Santoku knife
Use for precision slicing of delicate meats,
fish and vegetables. The scalloped blade
prevents food sticking to the knife.
Vegetable knife
Perfect for peeling vegetables, this knife
has a flat blade edge which enables
peeling over the full blade length
Carving knife
For carving and slicing meats, larger fruit and
roast meats. It is longer and thinner than a
cook’s knife for precision cutting of thin slices.
All purpose knife
A versatile favourite knife used to cut,
slice and trim meat, vegetables and
even sandwiches.
Bread knife
Features a rigid blade with wide
serrations to cut into the crust and slice
without tearing the bread.
Serrated utility knife
Use for preparing tender fruit and
vegetables. The sharp serrated edge cuts
through soft skin and flesh without tearing.
Filleting knife
A flexible knife with a narrow blade for
sliding under and around bones, skinning
meat poultry and fish.
Boning knife
The narrow blade helps the boner to
negotiate the complex profile of bones.
Slicer
A long relatively flexible blade used to
negotiate large joints of meat in one pass.
Cooks knives
The most versatile knife in the
kitchen. The wide blade enables the
user to rock the knife when dicing
fruit and vegetables, while the deep
heel protects the knuckles.

Taylor’s Eye Witness are a long standing family
business who have been producing high quality
kitchen knives, scissors, cutlery and pocket knives
in its Sheffield factory since 1838. The Grade II
listed building is now believed to be the only
traditional works remaining in Sheffield which still
manufactures its original products. Employing
highly skilled Sheffield craftsmen and with a
knowledge base which is unrivalled, they have
stood the test of time through an unrelenting
dedication to quality, service and good old
fashioned technical know-how.

This knife is the culmination of 175 years of
experience and dedication. Inspired by the tools
and cutlery we were producing in the early 1900s,
we set about bringing some of that tradition and
heritage up-to-date with a design that combines
modern production techniques with the
expertise of our craftsmen.
Sterling Series
The blades are made using high quality
Chromium Molybdenum Vanadium stainless
steel, which are hardened and tempered before
being precision taper ground. The moulded
handle is finished by hand for a tactile, pebble like
feel. Each knife is then sharpened by hand and
individually tested before leaving the factory.

‘Industrial Facility’, the Sheffield Made Forged
range was designed by Royal Designer for
Industry Sam Hecht.
Forged Series
The high-carbon stainless steel blade is a
combination of carbon, chromium,
molybdenum and vanadium paired with a
handle which takes a simple look at
functionality. Winner of many design awards,
including an iF Gold Award and Design Plus
Award, this knife is a modern day classic.

Heritage Series knives are equally at home in the
modern or traditional kitchen. The full tang blades,
made from a single piece of high carbon stainless
steel, are precision ground to provide excellent
strength, flexibility and lasting sharpness. The
handles are shaped to fit perfectly in the hand, the
endstop preventing the knife from accidentally
slipping. Each is secured with three solid brass
rivets and hand finished in the same tradition as
they have been for generations.
Heritage Series scissors and shears are retro
classics evoking childhood memories of grandma’s
sewing tin. Hot forged from a single billet of high
quality stainless steel, Heritage Series scissors and
shears are precision ground and finished entirely by
hand. Each individual scissor is hand tested in our
Sheffield Factory to ensure the perfect cut from
pinch to point.

Our Sheffield made scissors make cutting a
snip. The handles are moulded directly onto
the stainless steel blades and are shaped for
comfortable left and right handed use, all
tested twice before leaving the factory.
