Kai Corporation, the makers of Shun
Cutlery, was established in 1908 in Seki City, Japan’s ancient
samurai swordmaking capital. The company’s first products,
high-quality pocketknives, soon won recognition in the
marketplace and enabled Kai to expand its product line to
include razors, scissors, and kitchen cutlery. Today, Kai is
the number one blade maker in Japan.
The tradition of excellence and painstaking craftsmanship
–a legacy of the swordsmiths of ancient Japan– continues to
serve as an inspiration for today’s Kai bladesmiths. This kind
of meticulous artisanship, combined with state-of-the-art
technology and advanced materials, ensures that each piece
of Shun kitchen cutlery is a true work of functional art.
Shun cutlery was brought to the US market in 2002. The
brand was developed specifically to meet the demands of
the American consumer and to provide an alternative to
traditional European knives. The Shun cutlery brand has
grown from a fledgling into one of the top gourmet brands
available. With Shun, Kai has established new benchmarks for
technology and innovation in kitchen knife design.
Shun cutlery provides unparalleled quality and an aesthetic
previously unseen in kitchen cutlery. In the tradition of
Seki City’s swordsmiths, every knife is made by highly
skilled artisans and requires at least 100 handcrafted steps
to complete. This precision handcrafting ensures that each
knife you purchase will truly be unique to you.
In Japanese, the word Shun means “best time of the year”
or as we say here in the USA “as good as it gets.”
Care &Use
OfYourfine Shun Cutlery
If you use your Shun knife correctly, it can become an
heirloom possession. Using your knife correctly isn’t just
about how to maintain the edge or sharpen the blade; it’s
about how you use the knife on a daily basis.
One key to keeping a Shun knife sharp is to cut on an
appropriate cutting surface. These include wood, bamboo,
and polypropylene, all of which are softer materials and will
give under the blade. If the knife can leave a line in the grain,
it means the surface gives under the sharp blade—and that’s
an asset in a cutting board. Please don’t use Shun knives on
bones or joints. These knives are designed for precision
slicing, not for chopping through bones.
Store the knife in a block, a knife case, an in-drawer holder,
a sheath, a magnetic bar, or in its original box. If your knives
are thrown in a drawer, they will get dulled or possibly
chipped, as well as being a potential hazard when you
reach into the drawer.

Knife Skills One:
Honing is not the same thing as
sharpening. Honing gently realigns
the cutting edge, which is
naturally dulled as you use the
knife. While most fine European
knives require honing after each
use, Shun’s harder steel means you
can hone once a week or so, depending
on your level of use. Sharpening is a more
aggressive operation and reestablishes the knife’s
original edge. Use a whetstone, the Shun electric sharpener,
or send them back to us. We’ll be happy to resharpen
your knives free of charge.
When the time comes to sharpen these premium blades, we
recommend using a whetstone, the Shun electric sharpener
(specially designed to sharpen Shun’s precise blade angle),
or sending the knives back to the Kai USA facility in Portland,
Oregon. We will restore the factory edge to your blade at no
cost to you, aside from the cost of mailing the knife to us.
Just make sure you include a return address and telephone
number so we can contact you if necessary.
We recommend that you protect your investment by
choosing to hand wash your blades with a gentle dish soap
that contains no bleach or citrus extracts.

ONE
Shun Elite line is an innovative combination of beauty and
performance. Down to the smallest detail, the elegant design is
directly inspired by the aesthetics of samurai swords. From the samurai family crest
inlaid in the PakkaWood® handle to the superior blade steel, Shun Elite is built to
impress—whether at rest on the kitchen counter or at work in the hand. The cutting
core of each blade is SG2 stainless steel. The advantage of this advanced powdered
steel is that each ingredient in the steel is perfectly blended, eliminating weak
spots or imperfections. Its density and ideal grain structure
enables Shun to temper it to a hardness of 64 on the Rockwell
hardness scale—compared with just 56-58 Rockwell for most
fine European blades. This amazing metal means Shun can
produce an exceedingly sharp and smooth edge that stays
sharp several times longer than comparable stainless cutlery.
But that’s just the beginning. Next, each blade is clad with two
layers of SUS410—one on each side. SUS410 is a “softer” stainless
steel that adds strength, flexibility, and corrosion protection. Where
the two steels meet, a natural waved line, called the hamon, is formed—similar to
the hamon formed when samurai swords are tempered using a special clay-baking
technique. The undulating hamon gives each Shun

