Dear Friends and Fellow Oenophiles,
Wally and I, along with our wonderful committee of food
and wine aficionados, are delighted to welcome you to
Collective Spirits 2013, the Bascom’s 7th (we must be
lucky!) annual wine and food festival.
Each year Collective Spirits takes on a life of its own,
along with the “personality” of its committee. It brings new
and old friends, wine enthusiasts and foodies together to
celebrate the first big event of The Season in Highlands and
Cashiers, and it certainly has proven to be an event not to be
missed. The Bascom has become an integral part of life on the
Highlands-Cashiers Plateau and your support of this year’s
Collective Spirits helps ensure that all residents and visitors to
our community will have the chance to be uplifted by art.

LINDA & HINES BRANNAN ~ Cullasaja Club
With a unique view of Whiteside Mountain, this family retreat
feels every bit a mountain lodge that has gracefully aged with
time. A full roster of young talent will grace the lineup for this
evening including Chattanooga Chef Daniel Lindley of
St. John’s Restaurant with wines from Loosen Brothers, Falcor
Wines and winemaker Chris Bratcher and his Bratcher Wines.
CATHRYN & BILL BRITTON ~ Bowery Road
Inspired by the Eseeola Inn in Linville, this home boasts a massive stone fireplace and floor-to-ceiling windows with views over
Horse Cove and Whiteside. Chef Elliott Moss of Ben’s Tune Up
in Asheville will match culinary prowess to the incredible talents
of Special Guest of Honor Rick Sayre, winemaker at Rodney
Strong, and Robbie Meyer's Peirson Meyer and L'Angevin wines.
BILLINGS & JOHN CAY ~ Chattooga Club
Featuring reclaimed barn wood, old beams, and with views of
Chimney Rock, the Cay home will offer a flavorful evening
featuring the cuisine of renowned Chef Susan Spicer alongside
wines from vintner Robin Lail's Lail Vineyards with French
selections from Pignatello Wine Imports.
HEATHLAND ~ Bowery Road, Highlands
Located halfway up Big Bear Pen Mountain, Heathland offers
a distinctive backdrop for culinary discovery with Chef Patrick
Owens of Opal in Charleston alongside winemaker Joseph
Davis of Arcadian Winery and an array of vintages from the
Wager Family of Wines.

The McAlister home with its warm aesthetic and open floor plan
sets the stage for gastronomic greatness. Welcoming Chef Sean
Brock of Husk in Charleston to the kitchen, and eagerly anticipating wines from Failla Wines and Tuck Beckstoffer, this
evening promises to be nothing less than unforgettable!
DIANE & RAY McPHAIL ~ Ravenel, Highlands
Built in the early 1900's, Wolf Ridge was sited to enjoy breathtaking views. This evening features Chef Chris Hall of Local
Three in Atlanta and wines from John Anthony and Michele
Truchard and their JA Vineyards along with offerings from
Oregon’s Solena Estate.
CINDY & BILL VOYLES ~ Cullasaja Club
Among the trees and calming mountain surroundings, the Voyles
home offers respite from every day hustle and bustle. For this
evening, gustatory genius is on tap from New Zealand native Chef
Regan Browell of the Willcox Inn in Aiken. Gabrielle Leonhard
will pour from her Gabrielle Collection alongside Axel Schug and
his family’s Schug Winery and rounding out the wine trifecta —
vintages from Oregon’s Elk Cove Winery.

