To Yours
Wow, I am getting really old. My baby girl just
graduated from High School. I am almost an empty
nester. Over 20+ years of raising kids that needed
100% love and attention, it is almost over? It went
way too fast. As a parent, I guess it’s never really over,
and you never stop being mom and dad but relationships change. As your kids
grow up, your relationship just matures to the next level, sometimes even more
meaningful and better. It’s called being a “grandparent.” (Yikes, I am not ready
to be a grandpa just yet.)
I’m learning it is the same in business life. Wilson Creek Winery has been our
baby that we brought to this world and raised through the years with hard work
and love. Wilson Creek’s growth has been very much like that of my own children.
What we did back in our infancy we can no longer do today. What we did in our
teenage (growing pains) years, we can no longer do today. What we are doing today
will not be good enough tomorrow. We strive to be even better than we are today.
We took on a dream with determination and passion. That passion has lead us to be
one of the leaders, innovators and most recognized wineries in the Temecula Valley.
To stay there, we need to constantly reinvent ourselves and get better at what we do
and/or the way we do it. This is what keeps me up at night and drives me to guide
Wilson Creek Winery into the future and the next generation of our existence.
We are thankful to each and every Wine Club member who has joined us along the
journey and become a part of our extended family. We strive to bring you
experiences, services and products that go far beyond your expectations. We will
be bringing you some new innovative products and different and exciting events.
One of our greatest joys is walking around the property and visiting with all
of you. We enjoy hearing your stories, challenges and accomplishments. You will
begin to meet even more Wilson family members roaming about the property as
they become more involved and mature. Their last name doesn’t afford them the
opportunity to work in the family business, it must be earned with a passionate
attitude and hard work just like our existing incredible staff.
It is pretty cool having three generations of Wilson’s working here and the
fourth generation playing around the winery. Watch for them and stop for a
moment to share your experiences.

You might recognize these talented and beautiful ladies as
co-headliners from CMT’s Next Women in Country 2015 Tour.
Now you’ll be able to see them perform live, in concert at Wilson
Creek Winery. These emerging female artists are not new to the
spotlight with chart topping songs and busy performance schedules.
Jana Kramer, former One Tree Hill star, had great success with her
first album. Kelsea Ballerini is one of three solo female acts (Carrie
Underwood and Miranda Lambert) that currently have singles in the
top 30 of USA TODAY’s Country Airplay Chart.
Singer, songwriter and musician, Craig Morgan will be performing,
in concert at Wilson Creek Winery on Sunday, August 30th, 7pm.
One of a kind, Craig Morgan’s life and career is so impressive and varied
it’s no wonder he has had so many hit songs, with so much experience and
inspiration to draw from. Craig’s life has been full to say the least, from
soldier, sheriff’s deputy, EMT, adventurer, TV host, motocross racer,
outdoorsman, farmer and family man.

Vineyard Corner ...
I recently had the great pleasure to
once again travel up North to work
on our new Explorer Series wines.
The reason for this trip was threefold.
First, explore the terroir and taste
of other winemaking regions. Next,
learn new techniques in vineyard care
and winemaking. Lastly, compare and note the difference from our local
terroir in Temecula Valley. This may all sound very technical and somewhat
tedious, but in secret I always jump at the chance to go inspect vineyards and
do some wine tasting!
I had our great team with me including Greg Pennyroyal, our Vineyard
Manager, to help finalize production of some real gems from the 2014
vintage that truly speak of their region. We were also working on vineyard
selection for wines to be produced from the 2015 vintage which you won’t
get to taste until late in 2016, but we’re still working on them!
One of the wines you’re going to love is the Russian River Valley
Chardonnay. This part of Sonoma County is know the world over for great
Chardonnay. They show characteristics of “Old World” Chardonnay style
secrets of the vine
with bright and crisp acidity as well as the “New World” style of full and
vivid fruit. This Explorer Series Chardonnay is a true gem from the Russian
River Valley. This Chardonnay shows beautiful, ripe fruit ranging from pear
to apple with overtones of Meyer lemon. On the palate this wine is subtly
rich with the flavors mimicking its aromas, but with enough bright acidity
to keep them focused. We’ve really been excited seeing this wine develop in
barrel!
We’ve also been working on a few red wines with true terroir
expression. The first one we’ll be sharing with you comes from the Santa
Rita Hills AVA. The vineyard enjoys the constant cool Pacific Ocean breeze
and nightly fog, necessary ingredients to produce a well-structured and
balanced Pinot Noir in California. This Explorer Series Pinot Noir is an
outstanding example of the region’s terroir expression.
Pinot Noirs by nature are a delicate wine reminiscent of a string
quartet. All the necessary components are present with no extra baggage.
The subtle aromas of berries and cherries are ever present. True to Santa
Rita Hills terroir this wine is driven by its acidity followed closely by
the delicate fruit flavors of raspberry, tart cherry and French Oak spice.

