Dan Murphy’s Fine Wine Buyer’s Guide 13TH Edition
13 EDITION
TH
“Dan Murphy’s was founded not only to enable you to obtain your
liquor more cheaply but also to help you enjoy life in an atmosphere
mainly concerned with wine; to instruct, to advise and to co-operate
with you in anyway you wish.” Daniel Francis Murphy, September 1958
The Dan Murphy’s Wines of the World Expo held in June this year in both
Melbourne and Sydney was widely deemed to be an overwhelming
success, with over 10,000 visitors attending each event. A number of the
customers I spoke with had also rather impressively travelled significant
distances to attend the event. There was a palpable sense of excitement
at both events with positive feedback about the strength of our Australian
and International Wine range, our Fine Wine team and our Fine Wine
publications (including the Fine Wine Buyer’s Guide).
One of the proudest moments of my career was undoubtedly when a
delightful customer and his wife (originally from Trinidad, now residing
in Brisbane), emphatically proclaimed how much he loved the Guide
Terms used
in the Guide
Limited Release
and how impressive he thought the product selections. “It’s like you
know my tastes!” he enthused before requesting a photo of the two
of us. Thank you.
It is clear from this experience and talking with our customers in-store,
that many see Dan Murphy’s as a Fine Wine Merchant in every sense
of the word – a place to discover, learn and share a genuine passion
for Fine Wine. It’s what Daniel Francis Murphy stood for and it’s a
philosophy we continue to honour today.
To Wine!

The Dan Murphy’s wine assessment process
The 100-Point rating system
The Dan Murphy’s Wine Panel adopts many of the disciplines
of the Australian wine show system, including:
s¬@MASKED¬ASSESSMENT¬OF¬WINES
The 100-point rating scale has no agreed international standard and
has as a result been interpreted somewhat differently by each wine writer
or association who has adopted it. Here is our interpretation.

managers hold the most senior positions

In addition, we use a 100-point wine rating system – a system documented
by Dan Murphy himself in A Guide to Wine Tasting published in 1977.
This 100-point rating scale has become the rating system of choice for many
of the world’s leading wine critics including James Halliday and Robert Parker Jr.

Dan Murphy’s Fine Wine Buyer’s Guide 13TH Edition
with
Andrew Wigan
Chief Winemaker for Peter Lehmann Wines
Andrew Wigan has had a hand in crafting every Peter Lehmann wine since the winery
was founded in 1979. “Wigs” as he is best known, is one of Australia’s most celebrated
winemakers, having been awarded Gourmet Traveller Wine Magazine’s Winemaker
of the Year in 2009, White Winemaker of the Year at the 2006 International Wine
Challenge and International Winemaker of the Year in 2003 and 2006 at the
International Wine and Spirit Competition.
Wigs is possibly the most awarded Riesling maker in the world after his namesake
‘Wigan Riesling’ won the trophy for Best Australian Riesling Over £10 at the recent
Decanter World Wine Awards, making it three years in a row, and also winning
Best Riesling at the International Wine and Spirit Competition five times since 1991.
Q: Your name is synonymous with Barossa winemaking. How did you get here?
Did you ever imagine this kind of global recognition?
A: No, not at all. I’m from Ararat in country Victoria and always imagined I’d be an
Industrial Chemist. But after my first vintage I realised I wanted to be a winemaker.
After graduating from Winemaking at Roseworthy and having done three vintages
at Krondorf Wines in Barossa, I went to Saltram Wines in the Barossa to work as an
assistant winemaker to Peter Lehmann. I basically became Peter’s right hand man.
Working with Peter Lehmann was the best decision I ever made.
Q: And so you were at Peter Lehmann Wines from the beginning?
A: Yes. It was the late 70s, a time of so much political and economic unrest, the moral
compass was changing. So Peter, myself and a few others resigned from Saltram Wines
in 1979 and moved to a new site in Tanunda with a promise to our growers that we would
buy their grapes. This was the biggest gamble we’ve ever made – starting a winery from
scratch. But, with that trust and faith we made our first Shiraz in 1980 – and ten years later
we won the Jimmy Watson Trophy for Stonewell. Now three decades on we are still
producing wine with those same values we had when we entered this business.
Q: Speaking of Stonewell, what is it about this wine that makes it special?
A: Stonewell is our best Shiraz of vintage. Shiraz is the grape variety that has defined the
Barossa as one of the world’s great wine regions, but we knew Shiraz that came from
some vineyards was better than others – smaller, deeper in colour and more intensely
flavoured – ‘Little Black Jewels’ we called them. And so began a journey to make the
best Shiraz we could. We named it ‘Stonewell’, honouring an area close to the winery
that we believed produced wines that showed the characters most admired in Barossa
Shiraz. Now, each vintage, only those grapes that can produce an exceptional Shiraz
capable of great longevity in the cellar are selected. For over 25 years Stonewell has
been lauded as one of Australia’s greatest wines, rated as ‘Excellent’ in the renowned
Langton’s Classification.
Stonewell Barossa SA, Shiraz 2008
‘This is a very fine wine. Years from now it may well
be regarded as the best Stonewell ever – it is the very
essence of Barossa. An intriguing dichotomy of power
and elegance, intense black fruit and spice wrapped
in stately oak. A wine for the ages – magnificent.’