Famous for their edge retention and sharpening ease, each Shun
Classic knife has an inner core of VG-10 “super-steel” which makes
for an exceptionally sharp and smooth blade. Then each blade is
clad with 16-layers of stainless Damascus on each side. The resulting
pattern is called suminigashi or “ink pattern” after a traditional
Japanese paper-decorating technique. While the patterned layers
enhance the knife’s beauty, they also add durability and stain
resistance, and reduce friction when cutting. Moisture-resistant
D-shaped PakkaWood® handles provide comfort and control.

Knife Skills Three: The paring knife is an essential kitchen tool. For an
exceptionally versatile paring knife, try the Shun Classic Perfect Paring
Knife. The concave belly curve provides a rounded surface ideal for
peeling fruits and vegetables, while the convex belly sweep at the front
of the blade makes it great for use on a cutting board. The blade’s
raised tip makes coring and removing potato eyes a snap, too.

With Shun Classics, you’ll always have the right knife for the job. As with all
Shun Classics, each knife features a cutting core of VG-10 steel, clad with

The
Shun KO (Ken Onion) series shares the same premium materials
and beautiful suminigashi blade pattern as our Shun Classic line.
But from there, the KO series takes on its own special character. First, you’ll
notice all the curves. The handles are curved to neatly nestle into the natural
contours of the hand. The bellies of the blades are curved to reduce cutting
fatigue and provide extreme cutting versatility. A wider bolster with contour
curved thumb and forefinger rests reduces tension during cutting. This design
also provides relief for cooks who have large amounts of prep work to do or
who suffer with sore or fatigued hands. With their definitive
ergonomics and glorious design, it’s true that these knives are
different. But in this case, different is good; very good indeed.

Shun Pro is the specialty line designed for the true Asian-knife
connoisseur. Each knife features a single-bevel edge and hollow-ground back,
which provides the kind of extreme control required for precision slicing—the
kind of precision demanded for sushi and sashimi preparation, for example.
This single-bevel, also known as a chisel edge, enables Shun to put an extremely
sharp edge on the blade. The ever-so-slightly hollow-ground back is
traditional in fine Asian blades and saves wear and tear on your
investment in fine cutlery by letting you to sharpen just the

Shun Pro 2 series features the classic single-bevel blades and
traditional Japanese styles as the Shun Pro line, while at the same time
taking opulent design and premium materials to the highest level. Each blade starts
with 5-mm virgin blade stock of VG-10 “super-steel.” This tough, precision steel
takes an exquisitely sharp edge and holds that edge longer. Once the blade has
been shaped, it is finished with an unusual dual-polish treatment. The top of the
blade is polished to a brilliant mirror finish, while the blade bevel
itself is satin polished, which enables faster and easier
resharpening. The ambidextrous handles are slightly rounded
at the center to provide a secure and comfortable grip. Each
handle is accented with the samurai family crest in
gleaming brass, as well as mirror-polished
bolsters and end caps. Like the knives in the
Shun Pro series, these fine instruments
should be sharpened
on a whetstone.

owner to be free of defects when received from the factory. Any product we find to be defective
in its original material, construction, or workmanship will be repaired or replaced with the same
item or one of equal value at no charge. (Of course, normal wear, abuse such as prying with the
knife, or neglect are excluded from this non-transferable warranty.) For warranty service, please
return product via UPS or insured mail. Include your name, address, telephone number, proof
of purchase (sales slip), and a short explanation of the warranty service requested to the
