I usually bake a butt portion, bone in, half ham for Christmas dinner. After the main meal, (and later in the day, after everyone is finished cutting off little pieces to snack on with the leftover rolls,) I carve off all of the largest pieces to make into ham steaks. I save the bone and all of the smaller pieces, for this recipe, which I make on New Years Eve. Leftover chunks of ham and the ham bone. (Smoked ham-hocks will work well also.) 1 ½ to 2 pounds dried Great Northern or Small White beans Celery stalks with leaves 2 or 3 brown onions Cumin Garlic powder Bay leaves Black pepper Celery salt 2 or 3 bottles of beer 2 Dutch ovens (6 to 8 quarts each) Rinse the beans well in a large colander and put them into one Dutch oven. Cover with about 8 cups cold water, and add 2 or 3 celery stalks cut into 3 in. pieces (leaves and all), one onion peeled and quartered, a couple of bay leaves, garlic, and cumin. Bring to a boil for three minutes, then turn off heat, cover, and let soak. In the second Dutch oven, place the ham bone and chunks of leftover ham, more celery pieces, a couple of quartered onions, bay leaves, and spices. Add the beer, and water as needed to cover all. Bring to a boil, and then reduce heat to a simmer, cover, let simmer for a couple of hours, ‗till the meat pulls easily off the bone. Turn off the heat and let cool until the meat can be handled safely without burning yourself. With a slotted spoon, remove all of the meat and veggies, and place on a large plate. Save all the broth in the Dutch oven. Separate all the veggies and discard. Remove the meat from the bones and cut into small pieces. Discard the bones and fat, and return all the meat back into the broth in the Dutch oven. Now drain the beans in a colander, (do not rinse!) discard the veggies, and add the beans to the ham and broth in the second Dutch oven. Bring to a boil again, reduce to a simmer, cover and let cook 2 to 3 hrs, until the beans are tender. Now it‘s ready to serve. I like to ladle the beans over hot cornbread, sliced crossways, and spread open-faced. Whatever your preference, I hope you enjoy them. Feelin‘ lucky? Just ask Lady Black Rose during events and meetings for a chance to win a ―Taurus Thunderbolt" with a beautiful Hardwood Stock and Forend, as well as a solid Metal Curved Crescent Butt Plate. Sponsored in part by the Lucerne Valley Lions Club Shooters Want Larger Targets Cuz Elephants Ain’t Big Enough According to the latest trends in shooting societies across the nation, more shooters are requesting a mix of larger targets. To accommodate the trend, under the leadership of RO Mexican Rob and our Territorial Gov Desert Dawg, the targets have been enlarged and ready for planting during our upcoming ―Crap Shoot‖ event. The 9th U.S. Circuit Court of Appeals said Thursday that California is wrong to require applicants to show good cause to receive a permit to carry a concealed weapon. The court ruled that all law-abiding citizens are entitled to carry concealed weapons outside the home for self-defense purposes. The divided three-judge panel disagreed with two other federal appeals courts that have upheld permit rules similar to California's. The U.S. Supreme Court often takes cases when federal appeals courts issue conflicting rulings. The Supreme Court ruled in 2008 that law-abiding citizens can keep handguns in the home for selfdefense purposes, but didn't address whether that right extends outside the home. RANGE REPORT by MEXICAN ROB Besides the new targets that have been crafted, Mexican Rob reports that we really need to collect some great prizes for the Shooters. Filled to capacity, the party-goers were entertained by Western singer, song writer, Belinda Gail and her singer, song writer friend Kathy. Always with a bell-toned voice, Belinda caused tears to well up in some of the crotchetiest cowboys sitting around the banquet tables. She can sure put on a show. Then charmer, Cowboy poet, and stand up comic, Andy Nelsen, took center stage to keep us all laughing so hard our mouths hurt from grinning, and our sides from trying to catch our breaths. He likes to get folks involved, so we all, well mostly, enjoyed the audience participation of ―The 12 Days of Christmas‖ where each table took on the duty of blaring out, in turn, the singular verse of the Christmas carol from each of their tables… standing and hollering with bravado. And we won‘t soon forget the stage entertainment of the four Double R Bar Regulators, Five Jacks, Rusty Rose, Ella Watson, and Trailrider Bob, who had the ―misfortune‖ of winning door prizes only to be subjected to a horrific rendition of another Christmas favorite sung by The Chipmunks. While the four persons sat in chairs on stage getting ―kerbonked‖ on the head with an air-filled plastic bat each time Andy Nelson wanted them to mime the words to the carol. (Ya had to be thar) From my perspective, it must have been hilarious due to the amount of laughing and tear-wiping that continued out in the audience. Just remember how we suffered so you could be entertained... Special mention should be made to the crew that supports all the audio and lighting each year for our banquets and special events. Thanks Arly. Sure was convenient that all dinners were provided prior to the entertainment. I doubt if many could eat after the fun — they were just laughing way too hard. The food was very tasty — a Mexican combination platter — with just enough kick to keep the fires burning. We also wanted to mention that it was very nice to see some of our special guests, and our ―Lost But Not Fergotten‖ members who attended. A ―Howdy‖ goes out to Mrs. Swede (Ursula Beeson) who is one of our earliest members with # 12. Her ―Swede‖ was number #11. The dashing gent in the black hat is long-time member #43 R.J. Clark. We don‘t see him too often but he supports many of our events. We also want to acknowledge Sandy Mosley, who recently donated a wagon to the town of Chimney Rock. Plans are to protect it with a canvas top and give it tender lovin‘ care. Thanks Ms. Sandy. Photos by Rusty LaGrange And as always, our host of the evening for our Happy Trails Foundation banquet Joel ―Dutch‖ Dorsch, who made all of the festivities a joyous event for all… and especially for the Double R Bar cowboys and cowgals. In May 1985, Dr. Gordy Klatt walked and ran for 24 hours around a track in Tacoma, Washington, ultimately raising $27,000 to help the American Cancer Society fight the nation‘s biggest health concern – cancer. A year later, 340 supporters joined the overnight event. Since those first steps, the Relay For Life movement has grown into a worldwide phenomenon, raising nearly $5 billion to fight cancer.
