As members of the community of Nantucket, we are pleased to support the Nantucket Historical Association, a group that reminds all of us of our heritage and the uniqueness of Nantucket. This year, we are honored by the participation of our friends Cyril Brun, Winemaker of Veuve Clicquot Ponsardin, and Manuel Louzada, Director and Winemaker of Numanthia, and by the presence of our Luminary of the Year, Laurent Drouhin of Maison Joseph Drouhin. We also want to thank Executive Chef Bernard Guillas of the The Marine Room and Executive Chef Frederick Bisaillon of the Brant Point Grill and his entire staff for preparing this truly amazing menu. The dinner will be the marquee event of this year’s festival, featuring the culinary expertise of Chef Bernard Guillas of The Marine Room of La Jolla, California, and Chef Frederick Bisaillon of Brant Point Grill of Nantucket, and the critically acclaimed wines of Veuve Clicquot and Numanthtia. We are also excited that Laurent Drouhin of Maison Joseph Drouhin, the 2012 recipient of the Nantucket Wine Festival Luminary of the Year Award, will be with us this evening. We hope that you and your families are able to visit some of the Nantucket Historical Association’s twenty-two historic properties and sites, including the Whaling Museum. We are proud to feature Emmy award-winning filmmaker Ric Burns’ film Nantucket at the museum every day. Nantucket provides both a transformative gateway experience for island visitors and a reminder for island residents of the unique character of their island home. Cover Art: Kerry Hallam - 2012 4 Cyril Brun Manuel Louzada Laurent Drouhin Cyril Brun was born in the village of Aÿ, located in the heart of the Champagne region, in 1969. In 2000, he joined Veuve Clicquot Ponsardin as winemaker in the wine communication team. He works in the team of Dominique Demarville, Veuve Clicquot Cellar Master, to create the finest quality blends for each of the Veuve Clicquot Champagnes. He is also in charge of vinifying the Bouzy Pinot Noir used in Veuve Clicquot’s Rosé Champagne. He was promoted to Wine Communication Manager at the beginning of 2006. Manuel Louzada is Estate Director at Bodega Numanthia in Spain. Today, within Estates & Wines, Manuel coordinates global transversal environmental policy. For the last three years, he has been responsible for the wine quality standards of different wineries around the world (California, Australia, Brazil, and Argentina) for Moët Hennessy Wines & Estates. Manuel Louzada is Estate Director of Bodega Numanthia. He followed his father to the vineyards at a tender age, rollerskated in the cellars and played in the cuverie. His fondest memory (à la Marcel Proust) is the smell of the macerating must. Today, Laurent is the Maison Joseph Drouhin ambassador to the United States and the Caribbean. Bernard Guillas Maître Cuisiniers de France and award-winning Chef Bernard Guillas joined La Jolla Beach & Tennis Club, Inc., as executive chef of The Marine Room in June 1994. “When I lived in France, the smell of the sea and the lure of its bounty were constantly part of our table,” Guillas recalls. Guillas, no stranger to classic tradition, insists, “a good cook is a sorcerer who dispenses happiness on a plate.” Frederick Bisaillon Frederick Bisaillon is Executive Chef of the White Elephant’s Brant Point Grill. This is his second stint on Nantucket; he also worked at the White Elephant from 1995 to 1997. Chef Bisaillon highlights the flavors of New England through seasonal and locally sourced produce and seafood. He joined Sotheby’s London in 1990 and was responsible for launching Sotheby’s first wine sales in New York in 1994, moving to the United States in 1995, when he was appointed Head of Sotheby’s North American Wine Department.
