Dear friends and fellow wine lovers,
It is my great pleasure to welcome you to The Perlman
Music Program’s Seventh Charity Wine Auction at Le
Bernardin.
My wife, Toby, recognized from her own musical education
that teaching young, talented musicians is a delicate and
involved process, similar to properly storing the perfect
wine. Just as different wines develop at their own individual
pace, so do aspiring young musicians. No matter the
time frame, when nurtured properly, like good wine, our
students only get better with age.
By joining us tonight, you are making a significant investment
in the future of classical music. Your generosity will provide
us with the necessary resources to support the world's
most talented young artists.

on creating a charity wine auction for PMP, Michael has become an invaluable advisor and
friend. He has generously shared his sound advice and incomparable expertise with us for
many years, and is responsible for writing and preparing the beautiful catalog in front of you
today. As our auctioneer, Michael's quick wit, encyclopedic knowledge, and inimitable presence
at the podium will make the evening unforgettable.
We are incredibly fortunate to have some excellent lots this year, and I extend a heartfelt
thanks to all of our generous donors, and to all of you in this room tonight. In the spirit of a

OUR AUCTIONEER
Tonight's auction will be under the direction of Michael Troise.
Mr. Troise is the retired Auction Director for NY Wines/
Christie's Fine and Rare Wine Department and an expert in
the field with more than 40 years experience tasting, buying
and brokering wines from vintages dating as far back as the late
eighteenth century.
He is the current Wine Advisor and Auction Director for
the Kravis Center for the Performing Arts in Palm Beach and
The Perlman Music Program, and is a consultant to numerous
private clubs, restaurants and organizations throughout the
country. He is also a consultant to clients all over the world
in the private equity field of wine investment management and
is a specialist in rare wine authentication and fraud detection,
having been called on to testify as an expert witness in
numerous such litigations across the country.
Mr. Troise sits on the board of the Palm Beach Wine Auction and many other charitable
organizations. He is President of the Rusty Staub Foundation, Officier Commandeur of the
Chevaliers du Tastevin, Bailli Emérite of the International Chaîne des Rôtisseurs, Commandeur
of the Commanderie de Bordeaux and a member of both the International Wine and Food
Society and Compagnons de Beaujolais.
In 2014, the international wine society, Chevaliers du Tastevin, awarded Mr. Troise its highest
honor—the Tastevin d’Or.
CONDITIONS OF PURCHASE
1. The auctioneer is the agent for The Perlman Music Program (herein “seller”).
2. These Conditions of Purchase, as amended by addenda or oral announcements during the sale,
constitute the entire terms and conditions of seller with respect to the sale and purchase of
wines listed herein. By bidding, the bidder agrees to be bound by these Conditions of Purchase.
3. All bids are per lot as announced by the auctioneer, listed on the bid sheet, or amended in the
addendum. Seller may divide, duplicate and/or combine any lot or lots at its sole discretion.
4. Absentee bids for this auction may be placed via fax or telephone prior to 3:00 PM (EST) on
Wednesday, February 3, 2016. All lots will be sold to the highest bidder to be sold at the fall
of the gavel. Duplicate lots may be offered to under-bidders at the discretion of the auctioneer.
5. Seller may, at any time prior to the fall of the gavel, withdraw a lot from the Auction.
6. Seller shall have the right to reject any bid at any time prior to the fall of the gavel. Bids will be
accepted only from registered bidders.
7. Should a dispute arise between bidders in the Auction, or should the auctioneer doubt the
validity of any bid, the auctioneer shall have the right to resolve the dispute, re-offer, re-sell or
withdraw the lot in question.
8. No bid shall be valid unless acknowledged by the auctioneer. A lot will be deemed sold at the
fall of the gavel, after which the buyer assumes full risk and responsibility.
9. Bids that are submitted to the seller in writing, via fax, over the phone or otherwise left with
the seller prior to the sale, for execution at or below a specified price, are entertained and
executed by the seller for the convenience of the bidders; but the seller shall not be responsible
for failing to execute such bids or for errors relating to the execution of such bids.
10. All wines sold herein are subject to the provisions of the New York Alcoholic Beverage Control
Act and are offered and sold subject to its provisions. Any offer or sale shall be governed and
interpreted by the laws of the State of New York.
11. For federal income tax purposes, seller is classified as a tax-exempt corporation (Tax ID 11324-7651) under the Internal Revenue Code Section 501(c)(3).
12. Prior to the receipt of any wine, purchasers must make full payment, in U.S.
dollars, by March 4, 2016. Seller reserves the right to re-sell any lot or lots for which
payment has not been made by this date. All payments must be made by personal check or
credit card: Visa, Mastercard, or American Express.
13. Should any dispute related to these conditions of purchase arise, the prevailing party shall be
entitled to its reasonable attorneys fees and costs.
14. No representative of seller shall have the right to waive or modify any of the terms and
conditions set forth herein, except that the seller’s authorized representative may do so by
general announcement at the Auction.
15.The Auction is a widely publicized event. As a condition of and in consideration for participation
in the Auction, participant releases the seller from any liability connected with the reproduction,
adaptation, display, publication, and distribution, in any and all media, whether now known or
yet to be developed, of any videos, photographs or other images taken of the participant at the
Auction, participant’s name, voice likeness, city of residence, and any other information regarding
her or his participation in the Auction.
16. Terms and conditions of all lots and certificates must be strictly adhered to. Changes may not
be allowable.
17. For those lots that include wine with a lunch or dinner, please consult with the restaurant
before bringing wine to their premise for the meal. Other wines may be freely substituted in their
place and/or wines may be purchased directly from the restaurant’s wine list.

