Our Dun-Found-It Winner this week is: Anita Criner Please come by the Peddler to receive your certificate. Arroz con Pollo Chicken 3 Tbsp olive oil 1 broiler-fryer chicken, about 2 1/2-3 lbs., cut into serving pieces 1/2 cup of flour for dredging Salt Freshly ground black pepper Paprika Rice 2 tablespoons olive oil (can use up to 1/4 cup) 1 medium yellow onion, chopped 1 garlic clove, minced 2 cups of medium or long-grain white rice 3 cups* chicken stock 1 tablespoon tomato paste or 1 cup of diced tomatoes, strained Pinch of oregano 1 teaspoon salt 1 Heat 3 Tbsp olive oil in a large skillet on medium high heat. Put the flour in a wide bowl, mix in a generous sprinkling of salt, pepper, and paprika. Dredge the chicken pieces lightly in the flour mixture and put in the pan to brown. Cook a few minutes on each side, just enough so that the chicken has browned. Use a slotted spoon to remove from pan and set aside. Add the rice to the pan to brown. Add a little more olive oil if necessary. Stir first to coat the rice with the olive oil in the pan. Then don’t stir too much or you will prevent it from browning. Let the rice brown and then stir a little to let more of it brown. Then add the onion and garlic. Cook the onion, garlic and rice mixture, stirring frequently, until the onions have softened, about 4 minutes. Place the chicken pieces, skin-side up, on top of the rice. In a separate bowl, mix together the stock, tomato, salt, and oregano. Pour the stock mixture over the rice and chicken. Bring to a simmer, reduce the heat to low, and cover. Let cook for 20-25 minutes, depending on the type of rice and the instructions on the rice package, until the rice and chicken are done. Fluff the rice with a fork. If you want you can sprinkle with some peas. Add more salt and pepper to taste. DUN-FOUND-IT GAME FOR OCTOBER 15, 2015 _______________________________________ _______________________________________ _______________________________________ _______________________________________ _______________________________________ Name:_________________________________________ Phone:________________________ Candied Walnuts original recipe makes 2 cups 1/3 cup sour cream 1/2 teaspoon salt 2 Tbsp milk 3/4 cup sugar 2 cups of walnut halves 1 teaspoon of vanilla extract In a small, thick-bottomed saucepan, mix together and heat the sour cream, salt, milk, and sugar. Heat until the temperature reads 240°F on a candy thermometer, stirring occasionally. Add the walnuts and a teaspoon of vanilla. Stir until the walnuts are creamy. Remove pan from heat and spread the walnuts out on wax paper or Silpat. Separate using 2 forks if necessary. Let cool to harden. Peppermint Ice Cream 2 1/2 cups heavy cream 1 1/2 cups whole milk 8 large egg yolks 3/4 cup sugar 1/4 teaspoon salt 2 teaspoons peppermint extract 1/2 cup crushed candy canes or hard peppermint candy Warm the milk, sugar, and salt in a medium saucepan. Make sure the sugar and salt completely dissolve. Pour the cream into a metal bowl set in a larger bowl of ice and set a medium-mesh sieve on top. In a separate bowl, whisk together the egg yolks. Slowly pour the warm milk into the egg yolks, whisking constantly, then scrape the warmed egg yolks back into the saucepan. Stir the mixture constantly over medium heat with a wooden or heatproof rubber spatula, scraping the bottom as you stir, until the mixture thickens and coats the spatula, about 5-7 minutes. Pour the custard through the strainer and stir it into the cream. Then stir until cool over the ice bath. Chill mixture thoroughly in the refrigerator. Once the mixture is thoroughly chilled, add peppermint extract, a 1/4 teaspoon at a time, tasting the mixture after each addition, until you reach the desired level of peppermintiness. Once chilled, freeze in your ice cream maker according to the manufacturer’s instructions. Once the ice cream has been formed in the ice cream maker, it will be fairly soft. Fold in the crushed peppermint candy. Put in an airtight plastic container and place in the freezer for at least an hour, preferably several hours. If it has been frozen for more than a day, you may need to let it sit at room temperature for a few minutes to soften it before serving. “Business Classifieds” are $13.00 for 4 weeks, 20 words or less. PTP324 Your Weekly Love Horoscope Aries Taurus Gemini Cancer Leo Virgo March 21-April 19 April 20-May 20 May 21-June 20 June 21-July 22 July 23-August 22 August 23-September 22 You believe you know exactly what you want in the love department today, but your desires are not as clear as you think. You tend to idealize your attractions now, which can be a lot of fun as long as you don’t try to connect them directly to reality. In fact, too many concrete expectations hinder your current journey. However, going with the flow may reward you with a lovely experience that has long-lasting consequences. Follow your heart and see who you encounter along the way. You may misinterpret an emotional situation today, especially if you aren’t paying rapt attention to every word. The dynamics of a relationship are shifting and you’re not sure if you know the entire truth when it comes to someone else’s feelings. Whether or not your concerns are warranted, you can gain some comfort by asking questions to find out what others expect from you. However, there’s no need to panic, even if you’re treading on shaky ground. Just roll