Welcome to our Adult & Community Education brochure for the 2015 fall semester. Our goal is to offer quality courses at an affordable price. It is our hope you will find a class inside these pages to meet your individual needs. Enroll whenever you want and

The Adult & Community Education program operates through Lake Career & Technical Center (LCTC), which is part of the Camdenton R-III School District. The Adult Education & Literacy program is also housed in our building and offers instruction to
individuals wanting to earn their High School Equivalency (formerly GED) and those who need help to reach their educational and
employment goals.

If you would like to offer a class through Community Education, give our staff a call at 573-346-9271. We will talk with you about
your ideas and help you design a class. You do not need a teaching certificate, just an interest in sharing your passion with others.
What is our Refund Policy?
• Full refund will be made if the class is cancelled due to insufficient enrollment or the class is filled before your registration
is received.
• Each class needs a minimum enrollment, which is decided at least two working days before the start of class. Thus, withdrawal requests must be received three working days prior to start of class. Refunds will be processed minus a $5 cancellation fee.
• If you are dissatisfied with a class that meets more than two sessions, please contact us within one working day for a refund
of tuition minus a $5 processing fee (no refund of textbooks or materials).
• Course information in this brochure is based on conditions at the time of printing and is subject to change.

Chef Wilson
Jackie Wilson moved to the Lake eight years ago, once her children moved away from
home. She now lives on the same land that her grandfather purchased in 1963. She spent
most of her childhood summers with her grandparents, and now she continues the tradition with her grandchildren.
Chef Wilson has 24 years teaching experience with the last eight being at Lake Career
& Technical Center. She was named LCTC Teacher of the Year in 2011 & 2012, Camdenton
R-III District Teacher of the Year in 2012; and she was a Missouri State Teacher of the Year
finalist in 2013.

Artisan Chocolate Bonbons

If you’re looking for that special something this holiday season, this is it. Learn to make delectable artisan chocolate bonbons with soft centers like those you buy from the best chocolatiers for $2.00/piece and up! Class
members will learn to temper chocolate, create soft cream centers, and
apply designs with transfer sheets.
The instructor will also demonstrate other applications for tempered chocolate. Wow everyone on
your list with the professional candies you create! Each class member
will take home one dozen bonbons.

Homemade Liqueurs

Liqueurs, also called cordials, have long been produced
and enjoyed as aperitifs, in mixed cocktails, and in cooking. Though commercialized production of popular liqueurs
such as Amaretto, Chambord, Grand Marnier, Kahlua,
and Lemoncello has discouraged many from making these
at home, the basic process is very easy and inexpensive.
Learning this process will open your imagination to endless
possibilities. Start now and you will have some wonderful and unique liqueurs to offer family and friends in time
for the holidays. Each class member will take one liqueur
home, along with recipes for many more. (2.5 hours)

The Herbal Kitchen
mixing methods, and proper techniques; and you will learn how to
produce memorable breads quickly and easily in your own kitchen.
Come enjoy an evening of baking as we prepare biscotti, muffins,
scones and, as a special treat, pancakes with homemade syrup! Class
members will each take a box of samples home. (2.5 hours)

Herbs have been cultivated, harvested, and used for centuries throughout the world, for everything from cooking
and medicines to soaps and home decorations. While
we still have fresh herbs in the garden, come learn
how their flavors and fragrances can enhance
simple preparations in the kitchen, including
oil and vinegar infusions, butters, salads, vinaigrettes, and beverages. Class members will
try several samples and will leave with a vinegar, butter, and vinaigrette, as well as recipes.