A PETER MICHAEL EXTRAVAGANZA
In 1982, after six years of searching for land to serve as both vineyard and family retreat,
Sir Peter Michael and Lady Michael purchased 630 acres of volcanic ridges on the western
face of Mount St. Helena in Knights Valley. Following Sir Peter’s 100 by 100 vision – 100%
family ownership for at least 100 years – and drawing inspiration from the great wineries of
Burgundy and Bordeaux, the family hired like-minded viticulturists and winemakers to help
them create terroir driven wines that would stand the test of time. Today, with the support
of son, Paul, and his wife Emily, the Peter Michael winery still adheres to its original founding
principles of “mountain vineyards, classical winemaking, and limited production.”

is the only Marcassin Vineyard Pinot Noir where the alcohol nearly reached 15%, finishing at 14.9%.

AN EXTRAORDINARY IMPERIAL OF 2011 CHATEAU MARGAUX
Under the brilliant direction of the incomparable and undisputed grande dame of Bordeaux,
Corinne Mentzelopoulos, Château Margaux has produced a succession of stunningly great
vintages. The 2011 Château Margaux is certainly one of the very best of them.
“The 2011 Château Margaux is a candidate for wine of the vintage. With the harvest occurring
between September 5th and 20th, it was the smallest crop in over twenty years as yields were cut
significantly by the drought. The berries were tiny. Moreover, analytically, the 2011 has a higher level
of concentration as well as tannins than the 2009. A blend of 86% Cabernet Sauvignon, 10% Merlot
and the rest Petit Verdot and Cabernet Franc, only 38% of the harvest made it into the grand vin. The
wine boasts a dark ruby/plum color as well as a fragrant perfume of spring flowers, sweet, supple,
well-integrated tannins, medium body, and the elegance and nobility expected from a great firstgrowth.” Robert Parker, The Wine Advocate

DINNERS FOR TWO AT LINCOLN CENTER
Lincoln Ristorante is the home of one of the world’s great chefs, Jonathan Benno. You
may remember Chef Benno from his days as Executive Chef of Per Se. Now, Chef Benno has
re-invented himself in Lincoln, coming back to his Italian roots. Its location beside Lincoln
Center’s reflecting pool and Henry Moore sculpture is perhaps the most exquisite in the
world.
Gabriel’s, owned by renowned restaurateur, Gabriel Aiello, has been a standard bearer for
delicious Italian cuisine since it first opened its doors in 1991. It is a hot spot for some of
the most powerful, influential people, ranging from the celebrities we all know and love to
important politicians, including Presidents Bush and Clinton.
Telepan, situated on a leafy block, just steps from Central Park, welcomes guests to enjoy
bold American dishes in a smart yet relaxed setting. Chef Bill Telepan opened his fine dining
restaurant in 2005, and it has since earned glowing reviews and a Michelin Star.

