Spring is right around the corner and the hard part of winter is over. At least if we get walloped now, we can plan for it to melt soon.
2016 is the 26th Year of Cedar Creek Winery!
Join us on the weekend of March 19 & 20 to celebrate this new year of wine with family and friends.
Fingers crossed- the weather will be turning towards spring. Let’s enjoy a bottle of better weather! Many things have
changed over the years but the wine remains wonderful. Share the weekend and learn about how we do what we do.
Take in some of the cooking demonstrations. Have your picture taken in the big barrel, and taste wine while
it is still aging, right out of the barrel along with winemaker Philippe Coquard (Saturday).

GRAPEVINE
GROWING & PRUNING
We are always studying and
learning, working on more
sustainable approaches to grape
growing. There are a few new things in the
making. I will share with everyone in due time.
Pruning will set the fruit load and the location on the vine. Therefore, pruning
has a direct impact on quality. The quality of the wine starts in the vineyard
and this is the very first step each year for us to start the vines on the right track.
Nature will offer many other tricks...some great and some not so great.
Tanks are being emptied. Wine is being filtered
and a lot of bottling is happening this time of
the year. We have bottled the 2015 La Belle Vie.
Lancôme and gorgeous Julia Roberts copied us in
naming one of their newest perfumes "La vie est
belle", because our wine is so great and awesome.
It is nice to be in this company.
In 2016 we will be getting ready a 1.5 acre parcel of land at the Marx vineyard.
It will be planted in Brianna for use in our Brandy made in our Wollersheim
Distillery. Brianna is one of the cold climate grapes, fairly new but very
trustworthy. This parcel is steep enough. It will be the last "steep" field that we will
plant. Going forward we want to stick to milder slopes so we can pick with our new
harvester. We are so happy to have the new machinery. It was a God-send, making
harvesting so much easier! Two people can pick one acre per hour...we can pick
what we want... when we want... as much as we need...and when the fruit is
Cooking With wine Demonstrations

Great wine starts in the vineyard. Come and
learn how much hard work and skill go into
the care of the vines. Proper pruning is a
skill which controls the amount of growth
and fruit a vine produces each year. We’ll also be offering our DVD, which covers
all aspects of planting, growing, pruning and much more.

Get a sneak preview of the Marquette as it
barrel ages in the cellar. We will discuss the
development of the wines from the vineyard
through the aging process and into your
glass. Come early. Participation is limited
for this popular event.

Chef Michael Jozwiak,
from The Stilt House,
Cedarburg, WI
Michael Jozwiak, Stilt House Chef,
started cooking when he was 8 years
old. He attended The Art Institute
of Wisconsin where he earned his
Associates Degree in Culinary Arts.
He has worked with The Food Network
when cooking for a Music & Food
Festival in the Chicago area, Ravinia.
Chef Mike, enjoys being creative and
likes to take flavors that generally might
seem odd together and combine them
into something people will enjoy. He
loves working at the Stilt House where
he can create specials that are fun,
creative and made with local fresh
ingredients.
The Stilt House is located on
at perfection.
Pruning has started in the vineyard. It will take a
good 6 to 7 weeks with 3 to 6 people to complete.
We do not expect any major damage due to
cold. Yes it has been cold for a couple stretches but not for very long. Every year we
anticipate a 10 to 15% net loss. Therefore, while pruning we always leave a few extra
buds. We might leave 5 to 10 extra buds per vine. If all buds survive we can remove
the extras after bud break.
After pruning is completed we then remove the cuttings from the field. We start
applying the fertilizers and do trunk and cane training. In no time we have leaves
on the vines. That is a beautiful time of the year. Let's hope for a "normal"
growing season.

Stephanie Baldwin,
Assistant retail manager
at Cedar Creek Winery
Stephanie has an affinity for all things
wine and food. Before starting at
the winery, she was the Director of
Commissary for Bristol Farms gourmet
supermarket in California. Besides
working at the winery, Stephanie is
also an accomplished farmer raising
much of her family's food at their farm.
11:30am is a great time for Brunch and
Stephanie will demonstrate a delicious
“brunchy” entrée, made with Cedar
Creek Rose.

From The Anvil Pub & Grille, Cedarburg, WI
Nestled in the Cedar Creek Settlement’s
restored 19th century blacksmith’s shop,
the charmingly authentic Anvil Pub &
Grille is a Cedarburg favorite for casual
dining in a rustic atmosphere. The
Anvil serves lunch and dinner daily. It
specializes in Forge sandwiches (freshly
baked sandwiches in our Stone Hearth
Oven), steak burgers, salads, steaks,
chicken and seafood. The full bar serves
specialty beers, wines, martini’s and a
Bloody Mary bar during Sunday brunch.
The creek side patio offers seasonal dining
overlooking Cedar Creek Waterfall.
In the Cellars
We recently bottled the Cranberry Blush with its
beautiful iridescent translucent red color. Award
winning Pinot Grigio was also bottled, and all that
in just a week - at the rate of 23,000 bottles a day.
Cabernet, Syrah and Marquette are aging
gracefully. During the Open House, you will be
fortunate to taste our 2015 vintage Marquette
out of the barrels- a great wine. I tasted a lot of
Marquette at the Cold Climate Conference in
Minnesota this past weekend. Out of a dozen. I
found only a few that deserved praise.
We have been distilling away. Apple Eau de Vie is
a clear fruity spirit and when it goes into barrels,
it becomes aged Apple Brandy. We are about to
bottle more aged Apple Brandy...as it sold really
fast! Gin and Absinthe are doing very well. The
shining star (when you enjoy too much) is still
our Coquard Brandy, our regional "Cognac".
As you know, Cognac is a region with specific
requirements out of respect for quality... white
grapes... picked very early...no sulfites... distilled
before March of the following year... grown on a
limestone base.
We have created our own Wisconsin Cognac-like
spirit using native Wisconsin white grapes grown
nearby on limestone soil, picked early at 16 brix,
and distilled right away. It then goes 2 years in our
private custom toasted Wisconsin oak barrels and
it tastes soooooo GOOOOD!
We are working on many other products and
projects such as rye whiskeys, yellow corn whiskeys,
as well as colored corn whiskeys, bourbon and
liquors. It's a fun and tasteful venture.
