The society is planning a very nice
breeders course and judges certification
program in Duncan, Oklahoma April 2526, 2013. The courses are followed by our
annual show and sale. Theuns Botha from
South Africa is our lead instructor. Theuns
is my favorite South African that I have
listened to. Be sure and reserve a room in
Duncan because last year at the show and
sale, the town was sold out.
Bill Kuecker and Craig Jones are
making an impact on the commercial sheep
industry. Bill, our board member, working
with the Schoolcraft College Culinary Arts
Dorper Lamb competition is exposing
Master Chefs to Dorper lambs. The
students in the competition are developing
Dorper lamb recipes. The Society will
develop a cookbook using these recipes.
We will also be accepting recipes from our
members for this cookbook. Darla Schmidt
of Goldwaithe, TX will be coordinating
the cookbook. Craig Jones, owner of the
Prime Fresh Plant of Goldwaithe, TX, is
paying a premium price for high quality
90 lb Dorper lambs. Our society members
have talked about our high quality meats,
but Craig is seeing the difference in the
higher dressing percentage and higher yield
of better cuts of meat. Craig is spreading
the word that better rams produce higher
dollar yielding carcass. I have seen the
increase in demand for quality rams from
the commercial breeders.
The Society has teamed up with
Hamilton Livestock Sale Barn to host a
commercial ram and commercial ewe
sale. The ewes will be sold in pens of 3
to10 (ewes do not have to be registered).
Commercial rams will be purebred and
registered. The sale is scheduled for
August 2013 in Hamilton, TX. The sale
barn has sellers and buyers over many
States. This sale will be a good place to
find commercial ewes in groups of ten. For

The shows and sales that our Society
participates in are great places for small
breeders to market their flocks. It is
important that large and small breeders
support our shows and sales. They showcase
our sheep to a new and growing market. I
hope to see you all in Duncan, Oklahoma.

I am writing this on the first day
of Spring, and we still have over a
foot of snow on the ground here in
Massachusetts, with more coming
tomorrow! The Dorpers are nearly
finished lambing, and the Winter weather
doesn’t seem to affect the lambs in the
least.
Last week I received the latest
issue of The Banner Sheep Magazine,
reporting data on 37 sheep breed
registries for 2012. Dorpers/White
Dorpers stood 4th in registration numbers
with 6,505 processed last year. (Suffolks:
8,761; Katahdins: 8,131; Hampshires:
7,760; Dorpers: 6,505; Dorsets: 6,493)
and 4 th also in number of transfers
processed with 3,289. (Katahdins:
4,456; Hampshires: 3,587; Dorsets:
3,370; Dorpers: 3,289; Suffolks: 3,094).
A great year for a breed that is only in
its second decade in the USA!
We know our numbers could be
higher if many of our buyers kept up
their registration papers with each
successive generation. Registration
certificates maximize the resale value
of your sheep; without them the sheep
are just commercial stock. Last year
we sold over 100 head of ewes in
commercial pens of three at ADSBS
sales and averaged $508 per head. If
your commercial Dorpers or White
Dorpers aren’t commanding a price like
that, then perhaps you need to maintain
the papers on them!
Next month we kick off Dorper/
White Dorper sale season with the
Mid-America Dorper Show & Sale in
Duncan, Oklahoma. There are 225
head of Dorpers and White Dorpers
consigned and you can download the
sale catalog from the www.Dorper.
org homepage. Following on the
heals of Oklahoma is the Ohio Dorper
Showcase Sale in Eaton, Ohio and
then the West Coast Production Sale
in Orland, Calfornia and the Nugget
All-American Sale in Reno, Nevada.
Our 2013 National Sale will be held in
June at the Midwest Stud Ram Sale in
Sedalia, Missouri. After that we follow
with the Southern States Dorper Sale
in Cookeville, TN in July, the ADSBS
Commercial Sale in Hamilton, TX in
August and the Texas Hill Country Sale
in Fredericksburg, TX in September. I
encourage you to attend the sales near
you for an opportunity to select seed
stock rams and ewes to improve your
flock. If you cannot attend in person,
there are breeders, including myself,
who can make selections for you. We
call these “mail bids”, but essentially
you tell us what you are looking for
and the price range and we act as your
agent. We will try to buy for you under
your budget, and arrange transportation
to your area following the sale. We call
you after the bidding is over, and you
remit payment immediately to the sale
sponsors.
I have been handling mail bids
for sheep breeders for 37 years and if
someone was disappointed they never
told me. It is part of my job description
working with ADSBS, so if I can help