A FULL CASE OF 1989 CHATEAU MARGAUX
“The 1989 Château Margaux has a dark plum/garnet color and a big, sweet nose of new saddle
leather, toasty oak, and weedy black cherry and cassis fruit.The wine is medium-bodied, with relatively
elevated tannins, outstanding concentration and purity, but a somewhat clipped as well as compressed
finish. This certainly outstanding wine has put on a bit of weight in its evolution in the bottle.”

A FULL CASE OF THE GREATEST CHATEAU PONTET CANET EVER MADE
“I remember tasting the immortal 1945 Pontet Canet thinking there couldn’t possibly be another
vintage of this wine to surpass it. I was wrong. The 2009 Château Pontet Canet is the richest,
most fragrant, most gloriously layered wine I have ever had the privilege to taste from this impeccably
run property - period.” Michael Troise
“An amazing wine in every sense, this classic, full-bodied Pauillac is the quintessential Pontet
Canet from proprietor Alfred Tesseron, who continues to reduce yields and farms his vineyards biodynamically – a rarity in Bordeaux. Black as a moonless night, the 2009 Pontet Canet offers up
notes of incense, graphite, smoke, licorice, crème de cassis and blackberries. A wine of irrefutable
purity, laser-like precision, colossal weight and richness, and sensational freshness, this is a tour de
force in winemaking that is capable of lasting 50 or more years. The tannins are elevated, but they
are sweet and beautifully integrated as are the acidity, wood and alcohol (which must be in excess of
14%). This vineyard, which is situated on the high plateau of Pauillac adjacent to Mouton Rothschild,

2009 CABERNET SAUVIGNON FROM HISTORIC HEITZ CELLARS
The intensely flavorful wines from Rutherford's Trailside Vineyard have been part of the Heitz
range since 1989. The vineyard is flanked by the Silverado Trail on one side and Conn Creek
on the other and is certified organic.
Aged in oak for three and half years, the winery describes the 2009 vintage thusly: "Opulent
hues of ruby and garnet draw you headlong into the glass; rich aromas of blackberry and a
hint of nutmeg invite you to stay. With just the right amount of French oak there is a subtle
sweetness that lifts and enhances the dark fruit characters on the palate. Balanced against
the more savory, earthy notes of coffee and cedar, this wine has all the hallmarks of a classic
Rutherford Cabernet Sauvignon."

DINNER FOR TEN AT RED BAR BRASSERIE IN SOUTHAMPTON
Hobnob with the Hamptons glitterati this summer at the Red Bar Brasserie.
Inspired 18 years ago by the southern restaurateur Kirk Basnight, Red Bar is unequivocally
the most comfortable gathering place for both Southampton locals and those who cherish
fine dining. The food, created by Chef Erik Nodeland, is an inspired balance between French
influence and local bounty. From Peconic oysters harvested locally daily, a perfect filet mignon,
foie gras made in-house, to his signature favorite, the truffled chicken with mushroom risotto,
Chef Nodeland’s menu simply never ceases to amaze with its creativity and rainbow of flavors.

MUSIC IN A GLASS
Arietta is wine specialist and auctioneer, Fritz Hatton and his wife Caren’s name for wines
born of a passion for music. The name Arietta, meaning short aria or art song, expresses their
belief that all great wines must sing. Both wine and song should "take flight," in the course of
which the qualities of balance, vibrancy, depth, overtones, and complexity resonate and give
us a sense of exaltation.
One of America’s most celebrated winemakers, Andy Erickson, crafts the Arietta wines from
carefully chosen blocks in the cooler climates of Napa Valley. The Arietta wine portfolio
currently consists of four red wines—H Block Hudson, Variation One, Cabernet Sauvignon,
and Quartet—and one white wine, On The White Keys.
The Hattons founded Arietta in 1996 in partnership with winemaker John Kongsgaard and his
wife, Maggy. The partnership was born of a shared passion for fine wine and classical music.
The vinous inspiration for Arietta was an extraordinary 2.3 acre block of Cabernet Franc on
the Hudson Ranch in Napa/Carneros. The fruit from this block of Cabernet Franc serves as
the core of the Arietta Red Wine H Block Hudson Vineyards. The Arietta project grew with
the selection of additional superb blocks of Merlot and Syrah on the Hudson Ranch, which
made possible the addition of two wines to the Arietta portfolio: Arietta Red Wine Variation
One, an innovative blend of Merlot and Syrah, and Arietta Merlot Hudson Vineyards, produced
only in selected vintages.
Arietta's label features the manuscript of Beethoven's Arietta movement from his last Piano

