Breast Surgery Combined with Tummy Tuck and/or Liposuction

Many of my patients come to me seeking help with the changes that can occur after childbirth. Following childbirth, a woman’s breast can grow to uncomfortable proportions or just the opposite can happen. A woman’s breast can
actually lose volume and shrink, resulting in the breast appearing “deflated.”
Additionally, a large number of women come to me seeking help with the
post partum changes of their abdomen. During pregnancy the skin and abdominal wall muscles are stretched. Following childbirth, the abdomen can
protrude and the skin can be loose or sag. In some cases, the abdominal muscles can be so
weakened that the individual may look like she is still pregnant. Despite daily workouts including
sit ups and crunches, a tummy tuck may be needed to restore these muscles.

All You Need is Love
M
y favorite author is Jane Austen, mainly because she so thoroughly understands thoughts, feelings, relationships and love—especially the unrequited
type. Sometimes it’s hard to believe she wrote novels in the early 1800s; so
many of the issues she writes about are just as timely today as they were
back then. It’s as though she has propelled herself forward into the future
and observes that not much has changed when it come to love and romance.
I also adore novels by Barbara Pym, who has been called the “Jane Austen of the 20th Century.” Like Jane Austen, Barbara Pym never married,
although she did have several romantic relationships with men and unrequited love is a theme that runs through her novels as well. Born in England in 1913, her 13 novels examine the lives and romantic entanglements
of contemporary women—many of them academics and church women
living in the English countryside. Her gift of observation and social commentary, coupled with a keen sense of humor, make her books delightful
to read. Toward the end of her life, Barbara Pym was mentioned more and
more frequently as an underrated writer by several well-known writers,
including Philip Larkin. She died of breast cancer in 1980 at the age of
66, and never lived to see how popular and enduring her books became.
For my February book column, I asked several Long Island authors to
share some favorite books about love and relationships.

It all started with some family lore about an extraordinary turtle. Years ago, when Jeanne Dippel’s young niece

trounced by those who are “tough as a turtle.”
It was in tribute to that turtle spirit that Jeanne Dippel founded her greeting card business in 2012. Jeanne

body-weight and doing some moderate aerobic activity for 150 minutes
per week, reduced the chance of progressing from pre-diabetes to full blown diabetes by almost 60%. Physical
activity is most effective when done at regular intervals during the week (for
example every other day). Aerobic activities (brisk walking, swimming, bicycling, dancing, etc.) should be supplemented by some resistance training to
maintain or increase lean body mass.”

Trichomoniasis – What Is It? Do You Have It?
The most common, curable sexually transmitted disease in women has similar
symptoms to a yeast infection. It is most common in women in their 40s, who
may not even be aware they are infected.
Trichomoniasis is an STD caused by a parasite called Trichomonas vaginalis.
According to new research by Johns Hopkins University, more than 1 in 10
women in their 40s and 50s has it (compared with 8 out of every 100 women
in their 20s), with an estimated 7.4 million new cases occurring each year in
women and men. Although women are most often affected, men can become
infected and pass this disease to their sexual partners.
This disease can cause inflammation of the vagina, urethra, and cervix,
potentially leading to pelvic inflammatory disease, greenish-yellow vaginal
discharge with a strong odor, painful urination, discomfort during sexual intercourse and lower abdominal pain. If gone untreated, trichomoniasis can
lead to fertility problems, and low birth-weight babies. It is curable with antibiotics, once it is properly diagnosed.
Diagnosing trichomoniasis, however, can be difficult in that it is possible
for it to be contracted without ever realizing it, since between one-third and
one-half of all cases have zero symptoms. Symptoms that do occur can be
confused with the burning and itching symptoms of a yeast infection, causing
misdiagnosis. A doctor must perform a physical examination and lab test to
get an accurate diagnosis. Tests are performed on a sample of vaginal fluid or
urethral fluid to look for the disease-causing parasite. The parasite is harder
to detect in men than in women.
Women in their forties and fifties are vulnerable because, if they were infected when they were younger and it was not caught, it could not be treated.
As women age, and have more sexual activity, even if they are married or monogamous, they are more exposed. Because women who are menopausal and
postmenopausal, are less likely to use condoms, they are more susceptible.
As a means of prevention, request this test from your gynecologist. This
condition is easy to treat, but just as easy to miss.
An oral antibiotic called metronidazole (Flagyl) can be prescribed to treat
trichomoniasis. Your sexual partner should also be treated to prevent reinfection and further spread of the disease. Sex should be avoided until both
parties complete treatment and have no symptoms. ●