Red Bordeaux
at a glance

DE
Here we feature some of Bordeaux’s key red wine appellations and varieties,
responsible for the region’s most famous wines – a good starting-point for
those wishing to discover the remarkable red wines of Bordeaux, including
the 2009 vintage featured on the following pages.
GIR
Bordeaux, with its huge diversity of wine regions (appellations) and producers,
significant history and complex classification system, can seem quite daunting
at first, however considered simply on its varietal and regional merits, one can
quickly gain a basic appreciation of this great region.

PAUILLAC
MÉDOC REGION
St-Estèphe
Firm, tannic, earthy, mouth-filling, and slow to mature. Cooler limestone
soils gives a slightly austere character to Cabernet Sauvignon resulting
in the inclusion of a higher proportion of ‘softening’ Merlot.
Pauillac
Rich, powerful, firm, and tannic, with blackcurrant, lead pencil and mineral
aromas and flavours. Very long lived. The deep gravelly soils and proximity
to the warm Gironde estuary provide ideal terroir for Cabernet Sauvignon.

LEFT BANK
BORDEAUX
‘Cabernet is King’
PESSAC-LÉOGNAN
St-Julien
Rich, flavourful, elegant and fine, with cedary bouquet. A compact
appellation with well-drained gravelly soils ideal for Cabernet Sauvignon.
More restrained than neighbour Pauillac, but no less age-worthy.
GRAVES (Appellation)
G
VE
RA
Fragrant, supple, harmonious, with complex aromas and flavours.
The Médoc features gravelly soils with a low clay content and poor fertility
– perfect for Cabernet Sauvignon. The wines produced are delicate,
fragrant and fine.
S
Margaux
GRAVES REGION
Pessac-Léognan
Haut-Médoc
The mainly gravel soils and warmer location in the south are ideal
for the principal grape variety, Cabernet Sauvignon. Wines of good
structure, concentration and ageing potential.
Its gravel soils are similar to those found in the Médoc
– the wines are also similar in style; firm, structured
and long-lived, though possessing an individual smoky,
mineral nuance.

Bordeaux – the Region
and its Key Appellations
BORDEAUX
PARIS
FRANCE
What is an Appellation? The term Appellation refers to a formal system introduced
across French wine regions in 1935, defining various criteria including; regional
boundaries, permitted varietals/blends and yields.
Left Bank versus Right Bank
Whilst the vast majority of red wine from Bordeaux is a blend of more than one red grape
variety, those from the Left Bank, the regions to the left of the Gironde estuary (including the
Médoc and Graves) are predominantly Cabernet Blends, whereas those from the Right Bank
(including Pomerol and St-Émilion) are Merlot dominant (the exception being Cheval Blanc,
which is predominantly Cabernet Franc).
RIGHT BANK
‘Merlot is Master’
Why? The Left Bank features gravel-heavy soil, an environment that excels at growing the lateripening Cabernet Sauvignon, whereas the Right Bank features limestone, sand and clay soils
better suited to Merlot. Left Bank wines, typical of Cabernet Sauvignon usually take years, even
decades to develop. Conversely, the Merlot-dominant Right Bank wines are inherently softer in
tannin and generally more approachable as young wines – though in better years, still capable
of significantly long ageing potential.
Key appellations of the
Right Bank (Merlot-dominant)
POMEROL
ST-ÉMILION
ENTRE-DEUX-MERS
Pomerol
Rich and unctuous, with a velvety bouquet and silky tannins.
The wine possesses a firm backbone allowing it to age
impressively. Soil is gravel, sand and clay making this an

Soft tannin and freshness, the best examples can be enjoyed at
around 5 – 8 years of age, though can also age for considerably
longer. Soil is primarily limestone and clay. Cabernet Franc is an
important second variety, offering structural backbone.