Cast iron cookware is easy to use once you know how!
We will guide you in the use of cast iron cookware and answer questions you may have while
preparing (and eating!) some delicious Dutch oven
recipes together. This class is appropriate for
beginner or novice cast iron cooks, as well as
experienced cooks. One of the advanced
cooking topics covered will include baking in Dutch ovens. Students are welcome to bring their own Dutch ovens,
recipes and ingredients, and the instructors
will help you prepare them. Please dress appropriately as we will be cooking outside. (3 Hours;

Is it Possible to Have a Nice Lawn in the Ozarks?
Landscaping Your Home
The answer is YES! LCTC Horticulture Instructor Jeff Kitchen will
talk you through the steps to properly start and maintain a lawn in this
difficult terrain we call The Ozarks. He’ll discuss soil testing, fertilizers, types of grass, and many other points. If you follow his guidelines,
you too can be proud of your lawn. (2 hours)
Not certain what to plant or where to plant it to make your landscape attractive?
This class will cover all aspects of home landscaping, including plant selection,
planting, pruning and design. (2 hours)

hottest trends in the beading world right now! We will create a bracelet using

This class is set up for a variety of woodcarving skill
levels. Students who have never carved will learn basic techniques, while those with basic skills will learn
advanced techniques. Professionals with the Lake of
the Ozarks Woodcarvers Club will walk you through

Adirondack Chair, Anyone?

This hands-on class will cover the basic concepts of woodworking, to include the use
of the miter saw, table saw, band saw, router and using jigs to assist in assembling a
chair. The Adirondack chair being built is a design by former lake area resident and
Lake Area Woodworkers Guild member Harold Haines, who retired from a career
as a prosthetics engineer. The “Haines Chair” has been through a number of design
enhancements, and it is much more comfortable than the typical Adirondack chair.
Finishing options will be discussed; general shop and tool-specific safety will be emphasized. Cost of materials included in class fee. (6 sessions)

iPad/iPhone Intermediate
iPhone Photography Basics
This session is for users who feel comfortable with the basics of the iPhone
or iPad but would like to learn more. If you don’t use many of the features
that have been added in the last few updates, join us for a fun evening exploring the many possibilities that go beyond the apps you use every day.
Share tips and tricks with other users. Investigate free and paid apps. Students are encouraged to bring their own device. (2 sessions).
Learn the basics of taking fun and interesting photos with your iPhone. Topics covered include basic elements of camera, time-lapse, panoramic, HDR,
exposure, focus, white balance, editing with the iPhone and other apps, and
the fundamental elements that make a great iPhone photo. Students must
provide their own phone – iPhone 4s or later with iOS 8.1.0 or later. Note:
iPhone 4s and iPhone 5s may not support all features. (2 sessions)

become Jeff LaHay’s passions. Crappie fishing is his favorite, and he has learned a lot

Paul Leahy
As a Class A PGA Professional since 1991, Paul Leahy fills a niche for LCTC’s
Community Education Program teaching others how to improve their golf game. Paul
started at Tan-Tar-A in 1989 and worked his way up to his current position of Director of
Golf in 2001. He has also been a contributing writer for Lake Lifestyles Magazine since
2008.

that contain meaning for them and for other members of their family. What happens to your personal
belongings when you die? Who decides who gets
Dr. Travnichek is currently a Regional Family Financial Education Specialist in
six West Central Missouri counties for University of Missouri Extension. She focuses
her programming efforts on financial management for all audiences, youth and money
issues (Pre-K – beyond 12th grade), and specialized financial management topics related to retirement planning, estate planning, and using technology. Her hobbies include
reading, camping/fishing, spending time with family and friends.

not in a consumer’s best interest, often using targeted, aggressive tactics and false claims, or failing to disclose all terms and costs up front. Using
alternative lending sources can increase the cost of
buying an item 2 to 5 times more. (2 hours)

organized system for keeping your family’s important records will save you time, trouble and
frustration in the future. It may take time to set
it up initially, but the benefits are well worth the
investment. Keeping good records can actually
save you money on the amount of taxes you pay.