A RARE JEROBOAM OF 1990 CHAPOUTIER ERMITAGE LE PAVILLON
“I can’t remember the last time I saw this magnificent wine in this exceedingly rare Jéroboam format.
As soon as the winning bidder is announced for this bottle I fully intend to ask for an invitation to
taste it on the occasion of its opening. And yes, groveling will be involved.” Michael Troise
“The 1990 Hermitage Le Pavillon is indeed one of the most extraordinary young wines I have
ever tasted. Black-colored, with an extraordinary perfume of licorice, sweet blackcurrants, smoke,
and minerals, it coats the palate with layer upon layer of decadently rich, super-concentrated, nearly
viscous Syrah flavors. There is amazing glycerin, a chewy, unctuous texture, and phenomenal length.
The tannins, which are considerable when analyzed, are virtually obscured by the massive quantities
of fruit. I hope I live to see the day when Chapoutier's 1990 Hermitage-Le Pavillon, Chave's 1990
Hermitage, and Jaboulet's 1990 Hermitage-La Chapelle are fully mature! What a trio of wines these
three producers have produced from this historic appellation! My best guess for the aging potential
of the Hermitage-Le Pavillon is that it is more forward than both the Chave and Jaboulet Hermitages,
but should you have the good fortune to find a bottle or two, do not open it for at least 7-10 years.

AN IMPERIAL OF THE PERFECT 2009 CHATEAU CLINET
“The 2009 Clinet appears to be the greatest wine ever made at the estate, surpassing even the
late Jean-Michel Arcaute’s monumental 1989. A blend of 85% Merlot and tiny amounts of Cabernet
Franc (12%) and Cabernet Sauvignon (3%), this big Pomerol boasts an opaque, moonless night
inky/blue/purple color in addition to a gorgeous perfume of blueberry pie, incense, truffles, black
raspberries, licorice and wood smoke. Viscous and multi-dimensional with silky, sweet tannin, massive
fruit concentration and full-bodied power, there are nearly 4,000 cases of this thick, juicy, perfect

A RARE CASE OF 1993 GRIOTTE CHAMBERTIN FROM DOMAINE PONSOT
Perhaps one of the greatest wines ever to be made at Domaine Ponsot, only 10 cases or so
of the 1993 Griotte Chambertin were ever sent to the United States.
This is one of them.
“The 1993 Ponsot Griotte-Chambertin is rich, sweet, opulent, fat, and chewy. Loaded with flavor
and character, it should drink well for 12-15+ years. Take the 1990, build on the concentration level,
and what you have is the 1993. It requires 6-7 years of cellaring and will last for 25-35 years, rare
indeed for modern day red Burgundy. It possesses an extract level rarely seen today in Burgundy.
Perhaps it is not economically viable to make wines from such low yields, but this is what great winemaking is all about. It is a shame so few people will ever have the opportunity to taste it. While I
am a great believer that low yielding, highly concentrated Pinot Noir deserves plenty of toasty new
oak, there is not one new oak barrel to be found in Ponsot's cellar. The average age of the barrels is
between 30-60 years, thus proving that there is at least one exception to the rule that the greatest
red Burgundies are kept in new oak casks!
While the good news is that Ponsot's 1993s are spectacular wines, as stunning as his prodigious 1990s,
the bad news is that his yields were minuscule, with the average for all his vineyards approximately
20 hectoliters per hectare, or just over one ton per acre. For some of the grands crus, yields were so
tiny that the number of cases that will make it to America is preposterously low. For example, yields
for the Clos St.-Denis vineyard were 8 hectoliters per hectare, for Clos de la Roche, 18 hectoliters per
hectare, and for Griotte-Chambertin, 23 hectoliters per hectare. Laurent Ponsot stated that only 48
bottles of Chambertin were allocated to America, 24 bottles of Clos St.-Denis (only 400 bottles were
produced), and less than 30 cases of Clos de la Roche Vieilles Vignes. It is not that the United States
is getting screwed in the allocation system, but just that so little wine was produced. My reviews are,
therefore, largely of academic interest.” Robert Parker, The Wine Advocate

