Recipe Program In the News MULTIVITAMIN USE ASSOCIATED WITH LOWER HEART ATTACK RISK IN WOMEN An article published online on September 22, 2010 in the American Journal of Clinical Nutrition reports an association between multivitamin use and a reduced risk of myocardial infarction (MI or heart attack) in older women. The study included 2,262 women with a history of cardiovascular disease and 31,671 women with no history of the disease who participated in the Swedish Mammography Cohort established between 1987 and 1990. Among women who had no history of the disease, those who reported using a multinutrient supplement had a 27 percent lower adjusted risk of heart attack than those who were not supplement users. Using a multivitamin along with other supplements was associated with a 30 percent lower risk, and use for at least five years was linked to a 41 percent lower risk of myocardial infarction compared to nonusers. SAM SEZ Festive Holiday Wine Selections -Sam Lange, Pilgrim’s Wine Steward Having trouble choosing a wine to accompany the Holiday feast? Consider this: The bright, fruity flavors and crisp-tart acidity of Cranberry Sauce always seems to balance the wildly disparate flavors of a traditional Turkey dinner. Similarly, bright and fruity wines with soft tannins and good acidity are the perfect choice. Pinot Noir is traditionally the red wine of choice to accompany turkey dinner, and we naturally have our favorites (such as Elk Cove, OR and Decoy, CA). However, if you are of the mind to try something unique, consider the juicily delicious Moulin-á-Vent, Vieilles Vignes from Diochon. This first-rate Cru Beaujolais has plenty of bright cherry and cranberry fruit along with autumnal, forest floor nuances. From Italy, we like the Cerasuolo di Vittoria from Planeta. This Sicilian blend of Nero d’Avola and Frappato has bright fresh fruit and hints of fig. We always recommend a nice dry Pinot Gris (Pend d’Oreille Winery’s lovely new release) or a dry Riesling (Pacific Rim, Washington) for the holidays. But recently, we are enamored with Austrian Grüner Veltliners. Try the stunning Loimer, Kamptal Vineyard with its brilliantly focused fruit, lush texture and crisp, clean finish. Rosé wines can have darker flavors than a white and can stand up to assertive flavors while maintaining a refreshing balance. Try the Viña Aljibes from Spain. This Syrah Rosé is dry, with spicy, berry flavors and a lush mouth-feel reminiscent of a graceful red wine. If you find yourself serving a crowd, try mixing things up a bit with an assortment of wines. Let your guests experiment with different selections and decide for themselves what they prefer. Like organic food, it is wine produced without using chemical herbicides, insecticides, fungicides, synthetic fertilizers or preservatives, including added sulfites. The USDA’s Organic Food Production Act of 1990 also limits naturally-occurring sulfites to 10ppm. SO, WHAT ARE SULFITES? Sulfites are natural byproducts of the fermentation process, but most commercial vineyards also add sulphur dioxide as a preservative and anti-bacterial agent. WHAT’S THE BIG DEAL? According to the FDA, one out of every hundred people is sulfite-sensitive, experiencing allergic symptoms such as headaches, hives, swelling of the tongue and throat, shortness of breath, flushing and terrible “hangovers”. A person can also develop sulfite sensitivity at any point in life. CONVENTIONALLYPRODUCED TURKEYS The initial concern with the conventional production of turkeys is the treatment of the birds. Today’s mass-produced turkeys are kept in overcrowded, often immobile conditions and fed unnatural diets, resulting in non-developed feet and legs, disease, death and serious disorders. As a result, most standard turkeys receive a constant, low-level dose of FDA-approved antibiotics. This creates a vicious human cycle: bacteria in our bodies build up a resistance to these antibodies, causing an increase in human disease and the need to develop new antibiotics. Standard US turkey producers also give their birds pesticide-saturated feed (over 940 million pounds used in 2000), which has been shown to cause certain cancers, infertility, hormone imbalance and neuro-toxicity in humans who consume the resulting poultry. They also inject their birds with growth hormones to slow metabolism and increase weight gain. In 2002, the European Union, after reviewing 17 studies, concluded that the use of hormones in meat production posed “potential risks to human health” and proposed a ban on the use of estradiol and its derivatives in farm animals.* ORGANIC & FREE-RANGE PRODUCTION Turkeys grow healthier if they’re allowed to walk around in the open air and sunshine, free to scratch the ground and peck at whatever they fancy. This is known as a Free-Range environment. It’s much more efficient for growers to pen their birds up in elevated wire cages so they can’t move and merely eat and get fat fast. Chiropractic doctors practice natural, drugless, non-invasive health care and rely on the body’s ability to self-heal. They seek out the sources of health problems by identifying vertebral subluxations - misalignments of the bones that protect the spinal cord and can be caused by a multitude of incidents, including birth trauma, auto accidents, emotional stress, repetition and exhaustion. BIO: Dr. Richard Hauser graduated from San Diego State University with a Bachelor of Science degree and received his Doctor of Chiropractic from Western States Chiropractic College. He has been a licensed Chiropractic physician in the state of Idaho for the past 12 years. He worked as an athletic trainer and held a position in a sports medicine rehab center in California. He also spent 2 seasons as a sports team physician for Lakeland High School. Dr. Hauser uses a holistic approach in the treatment of painful conditions, specializing in the treatment of the spine and rehabilitation of conditions in the extremities. DESCRIPTION: Somatic Education is an approach Jennifer Haler, Yoga Fun, Pilgrim’s Wellness Center DESCRIPTION: “There is nothing stronger in the world than gentleness.” (Han Suyin) Learn stretches and poses that wonderfully relax tight and achy muscles. Jennifer will demonstrate techniques for releasing tension and stress from the body and combine them with deep breathing. She will start at the neck and continue down the spine to the lower back. These are simple yoga techniques that you can use every day to manage stress. BIO: Jennifer Haler, one of Pilgrim’s Wellness Center Professionals and the founder of Coeur d’Alene’s Yoga Fun, has a degree in Elementary Education and is Yoga Fit trained. Her background and degree give her the knowledge and experience she needs to make classes safe, enjoyable, and fun. Jerry Wylie, Somatic Expressions to mind/body integration that improves the natural control of your body’s muscular system, reduces stress and gives you more energy by improving physiological functioning. The Feldenkrais Method is based on the principles of somatic education that use gentle movement and directed attention to increase ease and range of motion, improve flexibility and coordination, and rediscover an innate capacity for graceful, efficient movement. Jerry will verbally lead the class through a sequence of movements in basic positions to teach you how to achieve better control of your nervous system and muscles. BIO: Jerry Wylie lived in Seattle and San Francisco before returning to his hometown, Coeur d’Alene, in 2008. He has over 25 years experience in the field of Somatic Education and has studied with Dr. Moshe Feldenkrais Dsc., Anat Baniel and Thomas Hanna, the creator of Hanna Somatic Education.
