Industry History
Like many teenagers, Staci Basore’s first job was in the food industry and she “continued this fine tradition through college
advancing to bartending.” After travelling cross country for some time, Staci settled in Washington DC where she was hired as part of
a management team challenged with the feat of opening the first 24 hour bookstore, café, and gallery. The kick-off celebration included
a sunset to sunrise party catered by 704, a restaurant where Qui Musarra was the executive chef. Rosemarie “Qui Qui” Musarra
attended Vassar College and then the Culinary Institute of America in New York City. Upon graduating, she worked for restaurants
around the world including the Caribe Hilton in San Juan, the Ritz Madrid, and The Monocle in DC, just to name a few. After
meeting, Staci and Qui went on to travel the world, each pursuing their own culinary adventures. Unbeknownst to each other, they both
ended up living in Harrisburg, Pennsylvania where they reconnected and joined forces to create Mangia Qui.
About the Business
Their intent was to offer food that spoke to them. Qui has traveled extensively throughout Europe, speaking Spanish, Italian,
French, and Portuguese. Based on her travels, Mangia Qui infuses European cuisine and “celebrates old-world methods of cooking that
are reflective and respectful of the culture and region of which the food hails.” Over the years, Qui and Staci continued to improve upon
the space and in 2007 opened Suba Tapas Bar on the second floor of the building. In addition to offering cuisine “from the Alps to the
Islands,” Mangia Qui does a very good brunch business on Sundays, being one of the only restaurants in Harrisburg that offered this
for some time. A few months ago, the team purchased the building next door and opened Rubicon in early September. Rubicon continues the European theme by focusing on French cuisine and specialty cocktails and is proving to be quite popular with the locals.
Giving Back
Since the beginning, Qui and Staci have been proponents of using fresh and local ingredients. They are also big contributors
when it comes to giving back to their community, providing support wherever they can. As a result, they have developed their happy
hour at Suba with the community in mind and donate a percentage of sales to a different local non-profit each month. “Eat Local, Give
Local” happy hours have provided support to the following organizations; The Ecumenical Food pantry, Sharing Our Caring, Harrisburg Rain Barrel Coalition, Susquehanna Art Museum, Downtown Daily Bread, Alzheimer’s Association, Channels Food Rescue,
Dress for Success of Central Pennsylvania, Inner City Outings, plus more. The next time you visit the capitol of Pennsylvania, be sure
