FOOD WITH MIGUEL MAESTRE SKILLET COOKIE To spend the day at one of Australia’s most famous chocolate and confectionary creators is every child’s ‘Willie Wonka’ dream. Miguel invites six lucky children along to the Darrell Lea factory to teach them how to bake a giant cookie in a skillet! FAST FACTS • A Skillet cookie is a giant cookie baked in a cast iron pan (skillet) in the oven. The skillet cookie should be crispy on the outside and gooey in the middle. • Darrell Lea began its humble days in1927, originally selling sweets from a Push cart. • Darrell Lea’s first production factory was situated under the arch of the Sydney Harbour Bridge. • • • • • • The founding Lea family named the business after the youngest son. Darrell Lea currently produces 120 products and sells Australian wide and internationally. The most famous Darrell Lea products are the soft eating liquorice and Rocklea Road (Rocky Road). Darrell Lea liquorice was included as a dessert ingredient at Princess Mary of Denmark’s wedding. The retail stores were closed in 2012 but they continue to sell wholesale to various outlets throughout Australia and export overseas. Original owners, the Lea family sold Darrell Lea in 2012. In 1927 they began selling their sweets from a pushcart on the streets of Sydney. The Lea family were hands-on with developing their brand and creating their sugary delights. Their most famous products are the iconic soft eating liquorice and Rocklea Rocky (rocky road). Today, Darrell Lea produces over 100 products. In 2012 the company was bought by a family owned business who set about restructuring it and taking it in a new direction. The new owners closed all the retail stores, moved the business to a new factory and retail outlet in Ingleburn. Darrell Lea products are now sold in various supermarkets, gas stations and pharmacies throughout Australia. CHOC CHIP SKILLET COOKIE Prep: 10 mins Cook: 20 mins Makes: 1 cookie Ingredients 50 g caster sugar 110g brown sugar 125 g butter, softened 105g peanut butter 1 egg room temp 1 tsp vanilla extract 180 g plain flour 1/2 tsp baking soda 60g dark Choc chip 60g milk choc chip Method 1. Preheat the oven to 180°C. 2. Use a spatula to cream the sugar, brown sugar, butter and peanut butter together. Add the egg and vanilla and beat for 2 minutes until well combined. Fold in the flour, baking powder, and most of the chocolate chips till dough consistency 3. Spoon the mixture into the skillet and spread roughly pressing with your fingertips Press the remaining chocolate chips into the dough on top and bake for 20-25 minutes until golden and crisp on the outside but still a little soft in the centre. 4.