On the agenda are a fitting class, instructor
to be announced and a showmanship clinic
instructed by Darla Cude. There will also
be a pizza lunch and games to help all of
us get to know each other a little better.
Some of the new membership has
expressed interest in these classes. We
will try to video the class so that those
who are unable to attend will be able to
view it on-line.
New this year will be a silent auction to be held during the course of the
weekend. Funds raised from the auction
will be used to help fund some of the new
programs for our junior membership.
Please bring an item to contribute to the
Silent Auction: suggestions include new
sheep equipment, Dorper craft items, gift
certificates to suppliers, etc.
Stay tuned for more information about
regional events. We will be working with
the junior board to finalize by-laws for the
junior program. Our goal for the year is to
plan youth events at each of the regional
shows in order for the youth to get to know
each other and learn a little bit more about
the breed.

We will be putting together a list of those
wishing to run prior to our annual meeting
in Duncan. Positions up for election are

Another great event in Duncan will
be the first ADSBS Youth Show, following the Mid-America Sale on Saturday,
April 27th. Late entries are being accepted
until April 20th, and sheep purchased in
the sale by ADSBS junior members can
be late-entered before the show. Entry
information is posted on www.dorper.org.
This year the beginner ADSBS Dorper Breeder Course being held April 25th
and 26th will be open to junior membership. Members between the ages of 13 and
16 will be able to enroll and attend with a
parent who is enrolled in the class. Members between the ages of 17 and 19 will be
able to attend on their own. The cost of the
course for junior members will be covered
by ADSBS. The only expense will be the
cost of the book, which is $40. Please
register NOW using the form included in
the newsletter. Late registrations will be
accepted until April 20th.

Show Rules
1. All exhibitors must be ADSBS junior members in good standing (dues paid for 2013).
2. All sheep shown must be ADSBS registered in the name of the junior member (not in family or farm/ranch name). Sheep
purchased in the Mid-America Dorper Sale in the name of a junior member may be shown. The sale receipt will serve as
the registration paper. Contestants should enter their other classes, including showmanship, in advance, and then late-enter
the purchased animal following the sale.
3. There is no minimum age for exhibitors, but the junior exhibitor must show their animal by controlling the head. Another
junior exhibitor may assist in the ring as a heeler (set hind legs).
4. All sheep must be properly washed and sheared.
5. Sheep may be shown with or without halters in all classes.
6. Entry fee is $3.00 per head on breeding sheep. No entry fee for Showmanship or Best Pair classes. Entry fees should be
sent with entries, with checks payable to ADSBS. Entry deadline is April 20, 2013.
7. All youth show sheep must be penned and checked in by 8 AM on Saturday, April 27. Pens will be available as early as
Wednesday, April 24 for those travelling to attend the breeder courses and Mid-America Sale. Exhibitors are released after
their last class. All sheep must be removed from Stephens County Fair & Expo Center by 10 AM on Sunday, April 28.
8. All sheep brought to the Stephens County Fair & Expo Center grounds must be listed on a proper Interstate Health Certificate, and must carry USDA scrapie identification tags.
9. Breeding Sheep Premiums: 1st: $25, 2nd: $20, 3rd: $15, 4th: $10, 5th: $10, 6th: $10.

Dorper Lamb Culinary Competition

As part of our brand development efforts, The American
Dorper Sheep Breeders Society recently conducted an exercise
that to the best of our knowledge has not been attempted before
by any sheep breed. We partnered with one of the nation’s outstanding Culinary Schools to create recipes for chefs and home
cooks alike specifically for Dorper lamb.

