THE CHEF
After working in Italy and abroad for leading
hotel companies, Cristian Mometti developed
his personal line of cooking, obtaining various
recognitions, including the Ist Prize at the ‘Cook
of the Year 2009’ competition in Erba.
Today, he is particularly recognised for being
the standard-bearer of Mason jar cookery,
a specific cooking technique around which
he has produced the book of the same name,
classified first in Italy and fourth in the world
at the Gourmand World Cookbook Awards
competition, in the Best First Cookbook category.
The cardinal points of his research are - essence,
perfume, colour and texture.
MISSION
Every day, our cooks successfully carry out a very difficult mission - to enhance but,
above all, respect, the extraordinary quality of the raw materials, which only comes
from suppliers who we know are searching continuously for the best.
Some examples: Fassona only of certified Piedmontese origin, suckling pigs fed by
mothers bred in the wild in Veneto and Friuli Venezia Giulia, with a passion of
olden days. To bring the taste of the sea to the table, the fresh fish only comes from
Caorle and Upper Croatia. The sword fish is strictly Sicilian! An excellent salted
cod can’t be farmed so that’s why we only choose the best of the Norwegian seas.
Our cheese is prepared by a skilful refiner, some specialities mature their flavours
in a natural cave and a salt cave. There are cold cuts of Cinta Senese black pig,
bred in freedom in the hills of the Treviso area, prepared with ancient skill by a
master pork-butcher.
Fruit and vegetables comes from small local producers and are only offered
following criteria of a seasonal nature.
Fresh and filled pasta is homemade; that of durum wheat and whole wheat pasta,
strictly organic, only contain Italian flour and are subjected to a long drying process,
in accordance with the centuries-old tradition of the leading Italian pasta
manufacturer.
The bread is produced with sourdough and organic flour. Small loaves, focaccia and
special grissini, traditional, with saffron and sepia, are prepared in the kitchen by
the skilful hands of our chefs.
The goodness of a dinner is smelt a long time before tasting it.

pure and digestible. Sourced from a high Trento spring (1,134 m meters
above sea level), at the heart of the Adamello Brenta Nature Park.
It is not by chance that it is the choice of the AIS (Italian Professional
Wine Stewards Association) and the most important Italian restaurateurs.

ACQUA PANNA NATURAL MINERAL WATER
Trace minerals, lightly mineralized, ideal for newborns,
highly digestible. It is sourced approximately 900 meters above sea level
from an uncontaminated area in Mugello. Dry residue 144 mg/l.
ACQUA SAN PELLEGRINO SPARKLING MINERAL WATER
Trace minerals, moderately mineralized, fine taste and light perlage,
rich in magnesium, promotes diuresis. Sourced from the pure springs
of Pellegrino Terme (358 meters above sea level), on the tops of the Alps.
Dry residue 1,109 mg/l.
ACQUA FERRARELLE SPARKLING NATURAL WATER
Naturally sparkling, moderately mineralized, sodium bicarbonate,
rich with mineral salts, with pronounced diuretic properties.
Taken from the green countryside of Riardo in Caserta. Dry residue 1,390 mg/l.
ACQUA FIUGGI NATURAL MINERAL WATER
Trace minerals, lightly mineralized, with diuretic and therapeutic properties
for liver functions. This beneficial water is sourced in Lazio,
from the tops of the Mountains of the Hernici. Dry residue 123 mg/l.