with the confusion until the path straightens out and you can determine your new direction. Although you might think you expressed your needs well enough for people to understand, they still don’t have a clue as to what you want. Your words are easily misconstrued today because you don’t believe it’s necessary to explain the obvious. However, you can be much more convincing now if you unfold your story gradually in bitesized pieces that others can handle. Honesty is the best policy for everyone involved; playing guessing games isn’t fun when your heart is on the line. Libra Scorpio Sagittarius Your schedule can suddenly fall apart today if you don’t allow enough time for everything that needs to be accomplished. You may not be as prepared as you prefer now because people aren’t sharing their expectations with you. Instead of muddling your way through the uncertainty now, ask pointed questions to find out what others want. Your friends and associates might surprise you with their pragmatic answers, saving your day if you’re willing to take their advice. Listen more than you speak for the best results. Your dreams seem so amazingly real now that you could be living in a bubble of fantasies without even knowing it. Facts are shaded by your thoughts and feelings today, and it’s tricky to separate objective perceptions from subjective opinions. The truth is that the potential for creating more meaning in your life grows stronger when your intuitive visions are integrated into your reality. Your imagination, intelligence and heart each play an integral part in illuminating your star. Capricorn Aquarius Normally, you’re way ahead of the curve when it comes to managing the details of complex projects and keeping everything in order. Although sweet Venus and the responsive Moon shift into your rational sign today, you may be wiser to save the critical analysis and hard work for another day. Relax for a change; give yourself permission to space out, instead of trying to limit your thoughts strictly to the mundane world. Your imagination is your greatest asset now; don’t be afraid to use it. Pisces September 23-October 22 October 23-November 21 November 22-December 21 December 22-January 19 January 20-February 18 February 19-March 20 You grow more introspective today as the Moon, along with your key planet Venus, takes up residence in your 12th House of Privacy. If you find yourself in the middle of a crowded room, you can still withdraw into your imagination while appearing as socially astute as ever. Thankfully, you don’t need to isolate yourself in order to do your inner work. Your natural ability to offset one reality with another empowers you to pursue contemplation while still playing a vital role in the community. You have a specific plan in mind that you want to share with your friends now, but your work might not give you the personal freedom you need to do what you want. Obviously, you aren’t one to run out on your responsibilities, yet you can rearrange your schedule to your advantage today without negatively impacting anyone else. Following through on your word is crucial to maintaining your reputation, but so is pursuing your dreams. Conditions on the home front can temporarily derail your ambitions, but they aren’t your biggest problem now. Nothing is as it appears to be, and it’s challenging to gauge the relative importance of a particular thought. Taking a simple idea and turning it into an overly complicated strategy won’t make it any more effective. Let “less is more” be your mantra to keep you on the straight and narrow path. Misunderstandings that come to light in the next few days will make you glad that you strive for simplicity today. You may grow frustrated if you can’t subdue your desires now, especially if they distract you from previous commitments. There are days when you industrious Goats can magically build the very same roads you travel on. However, today’s energy is meant for exploring territories that are off the beaten track. Paradoxically, it might be prudent to meander around, knowing that you’ll be back on the highway and heading toward your destination again before you know it. As Tolkien reminds us, “Not all those who wander are lost.” Your logic seems sound enough to guide your way, but you might not be projecting a ton of confidence today. People can see your kinder and gentler side as your hidden emotions slip out through the cracks in the walls of your defenses. Instead of fighting your softness, consciously let those you trust inside your otherwise impenetrable shell. Sometimes it’s necessary to be the strong and silent type; however, it’s more important now just to be real. Falling in love with a fleeting vision, a spiritual calling or a beautiful person is all too easy today. Unfortunately, it’s nearly impossible to tell the difference between fact and fiction when it comes to your affections. Don’t try to figure out what’s happening now; just enjoy the experience for what it’s worth. Untangle the threads in the tapestry of life on another day when things make more sense. The truth is reality and fantasy can blend into a magical moment that breaks open your heart if you’re willing to believe in the impossible. Play “Dun-Found-It” for your chance to win tickets to the Parisian! Page 20 October 15, 2015 PERSON TO PERSON SWF, just 59 years old, 5’7, brown hair, brown eyes. Don’t smoke, drink or do drugs.
