamic” trough and then transmitted to the software for the running of draining and pressing cycles Organ® defines by itself the parameters for pressure, pressure holding, pressure rise, decompression to be applied etc… depending on juice draining and the user’s needs: - type of berries to be pressed or type of extraction to be run (soft, normal, dynamic, late harvest), - level of final required dryness, - maximum duration of pressing Communiqué de Presse Chalonnes, le 29.09.2008 Une maie active pour piloter les pressoirs en caves particulières Organ® Le pressurage est une étape clé de la vinification, décisive et souvent difficile à maîtriser. Contact : Corinne Delpy, Responsable Marketing +33 (0)2 41 74 50 50 [email protected] www.buchervaslin.com page 2/2