Living a Vegan Life Before
and After Cancer
S
he has one of the most
recognizable laughs on
radio, and yet the past two
years have been no laughing
matter for Robin Quivers, the
indispensable on-air sidekick
to broadcast giant Howard Stern. No
stranger to misfortune, Quivers had
already endured a childhood marked by
sexual abuse and an adulthood battling
weight issues (including getting breastreduction surgery only to have her chest
later grow back to its original size). Also,
owing to the nature of Quivers’ job, few
aspects of her personal life could ever be
private, since everything becomes fodder
for the show and its not-exactly-gentle
ridicule. However, 2012 threw the radio personality a bigger curve than she could ever
have imagined.
In May 2012, Quivers underwent a 12-hour surgical procedure to remove an endometrial
tumor. Fifteen months of radiation and chemotherapy followed, during which she missed
only two days on the air (by doing the show via remote). After hearing the golden words
“cancer-free,” Quivers returned to the SiriusXM studio in early October of last year and
resumed doing what she does best: being the perfect sounding board and voice of reason
opposite the king of all media.
However, there’s more to the 61-year-old air-force veteran and former nurse than the
four hours a day she spends amidst Howard, Gary, Fred, celebrities, strippers and freaks. In
addition to her Stern Show commitments, she’ll soon go back to hosting her own program,
“Chatter,” on the Howard 101 channel; and, more importantly, she’s written her second
book, The Vegucation of Robin: How Real Food Saved My Life (co-authored by Rachel
Holtzman).
It’s easy to jump to the conclusion that having cancer was the wake-up call that turned
Quivers into a Pollyanna for healthy eating, but no. The book – whose first half tells of
her journey towards healthier living and whose second offers numerous vegan recipes –
makes clear that Quivers not only began her lifestyle change back in 2007, but she credits
her cleansed, detoxed and vegetized system with getting her through treatment far more
manageably than she could have hoped.
In our autumn conversation, Quivers could not have been more upbeat about her future
or honest about her struggles. Asked if she counts the days since receiving a clean bill of
health, she replied, “I’ve never been an `anniversary’ person; I can hardly remember when
my own birthday is, and I have trouble remembering others’. The day they told me I was
`cancer-free’ – I don’t remember – it was a couple of months ago. I mean, I know when my
appointments are; they’re on a calendar. When they come up, I go. For the first year, they
usually tell you to come in every three months. But my second three-month visit, she told
me I was cancer-free. And then she just said, `Go away for six months.’”
It was a prognosis that Quivers unequivocally credits to her eating habits. Yes, in the book,
she briefly credits her physicians, surgery and aspects of Western Medicine for helping
her survive cancer, but she also wonders openly if a proper diet from the beginning might
have spared her the tumor to begin with. “I don’t know that for a fact,” she reasons, “but
I do know that it was only after dealing with doctors that I got upset with doctors. I had
something really wrong with me, and all they wanted to do was take the symptoms away.
They did not wanna find out why this was happening to me. I kept changing gynecologists
because I had symptoms, but I was never diagnosed correctly. I was put on a number of
different protocols that never did anything for me, but they helped screw up my system,
and that’s what upset me. One doctor actually said, `Shut up. I’ll tell you what’s wrong with
you.’ A lot of times, women are told what they think and feel as opposed to being listened
to. My cancer came from an endometrial implant in my pelvis, which is endometriosis, and
no one ever diagnosed me as having that.”
Continues Quivers, “The one thing I took away from all this is that the doctor is a partner
in your healthcare, not the manager. You’ve got to have a relationship with your doctor, not
just somebody dictating to you or somebody who has a different view of life completely
from you. I wasn’t dogmatic or diligent enough; after five or six attempts, I quit. But you
have to keep going!”
Asked if her training as an intensive-care nurse prepared her for the treatments she
needed to undergo, Quivers admitted that a little knowledge was sometimes not a good
thing. “I made the fatal mistake of asking the doctor to describe the surgery to me,” she
recalls. “It sounded so horrifying. I said to him, `Well, we don’t have a thing to worry about
. . . because I’ll never make it!’ I should never have asked that question because knowing
a little, and then getting that kind of information, can really be devastating – and it was,
at that moment. On the other hand, it was really good
during recovery from surgery because I knew all the
stuff I needed to anticipate to recover quickly. I knew I
should get up and be active and do all the exercises. I was
prepared, whereas most people are surprised. I also was
able to help them understand what was going on with
me, rather than having a lot of trial and error. I could just
say, `Nope. This is what I need.’”
Knowing her body inside and out was a key factor in
Quivers’ bearable recovery. “One of the things you have
to realize about cancer treatment,” she notes, “is that
it’s really rigorous on the body and causes a great deal
of stress. Not only do you have to address the fact that
you have cancer, but you’re really doing some invasive
and detrimental things to your body in order to rid yourself of the cancer. You need to
compensate for that, and one way is to eat a really good, nutrient-dense diet. But you also
need to relax and calm yourself. I had a Reiki master come once a week and learned to do
Reiki on myself while I was undergoing treatments. I also had reflexology since I couldn’t
get full-body massages because of my temporary ileostomy. I meditated. So I did things to
make sure that, spiritually and emotionally, I was taking care of myself.
“If I hadn’t done anything, and this happened to me,” avows Quivers, “I wouldn’t have
been strong enough to undergo that surgery and that treatment. Twelve hours is a crazy
amount of time to be under anesthesia. The anesthesiologist came back to me after the
operation, and he said, `It’s really hard to keep someone under that long, and you were as
