The holiday season is a time for togetherness and family traditions; it just so happens that our
family’s traditions are centered around the candy kitchen.
More than 80 years ago, my grandfather developed the family toffee recipe that we still use today.
As a young girl I can remember “Granddad” Chet busy making toffee in the kitchen while his sister,
Aunt Kato, lovingly packed the boxes of toffee for our family and friends around the world.

CRUST
• 3 ½ cup crushed vanilla wafer cookie
• ¼ cup melted butter
Preheat oven to 350 degrees. Melt butter in saucepan; add to crushed vanilla wafer cookies, stir until wafers hold
together. Press into greased springform pan. Toast in oven until lightly browned.
FILLING
• 12 oz crushed Enstrom’s Toffee (not crumbs)
• 16 oz regular cream cheese, softened
• 2 cup granulated sugar
• 3 tsp cinnamon
• 5 tsp all-purpose flour
• 6 eggs
• 2 egg yolks
• ¾ cup sour cream
• ¾ cup heavy cream
• 1 ½ tsp almond extract
• 1 ½ tsp vanilla extract
In mixer, using the paddle attachment, beat cream cheese, sugar, cinnamon and flour until light and fluffy (3-5
minutes). Add eggs and egg yolks, one at a time. At low speed, beat in the sour cream, heavy cream and extracts. Fold
in a small amount of almond toffee. Pour into toasted crust. Place pan in a water bath and bake at 350 degrees for 80
minutes or until center barely wobbles. Add the remaining almond toffee. Cool completely before serving.