Missouri Concealed Carry Class
Basic Handgun
The Concealed Carry Weapon Course is designed to
meet the training requirements to carry a concealed
firearm. Students (minimum age 19) will learn how
to keep a firearm in the home, firearm safety, cleaning and methods of carry. Class will cover the Missouri use of force laws, Castle Doctrine, judgmental shooting, principles of marksmanship, stoppage
clearing, reloading, etc. Students will qualify with a
semi-auto or a revolver. If you do not have a firearm,
one will be provided (.38 or .40 cal and the student
will need to provide the ammo). If you have questions, call Sergeant Brashear 573-836-0567. There
will be a lunch break before range qualification (you
can either bring a lunch or drive off campus).
Equipment Needed:
• Handgun – a semi-auto pistol or a revolver
• 50 rounds of ammunition
• Hearing & eye protection
Qualification portion held off campus; range fees
included in tuition. (8 hours)
The Basic Handgun course is designed for the beginner or advanced shooter. Students will be taught
the fundamentals of pistol marksmanship – proper
stance, grip, draw stroke, sight alignment, trigger
press, loading and unloading, reloading techniques,
and malfunction clearing. There will be classroom
instruction, a lunch break (either bring your own or
drive off campus), then outside instruction (dress
appropriately for weather conditions). (9 hours)
Equipment Needed:
• Handgun (semi-automatic handguns must be
either 9mm, .40 or .45 cal; Revolvers must be
.38 or .357 cal)
• 300 rounds of ammunition for chosen handgun
• Belt, Holster (made for the gun), Magazine
Pouch
• Minimum of two (preferred 3) magazines/
speed loaders
• Hearing & eye protection; a hat of any type

culture. Educational games will be employed,

The Basic Rider Course is aimed at the beginner or re-entry rider. The course provides fundamentals of safe, responsible motorcycle riding and will include classroom instruction and practical riding in a controlled, off-street environment. The course concludes with a knowledge test and skill evaluation. Successful completion of this course allows waiver of the road test portion for motorcycle licensing in Missouri.
MANDATORY ITEMS FOR THIS COURSE:
• DOT APPROVED HELMET (THREE-QUARTER OR FULL FACE)
• STURDY OVER-THE-ANKLE FOOTWEAR WITH LITTLE TO NO HEEL (BOOTS)
• LONG SLEEVE SHIRT OR JACKET THAT REACHES THE WRIST
• LONG PANTS (DENIM OR LEATHER PREFERRED, NO HOLES)
• FULL FINGER GLOVES NOT OPEN ON THE BACK OF THE HAND

Student must be a minimum of 15 ½ years old the day the course begins and be able to ride a bicycle. Anyone under 18 years of age must have parental/guardian
permission in writing prior to the riding portion of the course. Motorcycles will be furnished; you cannot use your own. Refunds will not be issued if you do not

Interested in learning to paint your own car or truck? Learn the steps of the
painting process in this class. You will learn how to spray using modern paint
products, metallic, blendings and how to wet sand clear coats so you can buff
them out to a glossy finish. Students will need to bring your own air respirator. No personal projects allowed unless prior arrangements are made with
the instructor. (3 sessions)
This course offers the basics of either welding or machine shop (your choice).
Welders receive training using gas metal arc welding, gas tungsten arc welding, shielded metal arc welding, manual/automated plasma arc cutting and
oxy-fuel cutting. Machinists receive training on engine lathes, vertical mills
and surface grinders. Individual projects are encouraged as the basic method
of instruction. Fee includes cost of basic materials; additional charges for
custom metal art projects. (8 sessions)

reach your educational and employment goals. Our professional staff will work with you using a variety of formats
and methods to make learning enjoyable and interesting.
Our detailed pre-assessment will help determine a learning style and pace that works best for you. Instruction
focuses on reading, math and writing skill improvement.
If you are between the ages of 17 and 24, you may qualify
for the Scholars at Work Program. More information will
be available at orientation regarding this program.
ORIENTATION: Includes diagnostic testing, goal setting
and personal conference.

CLASS SCHEDULES:
FREE Adult Basic Education (reading, math and writing

offered Tuesday through Thursday at various times to accommodate student needs. The Lab closes in July; orientation will be held and classes will resume in August.
