WhistlePig 10 Year Straight Rye Whiskey One of the defining characteristics of WhistlePig is a specialization in aged ryes. In curating the brand’s top-shelf offerings, Pickerell spent over a year scouring North America for the most exquisite stock, and found the purest expression in western Canada. From there, the flagship 10 years is finished in used bourbon barrels in barns on the farm, and bottled by hand at 100 proof. The 10-year, 100-proof, 100% rye received Wine Enthusiast’s highest ever rating for a rye whiskey at 96 points. After studying the best techniques of the Old World - particularly Scotch Whiskies - Dave and the WhistlePig team paired bonds of 12-year-old rye with premium European oak casks - Madeira, Sauternes and Port. After a series of single finish releases and extensive industry feedback, the 12-Year Old World is the product of a carefully selected marriage of 30% Sauternes, 63% Madeira and 7% Port that highlights their distinctive flavors to create an exceptionally balanced spirit. The 2015 San Francisco Spirits Competition Double Gold award winning Old World Series unites the bold attributes of rye whiskey with the grace and elegance of the finest European casks, yielding an ultra-premium straight rye, distinctly American, but hearkening to its stately Old World roots. This year’s Boss Hog release is dedicated to Mortimer WhistlePig, our deceased Kune Kune pig mascot and namesake. Mortimer’s physical monument will be the “Spirit of Mortimer,” a flying pig chiseled by hand by Danforth Pewter Works right down the road from us in Vermont. WhistlePig 12 Year Old World: Sauternes A famous sweet white wine, Sauternes is only produced in Bordeaux, where a delicate micro climate of thick morning fog and dry afternoon heat allows a “noble rot” to grow on the grapes, imparting its signature flavor. The Sauternes finish combines Rye’s bold attributes with a subtle sweetness and elegance imparted from the finest casks, yielding an ultra-premium straight rye, distinctly American, but hearkening to its stately Old World roots. Limited Single Edition Release Date: April, 2015 WhistlePig 12 Year Old World: Madeira Produced since the 17th century on the Spanish island of Madeira, this highly unique winemaking process includes oxidizing the wine at elevated temperatures for extended periods, replicating the primitive conditions of shipping the wine to the New World through the warm tropics. However, two blights in the 1900s eradicated more than 75% of the vines, making Madeira difficult to cultivate and procure today. The rich caramel, fruit and peppery notes of Madeira combine with Rye’s bold, spicy attributes yielding an elegant ultra-premium straight rye, distinctly American, but hearkening to its stately Old World roots. Limited Single Edition Release Date: May, 2015 WhistlePig 12 Year Old World: Port Port’s signature sweetness is derived by the addition of a neutral grape spirit - brandy- which halts the fermentation process, leaving extra sugar behind boosting the alcohol content. After fermentation the barrels are traditionally aged in a cave before bottling. The wine received its name from the town Porto, a seaport city at the mouth of the Douro river. Port notes of dried fruit and maple syrup further accentuates this mature Rye’s slightly sweet composition, while balancing with its spicy finish, yielding an ultra-premium straight Rye, distinctly American, but hearkening to its stately Old World roots.