rock-solid as anyone. You never even had a glitch.’ So I just went through it.”
Quivers takes special pride in the quick rebound because she’d been in the exact opposite
shape before starting her new lifestyle. “I was overweight, I smoked, I had frequent
panic attacks,” she wrote in The Vegucation of Robin. “My fingers always tingled, and my
circulation was so bad that I didn’t even register on the heat screen at the bank. I had to
use my elbow!” She credits magician David Blaine with sparking the idea that cleansing her
body might ease many of her complaints. After a week-long stint of drinking lemon juice
and cayenne pepper, she felt terrific. However, then it was time to start eating again, and she
went back to her old habits – and her many aches and ailments. Eventually, the realization
sank in that if she ate healthy all the time, she’d be healthy all the time. Narrowing her diet
to juices and vegetables did the trick.
Not that healthy cooking came easily to her. You’ve heard of cooks so bad, they actually
burn water? She managed it (or at least she burned through a kettle). Another time, years
before her turnaround, Quivers put a steak in what she thought was the broiler but was
actually just a drawer. “For the life of me, I couldn’t understand why it wasn’t cooking,” she
recalls. “Once I tried to cook a paella. I just couldn’t get it together, and I needed to meet
somebody to go out, so I decided to put it on a low simmer and left it in the oven. When I
came back, the shrimp was as tough as shoe leather. It was inedible. I wound up taking a
picture of it to prove that I had done it. So I was not what you’d call even an amateur cook,
but when I became vegan, I decided I had to start cooking for myself.”
Asked whether someone in her financial position has a far easier time making a lifestyle
transition than, say, a working single mom or budget-strained family, Quivers says excuses
are a cop-out. “We have been duped into thinking that cooking takes a long time. Cooking
certain things does take a long time. But cooking vegetables is really quick. You can precook things and store them so you can have something to grab. But you actually know
what it is; it doesn’t come in a box and have a bunch of mystery ingredients so that you
don’t know what you’re feeding yourself or your family. We’ve gotten our priorities wrong;
we think it’s more important to take time to watch a TV show and sit around gossiping, or
have your feet up and read some trashy novel, than it is to get into the kitchen and actually
nourish ourselves.”
Not surprisingly, the question Quivers gets asked most often is if she regrets giving up
any of her old favorites. “People used to say that all the time: `Whaddya miss? Whaddya
miss? Whaddya miss?’ I don’t miss anything. I don’t care to have my body go through the
process of digesting that kind of food. I love the way I feel. I love the way vegetables treat
my body – especially since my surgery. I had surgery on my colon, so I find that lighter fare
is much better for me at this point in my life anyway. I would miss feeling good if I ate bad
food. Nothing feels or tastes as good as I feel.”
The radio personality also makes clear that for her, cooking vegan isn’t about faking meat
dishes with vegetarian equivalents. “If I want a paella, I might as well sit down and eat
a paella. When you try substituting or replacing things
so that you get what you used to get, you wind up
frustrating yourself. It’s more important to learn how to
love the way I eat than to recreate the way I used to love
to eat. I don’t sit around thinking about recreating paella.
I make lovely vegetable dishes that taste really good.”
When I mention that George Burns smoked a cigar
every day yet lived to 100, Quivers counters, “That doesn’t
mean everyone can smoke a cigar every day! Nothing
is absolute in this world. My point is what would keep
George Burns alive is not what would keep everyone alive.
I’m not even advocating my course for anyone else but
me. Our diets are as individual as our fingerprints. What I
do advocate is finding out what’s right for you. You need
to have a relationship with your body that you respond to. If you eat something and have
an adverse reaction, you don’t just keep eating it and take a pill so that your stomach isn’t
upset. You actually stop eating it, because that’s your body telling you, `You don’t like that.’”
Howard Stern’s eating habits – he recently went pescetarian (vegetables and fish) – have
been influenced by Quivers’, though she regrets not being able to do more for former cohost Artie Lange, whose drug and food addictions were aptly summarized by the title of his
own book, Too Fat to Fish. “You absolutely reach out to people,” Quivers sighs, “but there’s
the old saying, `you can lead a horse to water, but you can’t make him drink.’ I see people
all the time who, with a slight change in their diet, could be off medication and improving
their health. But they choose the medication because they don’t want to give up the way
they eat. That’s more comforting to them than the `supposed’ cure I’m offering. I can’t do
anything about that. But I do say in the book that if you see anything of yourself in my
story, just know there is a possibility that you don’t have to suffer.”
Speaking of suffering, another question Quivers gets asked constantly is whether Stern
ever pushed the envelope so far, even she was disgusted. She just laughs. “They haven’t
killed anyone!” she replies. “I think that’d be going too far. But seriously, you come from a
background where you’ve been told there are rules. Sometimes we were stepping right up
to the edge of those rules. But the show gave me the opportunity to open boundaries. I’d
have to consider, `Is it true that that’s terrible, and it shouldn’t be? Because this person is
here volunteering, and they seem perfectly fine with it. Who am I to say this is wrong?’ So I
really got to the point where I could be an observer and allow people to have their freedom
to do whatever they wanted to do. Because we weren’t killing anyone. What used to blow
me away was women coming and saying, `Yeah, I wanted to do something really crazy for
my 25th birthday, and that’s why I came down here and took my top off.’ And I’m like, `Oh!’”
Even personal jokes about Quivers’ bust size, abusive dad and now, her cancer situation
never really fazed her. “There’s something to be said for realizing that just because other
people may be insensitive doesn’t mean anything about you. I’m not a lesser person because