“Unless you were hatched from an egg on another planet, you already know that the 2005 vintage
in Burgundy was one of the very greatest in history. The Burgundians kidded one another that if they
couldn’t make good wine in 2005 they should just give up their secular lives and plead to be taken in
by an abbey where they could do penance the rest of their lives for such an inexcusable shortcoming.
Simply put, literally all of the wines I tasted out of barrel were among the finest young Burgundies I’ve

A JEROBOAM DIRECT FROM THE HISTORIC HOSPICES DE BEAUNE
Each year, professionals, connoisseurs, and wine lovers gather at the world famous Hospices
de Beaune on the weekend of the third Sunday in November for festivities in the purest
Burgundy tradition. The highlight of the weekend, it’s organized by Christie's and takes place
on the Sunday afternoon in the Halles de Beaune. Wines are offered for sale from an estate
made up of donations and bequests for over 500 years, totaling more than 60 hectares, the
majority of which is classified as Grands Crus and Premiers Crus. This charity wine sale acts as
an international barometer for the market in prestigious wines and brings together Beaune’s
major trading houses and buyers from across the world.
Numerous events punctuate this weekend of festivities: street performances, folklore parade,
gourmet village and half-marathon through the streets and vineyards of Beaune. Beaune’s great
wine houses compete to be the most creative and organize prestigious tastings: wines from
the Hospices, rare vintages, appellations from all over Burgundy and thematic or gourmet
tastings are on the menu. In Beaune and on the vineyard slopes, winemakers offer tastings of
old and new vintages in their cellars. Gathered into wine-making brotherhoods, they organize
gala dinners and inductions of new ambassadors of Burgundy wines.

PRIVATE DINNER FOR TEN BY CHEFS JESSE SCHENKER AND VANARIN
KUCH
Renowned Chefs, Jesse Schenker and Vanarin Kuch, will cook an elaborate feast for ten guests
either at the winning bidder’s home or in the private dining room of their wonderful Nouveau
American restaurant, The Gander in the Flatiron District.
People were first introduced to the cuisine of Jesse Schenker cuisine at Recette, the urban
American restaurant which opened to critical acclaim in 2010. Since then, the 31-year-old chef
has garnered numerous distinctions including his inclusion in Details magazine’s “America’s
Best Young Chefs” in August 2011 and Zagat’s “30 Hottest Chefs Under 30” list. Schenker was
also named one of Restaurant Hospitality magazine’s “11 to Watch in 2011” and was awarded a
spot on Forbes’ “30 Under 30” Food & Wine Industry List in 2011.
Vanarin Kuch, a participant in Top Chef: Just Desserts (season two) and nominee for "Best New
Pastry Chef" by Food & Wine Magazine (2012), has redesigned The Gander's pastry program
with his thoughtful desserts. Kuch transforms familiar American desserts into refreshingly

2012 MAGNUMS DIRECT FROM CHATEAU HAUT-BRION
In the classifications of 1855 ahead of the
International Exhibition in Paris, Château
Haut-Brion was classified Premier Grand Cru,
as the only estate from Graves among the
three established First Growths of the Médoc.
The prices of Haut-Brion in the 19th century
were consistently higher than those of any
other Bordeaux wine.
After a series of unsuccessful owners during
difficult times, the American banker, Clarence Dillon, bought Château Haut-Brion on May 13,
1935 for 2,300,000 francs. Several unverified anecdotes surround the acquisition, as Dillon
was believed to also consider buying châteaux Cheval Blanc, Ausone or a majority share in
Margaux, but didn't care to make the trip on a rainy, chilly day, and chose Haut-Brion for its
proximity to Bordeaux and riding facilities. One account claims Dillon never even got out of
the car!
“The 2012 Haut-Brion (65% Merlot, 33% Cabernet Sauvignon, 2% Cabernet Franc) is certainly
one of the candidates for the wine of the vintage, with a dense purple color, classic nose of crushed
rock, lead pencil shavings, black raspberry, blueberry and flowers. The wine shows subtle barbecue
smoke notes in the background, but is full-bodied, stunningly concentrated and builds incrementally,
yet finishes with luxurious, almost extravagant amounts of fruit and intensity. From only 46% of the
production, this is an absolutely remarkable effort from the Dillon family and their winemaking team
of the two Jean-Philippes.”
“The 2012 Quintus (89% Merlot and 11% Cabernet Franc) is made in a firm, structured style with
a hint of minerality, dark plum and black currant fruit, touches of cherries and spice, along with some