Oh faithful readers of the vineyard
column, ye have heard me discuss
the importance of terroir, the unique
combination of climate, ecology and
craft, as a defining characteristic of
what makes craft wines so special.
We are not alone in our desire that
the business of wine supports the
craft of place, as demonstrated by Randall Grahm as he continues:
“Wines of place connect you with the earth, they provide a deep, more
emotional connection. I think they are more nourishing whether richer in
minerals or antioxidants. I can’t prove this but they seem to have more life.”
We see our tribe of craft winemakers as a family each exploring the potential
of their specific terroir. As Wine Club members we also see you as a member of this band of explorers. As mentioned in the last newsletter, we share
our craft wines of place with other like-minded winemakers but do not
come home with enough wine to share with the rest of our tribe, the Wine
Club. That is until now.
Gus and I have a stated goal of being the leaders in wines that express
the terroir of the Temecula Valley. We have been quietly working with other
craft regional vineyards and wineries that produce wines of exceptional
terroir to co-develop a unique selection of wines that demonstrate the
terroir of different regions and can now remove our Groucho glasses
disguise in announcing our Explorer Series.
The first of these co-ventures is a 2014 Russian River Chardonnay.
The Russian River is an uninterrupted connection between the cold Pacific

Ocean north of Bodega Bay and the hot dry climate of Mendocino County.
As the cool moist ocean mineral laden air is pulled inland it settles in the
valley floor with its mix of volcanic and alluvial soils creating a rich tapestry
of mezzo climates (micro climates are the areas under the vine) and
mineralized soils. The vineyard we choose has a combination of cold fog
laden mornings followed by hot interior sun and heat to make for a
Chardonnay which is a great juxtaposition to the rich mouthfeel and ripe
fruit of our WC “Yes Dear” Chardonnay.
The second wine is a 2012 Santa Rita Hills Pinot Noir. Most
California coastal regions have mountains that run North-South due to the
impact of uplifts in the Pacific Tectonic Plates. Santa Rita Hills started out
this way but the plate is sandwiched between several faults so that in just 12
million years it is now the most predominate East – West facing range from
Alaska to Chile. This orientation brings a cool maritime influence inland
combined with rich limestone ancient sea beds. Although made famous
by the movie Sideways, this region has earned its reputation as one of the
world’s premier Pinot Noir regions. The steep hillsides keep the vineyards
out of the valley floor fog bathing the vines in plenty of light while blasting
them with cool maritime air. Tough vines make great Pinot. The vineyard
we’re working with is among the steepest and you can see the ocean less
than 10 miles away from the top of the hill.
We are thrilled to bring this new opportunity to share our love of great
wines. I look forward to seeing you at our next Wine Club event, Wine
Academy or just visiting the winery so we can enjoy an ever increasing range
of wines and talk terroir!