CHEF SEAN BROCK ~
McCrady’s and Husk, Charleston
Sean Brock was born and raised in rural
Virginia and it was the experience of his
family growing their own food that left a
lasting impression. He began his professional
career under Chef Robert Carter at Peninsula Grill and then
became executive chef at McCrady’s in Charleston. Sean
opened his second restaurant—Husk—a celebration of Southern ingredients, serving only food that is indigenous to the
South. He was nominated in 2008 and 2009 for the James
Beard “Rising Star Chef” award and in 2009 and 2010 for the
James Beard “Best Chef Southeast” category, winning the award
in 2010. He was nominated for the James Beard “Outstanding
Chef” award in 2012. Bon Appétit magazine named Husk “Best
New Restaurant in America” in September 2011.
CHEF REGAN BROWELL ~
The Willcox, Aiken
Hailing from the city of Wanganui on the
North Island of New Zealand, Regan Browell
grew up with direct exposure to old fashioned home cooking—today, that serves as
the backbone of her culinary training. After culinary school,
Regan landed in London at “a very classy gastropub,” the Electric Brasserie. After returning home to New Zealand, she joined
restaurateurs Geoff and Shannon Ellis in the creation of their
restaurants Rain and Nextdoor. When the Ellises offered her the
opportunity to join their team in Aiken, South Carolina, she
jumped at the opportunity to be a part of The Willcox. Regan’s
menu at The Willcox is not particularly Southern. The ingredients, however, are as fresh and as local as can be while reflecting
her international flair and a passion for offering flavors to
match the exemplary hospitality at The Willcox.
CHEF CHRIS HALL ~
Local Three, Atlanta
Chris is both chef and managing partner
at Local Three in Atlanta. A self-taught
cook, Chris worked in kitchens from
Philadelphia’s Le Bec Fin to Atlanta’s
Canoe and 4th & Swift before opening Local Three in 2010.
He is active in charity work concentrating his efforts on a
new project called The Giving Kitchen, which is a nonprofit funded by Hall and his partners’ soon-to-be fourth
restaurant venture, Staplehouse. The Giving Kitchen offers
financial and other support to those in the hospitality
industry affected by crisis or hardship.

CHEF DANIEL LINDLEY ~
St. John’s Restaurant, Chattanooga
Chattanooga native Daniel Lindley discovered his passion for cooking as a teenager.
After working in local Chattanooga restaurants, Daniel cooked aboard a hospital
ship in Europe and West Africa. He also worked under
Chef Terry Harwood and Tom Colicchio in New York before
returning home for the opening of St. John’s in 2000.
Daniel's commitment to the bounty and heritage of the
Southeast has made St. John's a top dining destination.
He is also chef and owner of St. John's Meeting Place and
Alleia Restaurant. He has received four nominations for
“Best Chef Southeast” by the James Beard Foundation.
ELLIOTT MOSS
Elliott Moss is chef and owner of two forthcoming restaurants in Asheville, NC. Ben’s
Tune Up, opening in June will feature his
star-spangled take on Japanese dishes and
later this year Chef Elliott will man the
smoke house at Buxton Hill where he’ll serve up his fresh and
flavorful southern staples. This year he received a coveted
nomination for the James Beard Foundation's “Best Chef
Southeast” award.
CHEF PATRICK OWENS ~
Langdon’s and Opal, Mt. Pleasant
Charleston native Patrick Owens has deep
roots in the local culinary scene. At 27, he
opened his first venture, Langdon’s, with
the goal of serving delicious, well-executed
food in a refined, fine dining setting. Langdon’s continues
to garner praise, earning AAA’s Four Diamond award every
year since opening. With Opal, a more causal, Mediterraneaninspired restaurant, he aims to bring the same level of service
and attention to detail as he has done with Langdon’s.
CHEF SUSAN SPICER ~
Bayona, New Orleans
Susan Spicer began her cooking career in New
Orleans at the Louis XVI Restaurant in 1979.
After traveling extensively in California and
Europe, she returned to New Orleans where
she formed a partnership with Regina Keever and opened Bayona in a beautiful, 200-year-old cottage in the French Quarter.
Bayona has been featured in numerous publications such as
Food and Wine and The New York Times. In 2010, Susan was inducted
into the James Beard Foundation’s “Who’s Who of Food and
Beverage in America.” Her latest project is the opening of
MONDO, a casual, family style restaurant which opened in 2010.

