1 lb. beef boneless short ribs, cubed
1 Tb. olive oil
½ C diced onion
¼ C diced carrots
¼ C diced parsnips
¼ C diced celery
1 C cubed russet potatoes
1-2 Bay leaves
1 tsp. thyme
2 cloves garlic
1 Tb. tomato paste
1 C Guinness Stout
3 C beef broth
Season beef with salt and pepper and, in a heavy pot over medium high heat, sauté in oil until browned. Add the onion, garlic,
celery, carrots and parsnips, and cook until onions are translucent. Pour in Guinness and reduce liquid to ½. Add stock, tomato
paste, thyme and Bay leaves. Reduce heat and simmer for 2 hours. Add potatoes and cook until al dente. Serve hot.

Folates & Folic Acid:
Benefits & Risks

The terms “folic acid” and “folate” are often used interchangeably, but they are not the same. Folate is a general
term for a group of water-soluble B-vitamins, including folic acid. Folic acid is the fully oxidized synthetic compound
used in dietary supplements and food fortification. Folates
are various tetrahydrofolate derivatives naturally present in
foods. Humans are unable to make their own folate, therefore it is an essential nutrient that you should be getting from
your diet. Important sources of folate are leafy green vegetables, fruits, legumes, liver, eggs, dairy products and orange
juice.
Unlike any of the natural folates in foods, folic acid is a fully
oxidized compound. It is not a normal metabolite (breakdown product) of folate and can accumulate and potentially
cause problems in the body. Human exposure to this form
was non-existent until its chemical synthesis (1943) and use
in food fortification (1998) and dietary supplements. Folic
acid is primarily available in folic acid-fortified grain products and folic acid-containing supplements.

“Is Your Breakfast Giving You
Cancer?” has generated significant media and public concern
regarding folic acid. This article
presents research that suggests
that relatively recent synthetic
folic acid fortification of white
flour, rice, breakfast cereals,
nutrition bars, beverages, most
multi-vitamins and many other
nutritional supplements, has
lead to significant increases in
cancer, particularly colon, prostate and lung cancer. High folate levels have been shown
to prevent cancer prior to the development of pre-tumor
lesions, but research is revealing that folic acid supplementation can promote the growth and development of existing
pre-tumor lesions.
Another concern with folic acid intake is associated with the
accelerated decline of mental capacity in older persons. This
might occur because consuming folic acid without B-12 can
mask, or hide, a B-12 deficiency. The elderly are often known
to have compromised B-12 levels, and, consequently could
be at greater risk for cognitive decline.
“The more we learn about folic acid, the more it’s clear that
giving it to everyone has very real risks,” says researcher David Smith, PhD, Professor of Pharmacology at the University
of Oxford in England, as quoted in the Prevention magazine
article.
Despite this new knowledge about the potential
risks of folic acid, folates continue to play a critical
role in promoting optimal health. In particular, they
facilitate proper methylation for optimal genetic expression and lower the risk of neural tube defects
and cardiovascular disease, both associated with elevated homocysteine levels.
Whereas natural folates found in foods and other
natural forms, now being added to vitamin formulations, are beneficial and important to health, the
fully oxidized synthetic form of folic acid is not the
ideal choice for nutritional supplement formulas
and regular consumption. There are tests currently
available which can help determine your folate status, including organic acid testing of urine samples and measuring unmetabolized folic acid in blood serum. See Page 8 or

Starting With Bees

DESCRIPTION: Join local beekeeper Frank Wiedemann as he presents the history and benefits of bees in our
world and instructs on the basics of beekeeping and how to be a successful beekeeper, regardless of your experience. This will be an interactive, fun class that will also touch on the future of beekeeping and apitherapy.
BIO: Frank Wiedemann has been a bee enthusiast since 1972, managing his own apiary of 20 hives for over 8 years.
He is currently an urban beekeeper in Coeur d’Alene. In 2010, Frank taught “Beekeeping for Beginners” at the NIC
Workforce Training Center and completed an apitherapy course sponsored by the American Apitherapy Society. He
is a member of the American Apitherapy Society and the Inland Empire Beekeepers Association.

body butter and glycerin hair spritz. You will also receive your own take-home foot and hand scrub.
BIOS: Sue McMahon, Pilgrim’s Health & Beauty Buyer, graduated from WSU with a BA in Fine Arts, Photography, but she has found that exploring a variety of creative outlets not only keeps her happy, but also gives
her fresh inspiration. She enjoys being outdoors, laughing with her kids, arts and crafts, and design.
Jen Plum, Pilgrim’s Demo Coordinator, studied Special Education and Dietetics for two years at the University
of Montana, and continued her education at NIC. She is the mother of five and grandmother of five, who keep
her on her toes. She also works as an end of life caretaker, and in her spare time, she likes to read and cook.

you know if you are getting the right nutrition through diet and supplementation? Dr. Toby will talk about
specialty lab testing and core diet guidelines that can assist you in achieving and maintaining optimal health.
BIO: Dr. Toby grew up in the Washington, DC metro area, obtaining his undergraduate education from the
University of Rochester, NY and receiving his Doctorate in Naturopathic Medicine and Master of Science in Oriental Medicine from the National College of Naturopathic Medicine in Portland, OR. He then spent seven years
developing a thriving integrative health care practice in Western New York before relocating with his wife and
son to North Idaho in 2011. Dr. Toby concentrates his treatments on whole-patient wellness, evidence-based
clinical naturopathic medicine and Chinese medicine theory and therapies that have been practiced over the
past millennia, tailoring to each individual’s unique condition rather than focusing on the disease.

and counseling individuals for 20 years. She has directed both a Cardiac Rehab and an Osteoporosis program,
and is currently teaching a cutting edge Diabetes Wellness program that has helped individuals lose weight,
reduce or eliminate medications, and return blood sugars to healthy levels. Lynne combines her experience
in cooking, nutrition and wellness coaching to create a fun and informative class.
