Homemade Hot Pockets
Get creative and make your own filling combinations,
like ham and swiss cheese or your favorite veggies.
Ingredients:
 2 cups complete
pancake mix
 1/2 cup hot water
 1 (5 oz) can chicken,
drained (or 1/2 cup
shredded chicken)
 1/2 cup shredded cheese
 1 cup spinach

Steps:
1. Preheat oven to 375°F. Lightly apply cooking spray
to a cookie sheet.

2. In a bowl, stir pancake mix and hot water with a
spoon until dough forms. Divide into 4 parts.
3. On a clean surface sprinkled with pancake mix,
flatten the dough into 4 circles each about 6
inches wide.
4. In a separate bowl, mix the chicken, shredded
cheese, and spinach together. Spoon about 1/2 cup
of this filling mixture onto the center of each
circle.
5. Fold each dough circle in half, covering the filling.
Press the edges with a fork to seal. Poke a hole on
the top with your fork for steam to escape.
6. Place pockets on cookie sheet. Bake for 20-25
minutes or until golden brown. Makes 4 hot pockets

Homemade Pizza Rolls
Ingredients:
 2 cups complete
pancake mix
 1/2 cup hot water
 1/2 cup pizza sauce
 1/4 cup shredded
mozzarella cheese
Steps:
1. Preheat oven to 400°F. Lightly apply cooking spray to a cookie sheet.
2. In a bowl, stir pancake mix and hot water with a spoon until dough forms.
3. On a clean surface sprinkled with pancake mix, flatten the dough into a
large rectangle about 1/4 inch thick. Cut the dough into 2 inch long
rectangles.
4. In a separate bowl, mix the pizza sauce and cheese.
Spoon about 1 tsp of this filling mixture onto the
center of each rectangle.
5. Fold each dough rectangle in half, covering the
filling. Press the edges with a fork to seal. Poke a
hole on the top with your fork for steam to escape.
6. Place pizza rolls on cookie sheet. Bake for 15
minutes or until golden brown.
Makes about 15 pizza rolls
