The Term “Gluten-Free” varies from country to country. In Canada
it means the product does not contain any wheat, including
spelt and kamut, or oats, barley, rye, triticale or any ingredients
derived from those grains.

Gluten is a protein found in wheat, rye, triticale, barley. In the
case of wheat, gliadin has been isolated as the toxic fraction. It
is the gluten in the flour that helps bread and other baked goods
bind and prevents crumbling. This feature has made gluten widely
used in the production of many processed and packaged foods.
WHY IS GLUTEN-FREE IMPORTANT?
In Canada it is thought about 1 in 133 people have celiac disease. Celiac
disease is a medical condition in which the absorptive surface of the
small intestine is damaged by a substance called gluten. This results in
an inability of the body to absorb nutrients: protein, fat, carbohydrates,
vitamins and minerals, which are necessary for good health.

WHAT DO NATURAL & ORGANIC ACTUALLY MEAN?
“Natural” is a widely used term with various meanings, but is sometimes
misleading since all foods come from natural sources. No legal definition
exists, but “natural” typically refers to foods that are minimally
processed and contain no hormones, antibiotics, artificial sweeteners,
food colours, or flavourings. Natural food is NOT a synonym for organic
food.
In an organic nutshell, “organic” refers to food produced without the
use of chemical fertilizers, pesticides, or other artificial agents. The
term was coined in 1939 by Lord Northbourne, a British agriculturalist
and author, to describe a holistic, ecologically balanced approach to
farming. Under organic production, the use of conventional non-organic
pesticides, insecticides, and herbicides is greatly restricted and saved
as a last resort. When looking for organic foods, organic certification
is your only guarantee that organic producers are practicing what they

Vancouver Island Grown Wheat
Vancouver Island Farmers used to grow much of their own grain in the
early 1900's. In the last 50 years the grain farmer as well as the whole
infrastructure that suppoered the local grain growing industry has all but
disappeared. In the last 5 years there has been renewed interest in local
food production.
This is driven by three main areas:
The first is food security. What would happen if the ferries were unable
to deliver food? Could we feed ourselves?
The second is a desire for people to be increasingly connected with their
foo; to have an understanding where ti comes from and a trust in those
that grow and produce it.
The third is the concept tof food miles and the consciousness of eating
food that has traveled less distance from farm to plate.
Hard Red Spring Wheat grown under organic
conditions on Sloping Hill Farm near Qualicum
Beach. Sloping Hill Farm became the first certified
organic grain farm on Vancouver Island in late
2013. The 2014 harvest will be certified organic.
We have a few bags left of the 2013 crop, that
pre-dates the certification, but was unsprayed etc.
