The Aligot takes its origins from the Middle Age, when the monks of Aubrac
were feeding the pilgrims of St Jacques de Compostelle, with a dish mixing
bread and cheese.
The farmers then adapted this recipe in the 18th century, replacing the
bread with potato.
Inheritor of these farmers, the Coopérative Fromagère Jeune Montagne
perpetuates this tradition, by producing the traditional raw whole milk fresh
Tome and whey cream.

Created in 1946 by a group of farmers from Therondels village, which stayed
independent until today, this cooperative is specialised in the production

The ewe’s milk used to make the roquefort is collected from 75 farmers, all
