Tuesday, July 19, 2011 FOOD www.qatar-tribune.com 35 Penne carbonara with fava beans, peas and pecorino Food guide INGRIDENTS: 1 3/4 pounds young fava beans in their pods (about 1 1/2 cups shelled), salt and pepper, 3/4 pound dried penne, 4 large egg yolks, 2 1/2 ounces pecorino, grated (about 1 cup), plus extra for serving, 1 1/2 cups fresh or frozen shelled peas 2 tablespoons unsalted butter, a small handful of chives, finely snipped or sliced. Method: First, find a willing assistant to help peel the favas. Bring 6 cups water to a boil in a large pot. Add the peeled favas and blanch for about 1 minute, then scoop them out (reserving the water) and put them into a bowl of cold water. Drain and slip them out of their whitish skins to reveal the emerald-green bean. Bring the water back to a rolling boil. Add 1 tablespoon salt and the penne, stirring occasionally to keep it from sticking. Meanwhile, in a small bowl mix together the egg yolks, pecorino and a little salt and pepper. When the pasta is almost done (about 2 minutes less than the time suggested on the package), add the favas and peas to the pot. Cook for 1 to 2 minutes, until the pasta is al dente. Reserve 1/2 cup of the cooking water. Drain the penne and vegetables, and return them to the pot. Add the butter and stir well. Add the egg yolk mixture and chives, tossing gently and adding a few tablespoons of the cooking water to form a silky sauce that clings to the penne. Adjust the seasoning, and serve with a wedge of pecorino for grating. Have you tried Cooking with vinegar? Preheat oven to 400 degrees Fahrenheit. In a large skillet, heat 1 tablespoon oil over high. Season chicken with salt and pepper. Cook chicken, skin side down, until browned and crisp, about 4 minutes. Flip and cook 2 minutes. Transfer to a rimmed baking sheet, skin side up. Bake until chicken is cooked through, about 20 minutes. 2. Meanwhile, wipe out skillet and heat 1 tablespoon oil over medium-high. Add onion and cook until translucent, about 5 minutes. Add vinegar, broth and currants; bring to a boil. Reduce to a simmer and cook until liquid reduces by threequarters, about 12 minutes. Stir in almonds, and orange segments and juice. Spoon sauce over chicken and serve. Sweet-and-sour green cabbage with beef bacon (Serves 4) Active time: 30 minutes. Total time: 30 minutes. 1 teaspoon vegetable oil 4 slices beef bacon, cut crosswise into 1/2-inch pieces 1 medium yellow onion, thinly sliced 1 medium head green cabbage (3 pounds), cored, cut into 1-inch pieces 1/4 cup cider or rice vinegar 1/4 cup sugar 3 tablespoons soy sauce In a large Dutch oven or heavy pot, heat oil over medium-high and cook bacon, stirring, until browned and crisp, about 6 minutes. With a slotted spoon, transfer bacon to a plate. Add onion and cabbage to pot and cook, stirring, until cabbage is wilted, about 10 minutes. Add vinegar, sugar and soy sauce and cook until cabbage is crisp-tender, about 10 minutes. Stir in bacon and serve. (To store, let cool, then refrigerate in an air- tight container, up to 1 week.) Nutritional information per serving: 260 calories; 11 grams fat (4 grams saturated fat); 8 grams protein; 31 grams carbohydrates; 7 grams fibre Chicken escabeche (Serves 4) Active time: 30 minutes. Total time: 50 minutes. Popular in Spain and France, escabeche loosely translates as “pickle,” and is commonly made with fish. Traditionally, the dish is marinated overnight and served cold the next day. This flavourpacked quicker version is immediately gratifying. 2 tablespoons extravirgin olive oil 1 whole chicken (3 1/2 to 4 pounds), quartered coarse salt and ground pepper Nutritional information per serving: 622 calories; 29 grams fat (4 grams saturated fat); 59 grams protein; 30 grams carbohydrates; 6 grams fibre Cider vinaigrette In a small bowl, whisk together 1 tablespoon each grainy mustard and sugar, 2 tablespoons cider vinegar and 1/4 cup extra-virgin olive oil. Season with coarse salt and ground pepper. Honey-balsamic vinaigrette In a small bowl, whisk together 2 tablespoons balsamic vinegar, 1 tablespoon honey, 1 teaspoon Dijon mustard and 1/4 cup extra-virgin olive oil. Season with coarse salt and ground pepper. Unopened vinegar will keep indefinitely. Lifestyle guide 1. DILEMMA: To hand-wash or dry-clean your delicates. Manufacturers are required to list only one safe cleaning method on the label, so while dry cleaning may give the best results, you may have other alternatives. But keep in mind that fabrics or linings may shrink, and colours and trims can bleed when your garment hits the water. Factor in the item’s age and wear, use cold water, and always spot-test before dipping, and never, ever wet-wash silk, wool, leather, suede, velvet with a label that says “dry-clean only,” or garments with special trims or features that could be damaged by washing. 