Nestled in the Blue Ridge Mountains, only a little over an
hour from Highlands and Cashiers, Asheville has become
a mecca for those who love food, wine, beer and art.
For this package, two of you will enjoy two nights at
the historic Grove Park Inn. Celebrating 100 years this
summer, Grove Park is known as one of the best resort
weekend getaways in the country. Along with deluxe accommodations, you'll partake in a feast one evening at Sunset
Terrace or the Horizons Dining Room — both serving
innovative versions of classic American cuisine using fresh
ingredients from local farmers alongside award-winning
wine lists. Additionally, you will receive a spa day pass and

GUEST AUCTIONEER
GREG QUIROGA is a professional fundraising auctioneer
with the renowned Reynolds & Buckley fundraising auction
firm. Born to Cuban and Swedish parents, Quiroga has
always been fiery, fast-talking and passionate. Those traits,
combined with his love of performing and his commitment
to helping make a difference in the world, set him apart as
one of the most exciting fundraising auctioneers in the
United States. This is his fourth Collective Spirits event for
The Bascom.
Quiroga has worked with many charitable organizations
and schools across the country, including Sun Valley Center
for the Arts Wine Auction, Taste of Vail Food and Wine Festival, the Central Coast Wine Classic, Howell Mountain Vintners & Growers Association’s Taste of Howell Mountain, Napa
Jewish Vintners Association’s Jewish Vintners Wine Trail, and
International School of the Peninsula’s Soirée du Vin.
A graduate of the University of California, Berkeley,
Quiroga is a longtime resident of the Bay Area. He has
worked as a professional auctioneer and ringman since
2001, and committed himself solely to fundraising in 2003.
Since joining Reynolds & Buckley in 2004, he has become
a force on the national fundraising auction circuit.
Quiroga is an avid golfer and he writes about golf in San
Francisco for Examiner.com. He and his wife, Michele, live
in San Francisco with their son Ryder.

6L Bottle of 2006 Ramey Larkmead
Cabernet Sauvignon
Thanks to our generous friends at Ramey for this gorgeous
bottle of extraordinary wine! Winemaker David Ramey
surmises that Ritchie Creek, separating the Spring Mountain and Diamond Mountain appellations, once ran
through the historic Larkmead vineyard site, resulting in
the prominent gravel and excellent drainage which distinguishes this vineyard. Tanzer called this “big boy pretty
graceful,” and he gave the wine 91 points. Parker gave it 92
points, said it was “extremely promising” and he added,
“With sensational fruit on the attack and mid-palate, and a
finish filled with power, glycerin, depth, and impressive
structure, this 2006 will benefit from 2-3 years of bottle
age, and should evolve for two decades or more.”
The bottle is beautifully etched and bidders should notice that not only is it handsome in its stature, it's number
12 of only 12 made — just another factor making it special!

We are pleased to welcome Joe Davis and his Arcadian
wines back to The Bascom this weekend. Joe makes
Burgundian style Pinot Noir, Syrah and luscious
Chardonnay from California's Central Coast vineyards.
Joe brings with him a good friend and fellow winemaker Chris Bratcher, who also makes Chardonnay, Pinot
and Syrah from Santa Lucia Highlands, Santa Maria Valley
and Los Alamos. Chris and Joe share winery space in
Lompoc and Chris has a retail wine shop just down the
mountain in Chattanooga.
When we mentioned the idea for this dinner to Chris
and Joe, they both piped up saying that Daniel Lindley was
the man to Chef the dinner. Daniel is chef/owner of St.
John's Restaurant in Chattanooga and he joins us also for
the first time this year to chef the dinner at the Brannan
home! St. John's Restaurant emerged in the fall of 2000,
shifting the dining landscape in Chattanooga. Guests from
around the world come to take pleasure in the quality,
ambiance and attention to detail St. John's graciously
offers. Reflecting seasonal and local flavor, Lindley's menu
evokes a sense of comfort and purpose.
For your dinner, Joe and Chris will return to Highlands/Cashiers if they are able, and Chef Daniel will come
up the mountain to prepare a fabulous feast for 12 guests
in your home. Joe and Chris will provide an array of outstanding wines to pair with Daniel's cuisine. Rest assured
your evening will sparkle and shine with all the elements of
superior hospitality and flavor.
BEAVER CREEK - Four nights in three bedrooms. People travel to Beaver Creek, Colorado from all over the
world and many make it a tradition. The drama of rock and

