METHOD
1. Pour cream into medium saucepan over medium-high heat. Heat until hot,
but not boiling.
2. Whisk 1 oz. Cheddar cheese into cream until melted.
3. Stir in mashed potatoes.
4. Add 1 oz. cilantro and cumin.
5. Add salt and pepper to taste. Stir to combine.
6. Ladle into bowl. Garnish with refried beans, tortilla strips, remaining
shredded Cheddar cheese and cilantro. Serve hot.

6. Cook 3 minutes, or until browned. Flip and cook second side about
3 minutes, until browned.
7. Arrange two cakes on serving plate. Serve hot.

1. Preheat oven to 350ºF.
2. Cover the bottom of hotel pan with 2 K3 cup cream.
3. Shingle ¼ of potato slices over cream, enough to cover bottom completely.
4. Salt and pepper potatoes, then drizzle 2 K3 cup heavy cream over potatoes.
5. Evenly sprinkle 2 K3 cup cheese over potatoes.
6. Sprinkle ½ cup cooked rice over potato mixture.
7. Repeat this process for three more layers.
