“Lucky on the Lake” is the theme of the
Paris-Henry County Chamber of Commerce’s annual Water Fun Run, scheduled for July 16th on Kentucky Lake.
Sponsoring resorts include Fat Daddy’s,
Mansard Island Resort, Buchanan Resort, Pleasant View Resort, Cypress
Springs, Paris Landing State Park Marina, Leatherwood Resort, Breakers
Marina and Cypress Bay Resort. Players
pay $20 each ($25 day of event) to collect stamps at the area resorts. Five stops
are required. Cards will be dealt based on
the number of stamps collected. The best
hand dealt at 2 pm, 3 pm and 4 pm will
each win $500. Two “Fun Run Pon-
toons,” will be traveling the water during the day. Look for one and collect an
extra stamp. All watercraft are invited to
participate. All players must be checked
in the dock at the marina at Paris Landing State Park by 4 pm on July 16th, but
the two extra playing times, 2 pm and 3

Triathlon National and the ITU World
Duathlon Champion, will speak about
triathlon, duathlon, and multi-sport competition at MCCH, the Murray Center for
Health and Wellness located at 716 Poplar St. in Murray, KY. Sass was the 2015
Overall National and World Champion
in the Olympic Distance Triathlon. She
competes at the top level as an amateur
athlete. Sass was named USA Triathlon
Femal Athlete of the year in 2013 and
2015. Kirsten is coached by Steel City
Endurance and is a Physician Assistant
that resides with her family in McKenzie,
TN. She will discuss effective training
techniques, how to balance family, work,
and training, planning your nutrition for
success, and other topics. The event is

Simulation The Henry County UT Ex-
tension Office needs volunteers to assist
with a poverty simulation on Wednesday
July 20th at Inman School from 8-11am
and on Monday July 25th at Grove
School from 7:30am to 11am and again
from 11:30am-3pm. The simulation will

UTM to Host TN Reconnect
Anyone considering finishing a degree
or going back to college is encouraged
to attend the Tennessee Reconnect event
July 19 at the University of Tennessee at
Martin. The event will take place from
5-7 p.m. in the Welcome Center, located
on the first floor of the Boling University
Center. Attendees will receive information on their academic records and financial aid options, as well as meet with
academic advisers and discuss online
and extended campus course options.
The admissions application fee will be
waived during this event, so those in
attendance can apply to UT Martin and
get instant feedback on their admissions
status. Those accepted can have their
previous transcripts evaluated, apply for
financial aid and register for fall semester
courses – all in the same evening. Dinner
will be provided. Tennessee Reconnect
is an initiative from Gov. Bill Haslam
to help Tennessee adults finish their
degrees, gain new skills, advance in the
workplace and increase their earning

1/4 cup raisins
1 tablespoon peanut butter
8 thin pretzel sticks
Slice apples in half from top to bottom and scoop out the cores using a knife
or melon baller. If you have an apple corer, core them first, then slice. Place
each apple half flat side down on a small plate. Dab peanut butter on to
the back of the ‘lady bug’, then stick raisins onto the dabs for spots. Use this
method to make eyes too. Stick one end of each pretzel stick into a raisin,
then press the other end into the apples to make antennae.
1 cup pineapple juice
1/2 cup packed brown sugar
1/3 cup light soy sauce
2 lbs chicken breast tenderloins or strips
skewers
In a small saucepan over medium heat, mix pineapple juice, brown sugar,
and soy sauce. Remove from heat just before the mixture comes to a boil.
Place chicken tenders in a medium bowl. Cover with the pineapple marinade, and refrigerate for at least 30 minutes. Preheat grill for medium heat.
Thread chicken lengthwise onto wooden skewers. Lightly oil the grill grate.
Grill chicken tenders 5 minutes per side, or until juices run clear. They cook
quickly, so watch them closely.

2 cups macaroni
2 (6 oz) cans tuna, drained
1 onion, chopped
1 green bell pepper, chopped
2 stalks celery, chopped
2 tablespoons garlic powder
1 1/2 cups mayonnaise
2 tablespoons prepared mustard
salt to taste
ground black pepper to taste
Cook noodles in a large pot of boiling
water until al dente.

Rinse under cold water, and drain.
Mix tuna, onion, bell pepper, celery,
garlic powder, mayonnaise, salt and
pepper, and mustard together in a
large bowl. Add pasta, and mix well.
2 large eggs
1/2 cup margarine, softened
1 (15.25 oz) package yellow cake mix
1 (6 oz) package toffee baking bits
1/2 cup chopped pecans
1 tablespoon water
Preheat oven to 350 degrees F. Beat eggs and margarine together in a bowl until smooth.
Add cake mix, toffee bits, pecans, and water; stir until batter is blended. Drop tablespoonfuls
of batter onto a large baking sheet. Bake in the preheated oven until golden brown, 15 to 17
minutes. Allow cookies to cool for 5 minutes before removing from baking sheet.