2009 is one of the greatest red Bordeaux vintages in
living memory. A remarkable warm dry ‘solar’ growing
season and cool summer nights resulted in optimum
fruit and tannin ripeness across all grape varieties;
cabernet sauvignon, merlot, cabernet franc, petit
verdot and malbec.
The cabernet sauvignon-dominant Left bank was a
star performer and produced wines of tremendous
freshness, concentration and richness. Even minor
communes excelled with many lesser-known Chateaux
punching well above their classifications. At the pointy
end of the Grand Cru Classé genre, the ‘clarets’ are
transcendent. It is rare, even uplifting, to taste such
an extraordinary array of high quality wines with
such great cellaring potential. Comparisons with
the legendary 1945, 1982, 1989 and 2005 are
mentioned. The profound 2009 vintage articulates
a flawless growing season, accumulated wisdom,
marvellous technology and huge vineyard and
winery investment over the last twenty years.
The St-Estèphes, best known for muscular long-lived
wines, are chocolaty and beautifully concentrated.
Pauillac is ultra-classical and brilliantly poised between
opulence and elegance. The fine grainy/cedary
tannins are still there, but fruit complexity, buoyancy
and juiciness abound. St Julien is fragrant and fresh
with dense lacy tannins, superb fruit sweetness and
vinosity. Margaux is sensational with redcurrant/
blackberry aromas, smooth generous fruit and supple
tannins. Graves, especially Péssac Léognan, has
turned out some exceptional wines. Many show
cassis/dark chocolate/roasted chestnut aromas,
mid-palate richness and grainy dense tannins.
The merlot-dominant Right Bank has stumped up
utterly sensational wines. St Émilion possesses fresh
cassis/plum/herb garden aromas, sinuous tannins
and understated power. The Pomerols are classical
with musky plum accents and fine chocolaty tannins.
This is a vintage not to be missed!

Australian table wine was built on ‘Claret’, a nod to the red wines of Bordeaux. By the mid 1850s
we were exporting examples to Europe to critical acclaim. Over the last 150 years we have created

Our Fortified History
– Australia’s greatest Fortified Wine regions
Until the 1960s, Australia produced more Fortified Wine than table wine. The two most important regions for Fortified Wine historically, the Barossa
Valley and Rutherglen remain the most important in terms of quality, due to the significant legacy of winemaking skills and priceless, decades-old stocks
held by a handful of leading producers. Here we briefly highlight the Fortified Wine history of each region and the styles for which each is famous.

Wine & Spirit Competition – UK 2010, Riverina Wine Show 2010
Many of the great winemaking names of
the region including Morris and Stanton &
Killeen, were established during the gold
rush of the late 19th century. The region’s
warm to hot, dry climate was ideal for
producing fortified wine, and the region
quickly established itself as Australia’s
leading wine region, at its height in
1925 exporting over three million litres
of Fortified Wine to England. Rutherglen
is most famous for Muscat and Topaque
(until recently called Tokay) unique
Australian Fortified Wine styles developed
in the region over a century ago from
Muscat and Tokay grapes.

The Barossa Valley
– Tawny and Vintage
In the 1850s, the now-famous producers
Saltram, Seppelt and Penfolds adopted
a wine fortification process to emulate the
most popular Fortified Wine styles of the
day – the Tawny and Vintage Port styles
of Portugal. The style was well-suited to
the Barossa’s warm, dry climate, and
locally available red grape varieties
Shiraz, Grenache and Mataro proved
remarkably suitable for Fortified Wine,
producing a rich, robust style albeit
distinct from those upon which they
were modelled.

Dan Murphy’s
Cellar Release
For most major Australian wine regions, other than those located in West
Australia and the Hunter Valley which experienced excellent conditions, 2007
was a challenging vintage. Frost damage in the Eastern states and high heat
in the Southern states, forcing an early vintage, were less than ideal.
However, as we can see from the wines featured here, our world-class, wellestablished wine industry is now well adept at handling the unique challenges
of each vintage, applying appropriate vineyard management and winemaking
techniques to optimise quality.
Generally speaking, most wines from the 2007 vintage (except those from
Hunter Valley and WA) are more fruit-forward than those from slower-ripening
vintages – the result of a faster ripening cycle. While this does mean that most
examples will not have the extended longevity of the so called classic vintages,
many will be great drinking now or over the next few years as medium-term
propositions at 5-10 years of age.