2. Dilemma: Pricey cashmere that pills easily. Unfortunately, the price you pay for a sweater and whether or not it will pill are not directly related. Even expensive garments pill if the yarns are poor quality and made from staple (short) fibres that break off and ball up, instead of filament (long) ones. To minimise pilling, wash garments inside out (if permitted by the care tag) and gently remove pills with a sweater shaver, or even a new kitchen scrub sponge. Skip sticky tape rollers, which can make the problem worse. 3. Dilemma: A food drip on dry-clean-only fabric. Relax — there’s no need to detour to the dry cleaner on your way home from the restaurant. Keep a dry-clean-only stain remover, like the Afta Pen, handy to tackle spots when you notice them. That said, it’s still best not to wait too long before you take the item in. Most dry cleaners can successfully remove a stain that’s two to three days old. But past a week, even the best dry cleaners may not be able to completely erase the stain. Rainwater’s city adventure The 400-square-foot garden, a narrow, undulating form that stretches 80 feet across the courtyard tucked behind university buildings, is filled with plants that might grow along the banks of a forest stream ANNE RAVER NYT SYNDICATE VER wonder what happens to a rain garden when temperatures outside creep toward 100 degrees and it hasn’t rained in weeks? Water-loving plants wilt, of course. Especially if they are growing in just 8 inches of soil, next to a dry bed of river rocks in a concrete courtyard at Teachers College of Columbia University. “They don’t look fantastic, that’s for sure,” said Marni Majorelle, 31, the founder of Alive Structures, the Brooklyn garden design firm that created this garden and specialises in turning patches of concrete into natural (or seemingly natural) habitats. “We do have to water during times like this.” But that water doesn’t tap the city’s supply; it runs from a 300-gallon rain barrel that collects water off the roof. Majorelle’s husband, Eric Majorelle, 29, who manages construction of the firm’s projects, set up the barrel and designed a catchment system for the downspout that pours into the rain garden. The 400-square-foot garden, a narrow, undulating form that stretches 80 feet across an old interior courtyard tucked behind university buildings, is filled with plants you might see growing along the banks of a forest stream. Juncus (also known as rush) and equisetum (or horsetail), ancient plants that love to have their feet in water; ferns and swamp azalea, a fragrant native with white clovelike flowers that attract hummingbirds and butterflies; northern blue flag irises, blue-eyed grass and, here and there, small shrubs of mountain laurel, a woodland plant that thrives in damp soil, but needs good drainage. “I elevated the mountain laurels, with lots of gravelly mix around the root balls, so they wouldn’t sit in water,” Marni Majorelle said. Three days later, when a welcome storm sent rain cascading through the downspout that funnels water into this garden, E Majorelle and Colin Schumacher, 29, a special-education teacher at the Earth School (Public School 364) in Manhattan, took off their shoes and balanced over the rocks like children let loose in the country. By Schumacher’s calculations, about 30,000 gallons of rainwater pass through this garden annually, most of it absorbed by plant roots. The rest flows into drains in the courtyard, which is also the flat roof of the college’s facilities building. “So we’re slowing the water down, and cleansing it, rather than sending it into storm sewers,” said Schumacher, who graduated last year from Teachers College with a degree in elementary education. He started a vegetable garden with preschoolers in this same courtyard a few years ago, then landed a $10,000 grant from Brita with his proposal to build a rain garden here. “I wanted to do a green roof, but the slopes are too steep,” Schumacher said, nodding toward the peaked roofs of the Gothic-style buildings surrounding the space. College administrators approved the plan and contributed another $15,000, to repair drains under the courtyard and help pay for the garden, as well as to pay Alive Structures to replace the sickly potted yews with natives like dogwood and mountain laurel and to plant dwarf white pines along the street. Certainly he and Marni Majorelle agree when it comes to bringing back bits and pieces of Mannahatta, that deep forest that covered the island before Henry Hudson came up the river 400 years ago. As she said, “A lot of people are talking about their carbon footprint, but I say, ‘What about your concrete footprint?’ Because that really is one of the essential problems with the urban environment, which is 80 percent concrete.” Schumacher and his students at the Earth School located their school on the Mannahatta map (welikia.org/explore/mannahatta-map) and learned that it was once a swamp. Perhaps some of its plants are now growing here. “It’s very exciting to imagine Manhattan when there were hills and pine forests and marshes,” Majorelle said. “That’s what’s cool about this project: it feels like a river.” They both are cognisant of the connection between native plants, many of which are endangered, and the wildlife they sustain. Majorelle, whose company has installed 15 green roofs, is trying to spread native plants across as many roofs and concrete courtyards as possible. “I put 20 plants of Asclepias tuberosa, or butterfly weed, on the green roof of our office, which is 8 stories high, and the monarch caterpillars found them,” she said. She inherited her love of plants from her mother, Lola Horwitz, a garden designer who tended their backyard in Park Slope, which had a black cherry tree. “I used to sell the cherries that I couldn’t eat,” she said. Though she went off to the country to earn her bachelor’s degree (Bennington College, in Vermont), she missed New York City. So when she graduated she went to work for Paul Mankiewicz, at the Gaia Institute. “Paul was a big influence on me,” she said. “I learned a lot about wetlands and green roofs and native plants.” At the same time, she enrolled in a two-year program at Columbia and earned a certificate in biology conservation. In 2007, she started her own business. “Nonprofits are very important,” she said, but “I didn’t want to apply for grants, I wanted to be out there doing the job.” Then, on a Brooklyn rooftop, where a friend was showing the film The Life Aquatic, she met Eric Majorelle, an entrepreneur who was born in Manhattan and raised in Paris (and whose family created the famous Majorelle Garden in Marrakesh). They were married in 2009. When the economy tanked, so did Eric Majorelle’s film and arts studio, East Coast Aliens, so he and his new wife decided to work together. “I was hesitant because I thought, ‘Oh, we’ll always be fighting,’ and we did fight at first, until we figured out how to work together,” Marni Majorelle said. Having a great crew helps, she said. “People who are comfortable with plants, and also strong. Sarah recently wrapped production on the upcoming comedy, I Don’t Know How She Does It, and the fashion-forward actress revealed her nerves had gotten the best of her “by Wednesday of the first week” of filming. “I was sobbing, I was apologising,” she told the magazine “I was feeling so awful and ashamed, like I had let the director down. If only they would not tell me when the camera was running, I would be OK. “I’m like that two weeks into every movie,” she added. I’m really proud of them!” While Kevin’s marriage seems to be a grand success, and middle brother Joe is embarking on a promising solo career, the Jonas family faced a difficult period five years ago when Nick - who was 13 at the time — was diagnosed with Type 1 Diabetes. “That was a very dark day,” Denise - who appeared on the show to promote the Once Upon A Time Contest as a spokesperson for Lilly Diabetes and Disney Online recalled, of when her family learned of Nick’s condition. “We didn’t know what we were going to do. We just were overwhelmed. We did not have education about Type 1 Diabetes at all — I didn’t know what it was about.” The mother of four said her family immediately sought to use their trials and tribulations with the disease to help others who may be dealing with the same lack of knowledge and treatment solutions. “We quickly learned a lot of medical things, but we also turned it around rather fast to make a difference,” she said. “It’s really been our goal as a family to inspire, encourage, and help people understand day-to-day.” As for the youngest of the Jonas brothers, Frankie, 10, Denise said he plans to follow in his brothers’ showbiz footsteps.