It was probably a nutrition book. I’m not a great reader, though I read periodicals
and newspapers all the time. The Kite Runner was probably the last novel I read, and
I might pick up the new Steven King sequel to The Shining.
Name three songs on your iPod
Adele’s “Set Fire to the Rain,” Jay Z’s “Holy Grail,” and “The Royal Scam” by Steely
Dan.
Favorite Place?
New York is my favorite-favorite. My other favorite city is London.
Favorite sports and teams?
I’m a big tennis fan, and my favorite player right now is Rafael Nadal. For football,
I usually jump between the Jets and the Giants depending on who’s winning. This
year, it’s sort of the Jets. I wish the Giants were playing better; I really love them!
Favorite all-time guest on the Howard Stern Show?
Arnold Schwarzenegger. Because he was a huge star, and he was one of the first
that ever paid us any attention. He didn’t care what the rest of the world was saying. He was like, `That’s a good place to promote; I get a good interview over there,
and their audience is huge.’ So he ignored the world that was saying, `Don’t go there,
they’ll rip you apart.’ He would come and see us every time he put out a movie.
Least-favorite all-time guest?
It’s a tie between Amy Fischer and O.J. Simpson. Even before the murder trial, we
knew he was violent with women. He’d had a couple of arrests and cases of domestic violence, but we acted as if that didn’t happen. We just went `whooo O.J.!’, and I
really regret that. And Amy Fischer, because she’s sort of unrepentant.

