Pruning is more complicated and scientific than one might think. One has to have the ability to see, understand and appreciate what the vine is telling us..."I can take more buds than last year, I need a lot less buds or I can't ripen your crop, I need surgery on that side.., I need a replacement here or there..."That is the kind of reasoning that we have to go through facing each vine...some can do it is seconds others in minutes. Pruning's main reason is to extend the longevity of the vine’s life. Once planted we expect that these vines will be around for 30, 40, 60 years and possibly more. After selecting the right number of spurs or small canes we then rake the shoots, remove them from the fields and burn them, as it helps in getting rid of any fungus. When the weather warms up we can then bend and twist the canes that were left for training or replacements. We will feed the vines with fertilizer as well as mulch. We have a new parcel of 1.5 acres planted last year, it will require a lot of time to help these baby vines take off. We are always looking into new and different approaches in regard to soil, weeds, vine environment management, and more sustainable ways of doing things than the standard way. I always conclude in saying that we hope for a "normal" growing season. Already this year we have started out with a nice award for the Gewurztraminer Silver [88 Points]-San Diego International Wine Competition, San Diego, CA In the Cellars 2pmCooking with Wine Demonstration (Cellar) GRAPEVINE GROWING & PRUNING From The Winemaker "It is a tough job but someone has to do it"...yes, the hard responsibility of a winemaker. It is all about the wine and it is all about the taste! That is what matters in our family business or our passion. It doesn't matter if it is winemaking season, or aging, filtering, or bottling...it is always and all about the taste of the wine. During harvest time, it is your only chance to make the best possible wine. The rest of the year you make sure that it continues to remain as Cooking With wine Demonstrations Saturday ONLY - 11am in the cellar with Winemaker Philippe Coquard Great wine starts in the vineyard. Come and learn how much hard work and skill go into the care of the vines. Proper pruning is a skill which controls the amount of growth and fruit a vine produces each year. We’ll also be offering our DVD, which covers all aspects of planting, growing, pruning and much more. Barrel Tasting Saturday & Sunday - 1pm & 3pm Saturday with Winemaker Philippe Coquard Get a sneak preview of the Marquette as it barrel ages in the cellar. We will discuss the development of the wines from the vineyard through the aging process and into your glass. Come early. Participation is limited for this popular event. Saturday, 2pm Sunday, 11:30am Chef Joe Zankl, from The Port Hotel, Port Washington, WI The Port Hotel Restaurant & Inn located in the heart of downtown Port Washington brings together award winning dining and gracious hospitality in an atmosphere of old world charm. Joe will be sharing a wonderful Bordelaise with Mushrooms recipe, made with our Cabernet Sauvignon, that you can use to "WOW!" your friends. Stephanie Baldwin, Assistant retail manager at Cedar Creek Winery Stephanie has an affinity for all things wine and food. Before starting at the winery, she was the Director of Commissary for Bristol Farms gourmet supermarket in California. Besides working at the winery, Stephanie is also an accomplished farmer raising much of her family's food at their farm. 11:30am is a great time for Brunch and Stephanie will demonstrate a delicious “brunchy” entrée, made with Cedar Creek Rose. Sunday, 2pm Chef Donna Erickson, From Scratch Catering, Cedarburg, WI Three generations of home-made recipes, using only the freshest of ingredients, have laid a foundation for the From Scratch menu. Add to this the modern touch that will attract any palate, any style, any need, and you have the distinction that is uniquely “From Scratch.” Their warm and friendly style is centered on the personal needs of their clients. They want to serve you by putting the “special” into your special occasion. Featuring Cedar Creek Chardonnay, Donna will making Butternut Squash Risotto with Pine Nuts, Balsamic Drizzle & Herb Salad. good or improve during the aging. Some wine will be ready for bottling while young, others will need more time to mature and develop into bigger, grander, smoother wines. That is a choice of the winery and the winemaker. Our three barrel aged reds are "settling" well into the barrels. Settling is that time that they need after fermentation and freshly put into the barrels, they need some time to "clean" up, the heavy sediment will migrate to the bottom of the barrels...Then in the spring the wine starts to age, and later on it matures. The best time to taste the wine in the barrels, to see more precisely what is the potential for that wine, will be in the spring...which we will do during the Open house... Lucky us! It’s all about the TASTE! 25 YEARS...where did time go...and so many changes... One of the first things we added was the conveyor belt to stock wine upstairs. Walking each case up the steps at 40 lbs each gets old. We moved out a few of the monstrously large oak barrels to make room for more wine & equipment, but we can't get rid of them all. They are a part of who we are. We have added and removed several tanks, refurbished some and experimented with different barrel makers. The ozone machine has been a great way to for us to clean & sanitize without so many of the harsh chemicals. Changes always in the direction of improving the quality... From corks to screwcaps...we’ve tried so many different closures: natural corks, middle of the road grades and plastic. We had issues with cork dust, composite corks and plastic ones were the worst yet! I’m very happy and don't foresee any changes with our screwcap and our top of the line natural corks (expensive but well worth it). All our barrel aged wines will be closed with a natural cork, it is in respect of tradition and will allow the wine to continue to age gracefully. The screwcap is ultimately the best for the fresh and fruity wines, it preserves their freshness, no loss of flavor. So many new and exciting new wines...and new names: old favorites renamed from Vidal to La Belle Vie, it has to be one of the top two most awarded Vidals in the Nation! Same with Old Mill Red becoming Bon Vivant...an awesome young fresh red for summertime around the grill. The new very aromatic Gewurztraminer...can't get more German style than that! A Port Rose', fortified with grape brandy, Estate Foch and Edelweiss grapes, Ports are traditionally red but to keep things "vibrant" we created a Port Rose'. We are about to introduce Cranberry Blush and Pinot Grigio in mini 187 ml, single serving size which will be great for picnics, boating, and relaxing. Always looking ahead...thinking new wines, new products but always with the highest quality approach. Looking forward to the next 25 YEARS... Philippe