As a breed we often talk about we have a differentiated
product. One that is heavily muscled, even in fat distribution
and mild in flavor and with a carcass that is typically lighter than
that of the majority of American lamb. It was time for the breed
to put our collective money where our mouth is. If we truly are
a quantifiably different product, we should work to understand
these differences, and to promote them.
One of the challenges that we face in how our product is
cooked is that the vast majority of recipes for lamb were developed for lamb that has much different fat, weight and flavor
characteristics. Our carcasses potentially allow us to use different
flavors and cooking methods to showcase our excellent product.
To undertake this demanding project the Breeds partnered
with Schoolcraft College in Livonia, Michigan. Schoolcraft
is recognized as an outstanding training school for chefs. In
fact, of the approximately 60 Certified Master Chefs that are in
the United States (the highest level recognized by the Ameri-

What we developed was
a contest, in which 11
teams of two student chefs
would compete to develop
two recipes with modest
scholarships available to
winners. Each team developed one for restaurant
use and one recipe for
home cooks. In addition,
the students developed
side dishes and sauces to
complement their Dorper
Lamb creations. The students also each submitted
an essay on Dorper lamb and researched the breed and it’s
characteristics. The students then developed their recipes under
the tutelage of Certified Master Chef Kevin Gawronski. The
students put an amazing amount of time into their recipes. As a
producer witnessing this event, I was simply amazed at the passion that they showed for cooking Dorper Lamb. On the second
day, the students then cooked and plated their creations which
were judged under American Culinary Federation standards by
a team of highly decorated chefs and one extremely fortunate
Dorper Breeder.
The students were encouraged to use the whole carcass.
Recipes were developed utilizing each wholesale cut as well as
ground lamb, lamb sweetbreads and kidneys. Over 25 different
recipes were developed that can now be used by the breeds. In
addition, a video of the event was taken that will be used by the
breeds for promotion purposes.
Of course, any recipe is only as good as the product that it
comes from. Hamilton Sheep station provided ten whole carcasses for the competition. They represented the breed exceptionally well. I collected carcass data on the carcasses and they
averaged 45# in hanging weight, with a 2.65 sq. inch average
Loin Eye Area and .12 of an inch of adjusted fat opposite the

loin eye. They also exhibited a bright and very youthful color
of lean and ribs.
The breeds simply got a treasure trove of information from
this exercise that will be used in our future efforts. You can look
forward to these recipes being highlighted in future issues and
being disseminated for use in other ways as well. I look forward
to sharing future developments in our brand development efforts
as they proceed.

The American Dorper Sheep Breeders Society will be expanding our commercial
sale, in an effort to make commercial Dorper and White Dorper rams and ewes
available to the sheep industry.

SALE INFORMATION
This event will include ADSBS registered Fullblood/Purebred
rams born prior to January 1, 2013 and under two years of
age on date of sale. White Dorper rams must test negative for
dermatosparaxis, and all rams must be guaranteed as breeders.
The sale will also include single ADSBS registered Fullblood/
Purebred ewes two years of age and under. White Dorper ewes
must test negative for dermatosparaxis. Minimum weight of 80
lbs per head.
Also included will be pens of commercial ewes sold in groups
of five and ten; all at least 75% Dorper/White Dorper. May be
sold with or without ADSBS registration papers, but all ADSBS
registered percentage White Dorper ewes must test negative
for dermatosparaxis. Minimum weight of 80 lbs per head.
HCC will charge a 5% sales commission, and issue settlement
checks immediately following the sale. HCC will distribute
registration papers to buyers at settlement. HCC will provide
auctioneer, cashier, and two other workers. ADSBS will provide manpower checking in consignments, sifting, setting the
sale order, moving stock during the sale, and loading out.

Each ADSBS Member can nominate up to three individuals, whom you feel the American Dorper Sheep Breeders’
Society will benefit from having that person serve as a member of the ADSBS Board. You may mail your nominations to:

Two members of the same family or business cannot serve on the Board at one time.