easy. I know who the real perpetrator and
victims are, so you can do whatever you
want, but that’s on you.”
One practical joke by Stern’s crew
did make her cry, however – and then
laugh. “If I could have my druthers and
be anything I wanted to be in the world,”
Quivers admits, “it would be to be a singer.
Singing is the most wonderful gift, and if you
can sing and make people feel something,
it’s a really incredible thing. But I can’t sing!
So okay, it was very early in our careers, and
they knew that I would sit in my studio and
sing – at the top of my lungs. Well, they would
always try to catch it, but I’d be very careful
not to have my mic on. I had control of that
mic, so they couldn’t ever do anything about
it. Until they decided, `We’re just gonna sit a
tape recorder under her console; one of these
days we’ll catch it.’ And one day they did. So
you have this voice, no music, just singing this
REO Speedwagon song at the top of my lungs.
And it was all off-key – just horrible. And they
surprised me by putting it on the air. And I did cry. Not because they did the prank, but
because it broke my heart to hear myself!”
After laughing uproariously at the memory, Quivers could not be more serious in recalling the
ways her closest confidante was there for her throughout her medical ordeal. “Howard was the
first person I reached out to. He’s always the first person I reach out to in any kind of special
situation or problem situation. This time, I was only looking for a doctor recommendation, and
I knew he’d be there for me. That wasn’t ever a question in my mind. The way he was there for
me just overwhelmed me. Just thinking about it would bring me to tears. He was just so worried,
and it was so important to him that I get better and get what I needed.
“I was telling a story on the air one day,” adds Quivers, “about how, when that doctor
described the possible outcomes of surgery, I got to the point of thinking, `you know what?
Some of your “successful outcomes” won’t be successful to me. My quality of life is very
important, and some things you’re saying indicate that I won’t have an acceptable quality
of life.’ He said, `Oh, you’ll be fine.’ And I said, `You don’t know me. I don’t wanna live that
way.’ When I came home from that meeting and told Howard about those possibilities,
he immediately started to argue with me, `You can live with that, Robin.’ I kept saying,
`No I can’t. I’ll be too depressed.’ And he said, `No, you can!’ He was so worried and so
hurt that I had to start changing my parameters. He made me want to live, even with
certain possibilities. I was like, `I can’t hurt him like that.’ I was being totally selfish; I wasn’t
thinking about the people who loved me and what it might mean for me not to be here. I
realized that I have to take them into consideration when making these decisions.”
Asked if there’s anyone else in her life to consider these days, the never-married Quivers
confides, “For 17 months I’ve been a hermit. There were a couple of cute doctors, but I
really wasn’t thinking about that! It was a process, and your vanity goes out the window.
But now, it’s make-over time. I’m now coming out of that shell and deciding on a new
hairdo, a new look. I’m getting there.” ◆