Spirits. This year will be no exception. For one magical
evening, 12 guests will enjoy a food and wine extravaganza
in the spectacular setting that is Lonesome Valley. The
largest box canyon in the East, Lonesome Valley spreads
out between two majestic granite mountain walls: Cow
Rock and Laurel Knob. Amidst stunning grandeur,
Canyon Kitchen is nestled in the heart of Lonesome
Valley and offers amazing views as well as award-winning
hospitality as presented by its owner, Sally Eason, and its
chef, the renowned John Fleer.
No stranger to the Plateau, Chef Fleer made his name
while leading the culinary team at Blackberry Farm. Since
leaving Blackberry, Chef Fleer has worked on several projects, including overseeing the kitchen at Canyon Kitchen.

Bidders beware! With humble beginnings as an opportunity to "name" the wine for the season at The Bascom,
this lot has become a coveted part of welcoming summer
in Highlands and Cashiers. Thanks to our benevolent
partner Axel Schug and his family's Schug Winery, the
winners of this lot will not only get to "name" their wine,
they will travel to California and spend a day at the winery
to barrel sample and select their own white wine and also
a red! Your wine will then be bottled, and labeled with a
label of your creation, and served throughout the 2014
season at The Bascom.
Two of you will enjoy round-trip airfare into San Francisco courtesy of Delta Airlines. Once in wine country,
you'll be stationed at the lovely new Westin Verasa hotel for
up to three nights. Centrally located near the town of Napa,
the contemporary hotel features spacious rooms with custom built furniture in colors inspired by the California
landscape. One day, you will meet up with Axel at the winery
and enjoy a tour and tasting and wine lunch as well as a special barrel sampling to determine the white and red wines
that will proudly sport the label of your creation and be
poured throughout the 2014 season at The Bascom. This

A dynamic regional arts center set in a breathtaking natural setting, The Bascom serves audiences of all ages in
Western North Carolina and beyond with celebrated exhibitions, topnotch programs and nearly 400 annual classes
and workshops. There is no admission for gallery exhibitions, as The Bascom believes that all residents of the
Highlands-Cashiers plateau and visitors to this community
should have the chance to be uplifted by art. This
evening’s paddle raise will help ensure that The Bascom
continues to touch hearts through art with a wide range of
programs that reach out to all communities across the
Highlands-Cashiers plateau.
Outreach funding helps ensure that The Bascom's exhibitions, classes, and collaborations are accessible to people
of all ages, backgrounds, physical and mental abilities. It
also ensures that people from various parts of our region –
some traditionally underserved in the area of visual arts –
can connect through art. Outreach partners include the
Highlands Literacy Council, International Friendship Center, Highlands High School, Blue Ridge School, Summit

Decor, and Garden & Gun magazines. Sally grew up in Atlanta,
frequently traveling and attending art openings, exhibits,
and design shows, seeking inspiration from the work of both
past and contemporary artists. She completed her education
at The College of Charleston in 2007 and has traveled
extensively to South America and Europe honing her eye
and trademark ability to create visual texture with a rich,
adventurous color palette and expressive linear techniques.
When asked about the inspiration for this piece, she admits to having been completely taken with the landscape in
Napa Valley on a recent visit with her brother. “Being there
was one of the best eating and drinking experiences of my
life, and I tried to capture that magic in this composition!”
