Annual Howl-O-Ween, a kid-friendly,
non-scary, daytime event all about
nocturnal animals! Join our guides on
a half-mile woodland walk, as we meet
costumed nocturnal woodland creatures
and learn why some of our forest friends
prefer to sleep all day. Also enjoy treats,
face painting, live animals, and games.
Costumes are very welcome! $5 per
person for ages 5 and up. Ages 4 and
under are free. Includes same day Nature
Station admission. Tickets go on sale at
12pm. Guided half-mile character trail
hikes begin at 1pm. Last tour departs at
4pm. All other activities end at 4:30pm.

gather around the bonfires for warmth,

Land Between The Lakes invites the
public to join them for a walk in the
woods on Friday, October 16, Saturday,
October 24, or Tuesday October 27.
Each day will be spent visiting the Fox
Hollow area in the Tennessee portion of
the national recreation area. Participants
will meet at 9am at the crossroads
of Woodlands Trace National Scenic
Byway and Forest Service Road 219,
with anticipated end time around 3pm
each day. Those attending should bring
plenty of water, snacks, and a lunch.
Vehicles will caravan from the meeting
place and park near the entry point,
where the day’s excursion will begin.
The group will walk to a variety of
areas, stop for discussion along the way
based on the interest of attendees, and
enjoy lunch outdoors. Participants will
be encouraged to engage in discussion,
ask questions, and provide input.
The day will end where the caravan
parked. Participants will need to dress
appropriately for the changing weather
and walking in the woods. Bug and tick
spray are highly recommend. Other
items that might be useful include a
raincoat and binoculars. Public safety
is very important; hard hats will be
provided. Participants are requested to
bring their own if they have one. For
planning purposes, please sign up by

The W.G. Rhea Public Library will offer
free computer classes for beginners on
Monday October 19th and repeat class
on Monday October 26th. These classes
will offer introduction to a computer
and the basic computer fundamentals.
Classes begin at 5pm and end at 6:30pm

Veterans of Foreign Wars Post 4939
Benefit
On Saturday, October 17, 2015, State
Representative Andy Holt will be hosting
a fundraiser to benefit Veterans of Foreign Wars (VFW) Post 4939 in McKenzie. Holt and his crew will be preparing
an old fashioned pig roast. In addition to
the BBQ, other activities will be taking
place, including an appearance from the
Rolling Thunder. “ The event runs from
10:00 AM - 2:00 PM on October 17 at
the McKenzie VFW post (9750 Cherrywood Ave, McKenzie, TN 38201).Plates
are $7, and all proceeds go directly to
benefit the McKenzie VFW. Philippe LeGrain and Michel Vagner were among the international journalists who
visited Henry County over the weekend of October 10th. The group included French
and German representatives of radio and print travel outlets. The local hospitality
team included Garry Mason, Northwest Tennessee Tourism; Kathy Ray, Downtown
Paris Association; Roger, Lisa and Diana Ciarrocchi at the Paris Winery; Jennifer
Wheatley, Paris-Henry County Chamber of Commerce; Gary McEntire, Marianne
Humphries, Andy Fazzini, Renate Bullock, Steve Searle and the staff at Paris
Landing State Park; Randall Perry and Jonathan Lodge at PerryLodgic Brewing;
Mary Beth Puckett at My Favorite Things; Tony Wheatley, Lowes; and Charles and
Edna Hopkins at the Toggery.

3 Tbsp olive oil
1 broiler-fryer chicken, about 2 1/2-3 lbs., cut into serving pieces
1/2 cup of flour for dredging
Salt

2 tablespoons olive oil (can use up to 1/4 cup)
1 medium yellow onion, chopped
1 garlic clove, minced
2 cups of medium or long-grain white rice
3 cups* chicken stock
1 tablespoon tomato paste or 1 cup of diced tomatoes, strained
Pinch of oregano
1 teaspoon salt
1 Heat 3 Tbsp olive oil in a large skillet on medium high heat.
Put the flour in a wide bowl, mix in a generous sprinkling of salt, pepper, and
paprika. Dredge the chicken pieces lightly in the flour mixture and put in
the pan to brown. Cook a few minutes on each side, just enough so that the
chicken has browned. Use a slotted spoon to remove from pan and set aside.
Add the rice to the pan to brown. Add a little more olive oil if necessary. Stir
first to coat the rice with the olive oil in the pan. Then don’t stir too much or
you will prevent it from browning. Let the rice brown and then stir a little to
let more of it brown. Then add the onion and garlic. Cook the onion, garlic
and rice mixture, stirring frequently, until the onions have softened, about 4
minutes. Place the chicken pieces, skin-side up, on top of the rice. In a separate bowl, mix together the stock, tomato, salt, and oregano. Pour the stock
mixture over the rice and chicken. Bring to a simmer, reduce the heat to low,
and cover. Let cook for 20-25 minutes, depending on the type of rice and the
instructions on the rice package, until the rice and chicken are done. Fluff the
rice with a fork. If you want you can sprinkle with some peas. Add more salt
and pepper to taste.

Candied Walnuts
original recipe makes 2 cups
1/3 cup sour cream
1/2 teaspoon salt
2 Tbsp milk
3/4 cup sugar
2 cups of walnut halves
1 teaspoon of vanilla extract
In a small, thick-bottomed saucepan, mix together and heat the sour cream, salt, milk, and
sugar. Heat until the temperature reads 240°F on a candy thermometer, stirring occasionally. Add the walnuts and a teaspoon of vanilla. Stir until the walnuts are creamy. Remove
pan from heat and spread the walnuts out on wax paper or Silpat. Separate using 2 forks if
necessary. Let cool to harden.
Peppermint Ice Cream
2 1/2 cups heavy cream
1 1/2 cups whole milk
8 large egg yolks
3/4 cup sugar
1/4 teaspoon salt
2 teaspoons peppermint extract
1/2 cup crushed candy canes or hard peppermint candy
Warm the milk, sugar, and salt in a medium saucepan. Make sure the sugar and salt
completely dissolve. Pour the cream into a metal bowl set in a larger bowl of ice and set a
medium-mesh sieve on top.
In a separate bowl, whisk together the egg yolks. Slowly pour the warm milk into the egg
yolks, whisking constantly, then scrape the warmed egg yolks back into the saucepan. Stir
the mixture constantly over medium heat with a wooden or heatproof rubber spatula,
scraping the bottom as you stir, until the mixture thickens and coats the spatula, about 5-7
minutes. Pour the custard through the strainer and stir it into the cream. Then stir until
cool over the ice bath. Chill mixture thoroughly in the refrigerator. Once the mixture is
thoroughly chilled, add peppermint extract, a 1/4 teaspoon at a time, tasting the mixture
after each addition, until you reach the desired level of peppermintiness. Once chilled,
freeze in your ice cream maker according to the manufacturer’s instructions. Once the ice
cream has been formed in the ice cream maker, it will be fairly soft. Fold in the crushed
peppermint candy. Put in an airtight plastic container and place in the freezer for at least
an hour, preferably several hours. If it has been frozen for more than a day, you may need
to let it sit at room temperature for a few minutes to soften it before serving.