Catching Up with Carol

The Mouse that Roared
W
e all have them. Those unforgettable times that we’d love to forget. Mine
was 1995. Not IN 1995. It WAS 1995.
I’m not asking you to feel bad for me. Seriously. It was just my turn. My
husband was in a car accident the first weekend of February and out of work
for months, during several surgeries. That same weekend the babysitter for
our one-year old and two-year old babies had a fight with her boyfriend.
She told me on Friday that she was leaving New York on Saturday. Then
my mother was diagnosed with breast cancer on Valentine’s Day and she
passed away in March. (I had no in-laws. My husband was an only child
who had lost his parents 15 years earlier.)
Then came my Saab story. The car kind. I’d bought my sporty 2-door Saab
when I was single – long before I had baby car-seats. Well my Saab was a
problem in June, because of my husband’s biggest surgery – a hip replacement
triggered by the accident and too many years playing college sports.
I flipped on
His surgery went well, but the night before I was to bring him
home the doctor reinforced one firm instruction. “He has to ride in
the light, and a vehicle where his new hip is higher than his knee. Otherwise the
hip-replacement will pop out.” My husband’s car was in the shop,

me from my on his knees. They rose way higher than his hips.
My car could blow out his entire surgery. And I hadn’t lined up

and yelled as loud as I could, “God, I can’t take it anymore!”

heard a scratching. I flipped on the light, and staring at me from my nightstand was a mouse. About a 3-inch grayish-brown mouse, that I could still
swear was giving me the finger! It was at that moment that I realized the
horrible truth. I’m not in charge of when life has given me enough.
The only thing I am in charge of is whether to look for the AFGO – (as I’m
permitted in print) – “Another Freaking Growth Opportunity” – and how
to respond to my AFGOs.
The next morning came. So did my dear friend and co-anchor, Lea Tyrrell,
and her now husband Frank – and Frank’s SUV. They cared for our babies,
loaned me Frank’s truck and had food for us when we got home. My
husband eventually walked, worked and ran again. Which is great, because
we have been tracking after our now 20 and 21-year olds since then. I
learned that “true” friends are the ones there through thick and thin, and
through double diapers too. And that morning
always comes. Even after your worst Saab stories.
And even after a mouse stands roaring at you from
your night-stand, asking you what you’ve got left. ●

Recipes for a Healthy Heart
F
ebruary is American Heart Month – a time to
reflect on what we can be doing to keep our
hearts healthy.
Taking a list of heart-healthy foods from WEB
MD*, we challenged three Long Island chefs—
Michael Wilson of Monsoon in Babylon, Massimo
Fedozzi of Graceful Rose in Port Jefferson, and
Douglas Gulija of the Plaza Café in Southampton
– to come up with recipes using at least three of
the ingredients on the list.
Michael Wilson can prepare all kinds of delicious
food as evidenced by his stints at three Bohlsen
restaurants—expertly cooking fish and steak at
Prime in Huntington, Italian at Verace in Islip and
now pan-Asian as executive chef at Monsoon. He
developed two recipes: roasted acorn squash with
spiced almonds, and, for dessert, green tea custard
with blueberry compote and flaxseed walnut crisp.
Massimo Fedozzi, the executive chef at
Graceful Rose has been dedicated to good food
since a child in northern Italy. He has worked in

Savoy Hotel in London, Negresco Restaurant in

to cooking, says the chef, essential for his tuna
tartare.
And finally, the Douglas Gulija’s pan roasted
wild king salmon with wild rice. Says Gulija,
whose Southampton restaurant always receives
accolades, “I like this recipe because it reminds
me so much of the fall harvest and Thanksgiving
with its use of local acorn squash, apples, end of
season corn and the colors of the dish. It also is a
great way to pare true hand harvested wild rice
with wild Alaskan king salmon. At the restaurant
we also add in some sweet Maine shrimp to the
mix when they are available.”