Islay
Uncovering the Scottish
island’s peat and power.
Islay, the fifth largest of the Scottish isles, features nine distilleries, each making
some of the most recognisable whiskies in the world. The oldest of these
producers began distilling whisky in the mid-18th century, while the newest,
Kilchoman, opened in 2005.
SCOTLAND
EDINBURGH
ISLAY
GLASGOW
Exploring Islay, Scotland
Location: Islay is the most
southerly island of the Inner
Hebrides of Scotland.
Population: Approx 3,400.
Distilleries: Islay features
nine distilleries.
Climate: From an average
low of 3.0°C in February to an
average high of 16.3°C in August.
The Gulf Stream helps ensure a
mild climate, with less frost and
snow than mainland Scotland.
Deeply traditional and not for the faint-hearted, Islay’s powerful and intensely
flavoured whiskies are thanks to the island’s abundance of peat. A decayed
vegetation, peat is a vital ingredient in the making of Islay whiskies. By using
it to fuel the fires that dry the malted barley used in their whiskies, the
distilleries of Islay create intensely smoky characteristics.
The sea also plays a vital role in the unique taste of Islay whisky, as the rough
Atlantic seas and the lingering salty air imbue the peat with a powerful taste
and aroma of salt, seaweed and iodine. Distilleries like Ardbeg, Laphroaig
and Lagavulin, with their warehouses closest to the coast, are most susceptible
to these attributes.
While there may be some common flavours and aromas across Islay, each
distiller and whisky also has their own unique attributes. From toffee and chocolate
richness, to floral white wine notes, Islay distillers can produce a broad spectrum
of flavours in addition to smoky peat and salty seawater. Although not the best
starting point for those wanting to discover Scotch, for aficionados Islay is a gold
mine of rich and powerful whisky.
Bowmore – direct from Islay’s capital.
Lagavulin – taste the tradition.
Located in Islay’s capital of the same name, Bowmore
uses a combination of dedicated craftsmen, pure
water, smoked peat and traditional manufacturing
techniques to ensure that their whisky tastes the same
as it did when it was first distilled in 1779.
This peaty Single Malt dates back to 1816, when John
Johnston and Archibald Campbell each constructed a
distillery on what today is the Lagavulin site. After Johnston
died, Campbell consolidated the two, before selling it
to malt merchant Alexander Graham. Today it continues
to uphold the traditions of its past, using meticulous
preparation to create powerful whisky.

Laphroaig – time-honoured,
Royal approved.
Founded by brothers Donald and Alexander Johnston in 1815,
Laphroaig is located on the south coast of Islay. While the distillery
has a rich history, from neighbourly disputes with fellow whisky
distiller Lagavulin, to the company changing hands several times,
the whisky’s taste has constantly remained the same – a brilliant and
powerful peaty experience. Laphroaig is the only whisky that carries
the Royal Warrant of the Prince of Wales.

Ardbeg proclaim themselves to be “unquestionably,

balance by the natural sweetness of the malt.

Dan Murphy’s Fine Wine Buyer’s Guide 13TH Edition
The
non-chill
factor
To Chill or not to Chill?
When bottling whisky, some natural residue inevitably remains
such as natural fatty acids, proteins and esters which make
the whisky appear hazy. For this reason, distilleries typically
chill filter each batch to between -10 and +4ºC, resulting in
a clear, consistent, stable product.
Some purists however, believe that chill filtering also removes
a noticeable level of aromas, tastes and textures. Opponents of
this view argue that these by-products are virtually indiscernible.
Others just enjoy the stylistic differences of both.
Non-chill filtered whisky is produced much like its chilled
counterpart – except it isn’t chilled as part of the filtration
process and is bottled at a higher minimum alcohol strength
of 46% ABV versus standard Single Malt Whisky at around
40 – 43% ABV. This higher strength brings stability to the
whisky, thereby avoiding cloudiness.
While not all non-chill filtered whisky is marketed as such,
generally a minimum strength of 46% ABV is a reliable
indicator of non-chill status.
Every Dan Murphy’s store has a huge selection of Single Malt
Whisky, so why not decide which whisky style you prefer?

Mighty Glenfiddich
Celebrating Scotland’s most famous Single Malt.
Located in the Speyside whisky region of Scotland, Glenfiddich is one of the world’s most renowned
Single Malt Whiskies. Founded by William Grant in 1886, Glenfiddich is Gaelic for ‘Valley of the deer’,
hence the deer on the label of its bottles. Today the distillery still uses carefully selected ingredients, from
the water sourced directly from the Robbie Dhu Springs, to the Scottish malted barley it roasts, to create
the whiskies complex and rich tastes. Visit any Dan Murphy’s store to view our full range of Glenfiddich
whiskies or head online to danmurphys.com.au/glenfiddich-range

Nose: Distinctively fresh and fruity with a hint of pear.

Glenfiddich 14YO Rich Oak Single Malt
Whisky 700mL 40% ABV
In 1886 William Grant enlisted the help of his family –
including his wife, seven sons and two daughters – and
began working on a distillery. Within a year that distillery
was built, and the first whisky flowed from it on Christmas
Day 1887. Over the past century, Glenfiddich has
remained family owned, and has continued the legacy
of William Grant by creating fine Single Malt Whiskies.
Nose: Initially spicy oak notes and rich vibrant vanilla.
Hints of freshly sawn wood and dried fruits, raisins and
apricots. With time some softer toffee notes appear including
caramelised pear and gentle fragrant floral aromas.
Palate: Mouth-tingling and spicy on first tasting. The rich
vanilla sweetness is followed with zesty fruit flavours and
some wood spice.
Finish: Lingers for a long time with warming oak notes.
