Banana Bread Muffins With
1 ½ cup
white whole-wheat flour, unbleached
sage, fresh, finely chopped
banana, mashed ripe (3 large)
Greek yogurt, low fat plain
1. Preheat oven to 375°F.
2. Place 16 paper muffin cup liners in muffin cups; coat liners with cooking
3. Lightly spoon flour into dry measuring cups; level with a knife. Combine
flour, sugar, baking soda, salt, and sage in a medium bowl; make a well in
center of mixture. Place eggs in a medium bowl; beat with a whisk. Add
banana, yogurt, and oil, stirring with a whisk. Add egg mixture to flour
mixture, stirring just until moist. Spoon batter into liners, filling threefourths full.
4. Bake at 375° for 25 minutes or until muffins spring back when touched
lightly in center. Remove muffins from pan, and cool on a wire rack.

Cook time: 25 minutes
Ready in: 33 minutes