Green Tea Custard with Blueberry
Compote and Flaxseed Walnut Crisp

Monsoon Asian Kitchen and Lounge
Yield: 2 portions
For the Custard
Ingredients:
1 cup low-fat milk
1 Tbsp. sugar
1⁄2 vanilla bean, scraped (or 1⁄2 tsp. of vanilla
extract)
1 Tbsp. green tea powder (matcha)
1 Tbsp. milk
3⁄4 tsp. gelatin powder
Preparation
1. Simmer the milk with the sugar, vanilla, and
matcha for 10 minutes on low until
small bubbles start to form
2. Bloom the powdered gelatin in
the milk until a slight paste forms
3. Remove the milk mixture from
the heat and whisk in the gelatin
paste
4. Strain into two martini glasses
and chill at least 4 hours
For the Compote
Ingredients:
1 cup blueberries
2 Tbsp. sugar
2 Tbsp. water
Method of Preparation:
Simmer on low until blueberries

macerate and the sugar dissolves. Cool.
For the Crisp
Ingredients:
1 1⁄2 cup all purpose flour
1 tsp. sugar
1 tsp. Salt
2 tsp. vegetable oil
Approximately 1⁄2 cup water
2 Tbsp. flax seeds
2 Tbsp. walnuts, chopped fine
Method of Preparation:
1. Preheat the oven to 450 F
2. Mix the flour, sugar and salt
3. While mixing with a fork, add oil and then
the water, one tablespoon at a time until all
incorporated forming a semi-firm dough
4. Let the dough rest for 3 minutes. Roll out
onto a floured surface. Roll into a rectangle 1/8
inch thin.
5. Brush slightly with water and sprinkle the
dough with the flaxseeds and walnuts
6. Slice with a pizza slicer into small rectangles
and bake on a floured sheet tray for 12 minutes
or until toasted
7. Place the crisp on a cooling rack
To assemble, place the compote on top of the
chilled custard and garnish with a crisp.
Roasted Acorn Squash
with Spiced Almonds
Yield: 2 cups
Ingredients
1 acorn squash, peeled, seeded and diced
1 tsp. Chinese five spice
1 tsp. chili powder
1⁄2 cup blanched, sliced almonds
2 Tbsp. grapeseed oil (or vegetable oil)
1 cup brown rice, cooked
1 Tbsp. orange juice
1⁄2 cup baby spinach, washed
5 orange segments
Salt and pepper
Preparation
1. Preheat oven to 450 F. Toss the peeled and
diced acorn squash in half the oil. Add the five
spice. Spread on a baking sheet and roast for
25 minutes, making sure to turn and spread
halfway through.
2. Mix the almonds with remaining oil and chili
powder. Roast in the 450 F oven for two minutes.
3. Cook brown rice according to the package
4. While still warm, gently toss the brown rice,

4 seven-ounce portions of Wild Alaskan king
salmon
herb and red pepper infused oil, as needed
1 cup white wine
1 shallot, minced
2 ounces olive oil
12 ounces true wild rice, cooked
1 acorn squash, roasted, large dice
2 ears corn, grilled, kernels removed
1 apple, granny smith, diced
1 pepper, red, diced
½ cilantro, leaves
8 ounces curry sauce (recipe follows)
Preparation
Place salmon on small baking tray flesh side up,
brush with oil and add wine; broil until desired
doneness (note: as wine evaporates, flesh side

Ingredients:
3 Tbl. butter
1 red onion, sliced
6 plum tomatoes, sliced
4 granny smith apples, chopped
I slice of ginger
½ tsp. garlic, minced
1 cup white wine
Preparation
In a non-reactive bowl, season the
tuna with salt, pepper, sesame oil,
sesame seeds and ginger vinegar. Mix
and refrigerate.
Peel the avocado, place in a bowl
and smash lightly with a fork.
Dice the tomatoes and the onion ¼
inches. Season with salt, pepper and
mix with avocado.
Divide the avocado/tomatoes mixture in four
3x2 ring molds. Press lightly.
Top with the tuna. Press lightly.
Refrigerate in mold until serving time.
To make the ginger vinegar, mix one Tablespoon
of minced fresh vinegar with one cup white wine
vinegar in a sterilized 1/2-pint mason jar. Place
a sterilized seal on top a screw on the ring. Set
the jar aside for one week to steep, out of direct
sunlight and away from heat. Strain the contents
through a fine sieve. Pour the vinegar into an
8-oz bottle or cruet and seal with a cork. The
vinegar should be ready to use immediately, with
a shelf life of at least one year.