Exclusively for our Wine Club Members
We in the wine business are a lucky bunch. We have the
delightful responsibility of keeping abreast of trends in the industry.
This often requires us to travel to different regions visiting vineyards,
meeting with fellow winegrowers and tasting wines. Small wineries
like to help each other by sharing what we’ve learned.
We really don’t see each other as
competition, but rather brothers in arms
trying to battle against Mother Nature in
the vineyards and tame the mysteries of
biology in the cellar. We know that there’s
plenty of space in the world for great
wines from different places. We all share
the common bond of trying to emphasize
the uniqueness of a particular varietal,
grown in a particular place.
It’s this last idea, a particular
varietal, grown in a particular place
that is the cornerstone of a new series
of wines we’re bringing exclusively
to our Wine Club members. As part
of our education we’ll blind taste five
wines from five regions. For example
we’ll taste Chardonnay from our
estate, from wineries in Santa
Barbara, Monterey, Napa and Sonoma.
What we’ve learned over the years is that there is no single
best Chardonnay. There can be many best Chardonnays, just
from different regions. Each is a unique expression of Chardonnay
because of the terroir from the place it’s grown and the way that
the winemaker chooses to emphasize that terroir.
Our new Explorer Series of wines will give our Wine Club
members the same chance we at the winery have had to examine
wines that are grown in other regions. Behind the scenes we’ve been
partnering with growers and a custom crush winery up North to
grow grapes and produce wines to our specifications. We’ve been

making these wines at the highest quality level to deliver to you
archetypal examples of a particular varietal, grown in a particular
place. Each wine will be only be available for a limited time in
limited quantities and then we’ll move on to another varietal from
another place.
You will have fun comparing and contrasting the wine
with a wine we already make here from our estate, like
Chardonnay. In your special Christmas in July shipment
you’ll get our 2014 Russian River Valley Chardonnay which
is an archetypal cool climate Chardonnay. This wine will be
exciting to compare to our brand new barrel fermented 2014
Family Reserve Chardonnay
from our estate. We bottled both
of these wines this May and we
think they’re both going to blow
you away!
In other cases we’ll share with
you a wine we don’t, or can’t,
grow here at Wilson Creek – like
Pinot Noir. Our Mediterranean
climate isn’t well suited to
growing Pinot fruit, so we’ve
sourced some of the best stuff out there from Santa Rita Hills in
Santa Barbara. The cult wines from this region are some of the
most highly rated and you’re going to love our 2012 Sta. Rita Hills
Pinot Noir.
It’s taken us some time to get these wines together and you’ll
see more of them in the fall. Without giving away all our secrets, get
excited to taste things like intense and powerful Petite Sirah from
the Sierra Foothills, crisp and fruity Sauvignon Blanc from Santa
Barbara, Sparkling Shiraz just in time for the holidays, and even an
Oakville Cabernet around a year from now.

24 medium peaches, peeled wedge cut
4 cups granulated sugar
1 cup water
1 Tbsp ground cinnamon
Combine peaches, sugar, water and cinnamon in a saucepan.
Bring to a boil. Turn down and simmer for 10 minutes.
Cool. Transfer to canning jars, filling them 3/4 of the way.
Refrigerate to cool.

Light in color yet full in flavor. Aromas of honeydew melon, honeysuckle and
pear come to mind. Flavors reminiscent of pear, peach and tropical fruit, balanced
with its acidity lingers to the finish. Serve with spicy Thai, curry spiced dishes, fruit
vinaigrette salads with goat cheese.
Late Harvest Zinfandel

This Late Harvest Zinfandel has a distinct, rich, red-purple color. Aromas of ripe
cherries, dried currants, spice and raspberry jam play on the nose. Whereas the
flavors of blackberry jam, black currant and oak spice play on the palate. The wine
is full with ample structure to age well. Pairs well with any chocolate based desserts
such as chocolate mousse and flourless chocolate cakes. Also goes well with blueberry
cheese cakes and the classic, strong cheese and fresh fruit.
Sparkling Sangria Wine
Data: 80% Chardonnay | Alc: 11%, PH: 3.29, TA: .47, RS: 7%
The Sparkling Sangria has a lush purple-violet fuchsia color. Designed for a broad
range of palates, this Sparkling features a taste medley straight from the Southern
Mediterranean with a fresh nose of lemon, lime and orange zest, and a smooth
finish of ripe, red berries, cranberry, pomegranate and a hint of blood orange.