property down the road from the noble Mouton Rothschild. Well, no more. It can fairly be
asked now, wryly, whether perhaps now it’s Mouton Rothschild which is the property down
the road from Pontet Canet.
“I remember tasting the immortal 1945 Pontet Canet thinking there couldn’t possibly be another
vintage of this wine to surpass it. I was wrong. The 2009 Château Pontet Canet is the richest, most
fragrant, most gloriously layered wine I have ever had the privilege to taste from this impeccably run

A FULL CASE OF THE INCREDIBLE 2010 CHATEAU LAFITE
“This exceptionally rich, thick Lafite came in with the highest level of natural alcohol (13.5%) ever
achieved at Lafite Rothschild. To put that in its proper context, the 2009 and 2005 were 13.3% and
in the hottest Bordeaux summer ever recorded in over 200 years, the 2003 achieved 12.8%. A blend
of 84% Cabernet Sauvignon and 16% Merlot, all harvested between October 9 and 14, the 2010
exhibits an extraordinarily dense color, an unctuous texture and sweet black currant fruit intermixed
with graphite, charcoal and truffle notes. A director Charles Chevalier told me, between July and the
October harvest, Bordeaux had its driest weather since 1949, but it never got excessively hot. Hence
the tiny berries, freshness and extraordinary precision of Lafite Rothschild. This superb effort will
undoubtedly shut down slightly once it is bottled despite a pH of 3.8. It needs no building up because
much of Lafite Rothschild has now become an obsession with the wealthy Chinese and most of it will
undoubtedly be consumed before it ever hits its prime. Ideally, it should be cellared for 10-15 years

MIDNIGHT IN PARIS
Everybody dreams of having an apartment in Paris. The Weisers’ 2-bedroom apartment on
the Ile Saint-Louis will surely fulfill that dream. The winning bidder will be spending seven
days and nights in this unique apartment located on quai Bourbon in the heart of Paris, just
steps from Notre Dame! According to Jacques Hillaret, the quai Bourbon was built between
1614 and 1646 and owes its name to the Royal Family of the Bourbon. All the buildings along
the quai date back to the 17th century and overlook the Seine, just above the bridge LouisPhillipe. King Louis-Phillipe placed the first stone on the bridge on July 28, 1833. When you
look from the windows of the drawing room to the left, you see the church of St. Gervais. The
construction of the church began when Lutetia (Paris under the Roman Empire) was merely
a swamp.
As you enter the apartment, the mahogany console on the right is English 19th century and the
two chairs on either side are Danish 1920s. The prints on the wall are by Nicola Vanni, who
worked in Naples between and 1750 and 1770. As you proceed into the drawing room, you
will see a sculpture of Theseus fighting the centaur, Bienor, by Antoine-Louis Barye and cast by
F. Barbedienne after a plaster shown in the salon of 1850. Copies of it can be found in several
museums in Europe and America. The chaise lounge to the right is Swedish 18th century. The
four drawings are by Bouchet, one of the architects who collaborated on Paris’s Madeleine
church. The mirror above the fireplace dates from Napoleon III. The two sculptures on the
mantelpiece are of Amerindiens, a European 19th century vision of America. The fireplace is
Louis XVIth in style and the back plate is an original 18th century piece.
The master bedroom is covered with a fabric designed by Braquerie in the 1850s. The
painting on the wall is by Danish post-Impressionist, Julius Paulsen, and the mirror is Provençal
18th century. The chest of drawers and the two side tables are original pieces built during the
Napoleanic era and the four Biscuitware pieces are Danish 19th century, an allegory of the
four seasons. The guest room is covered with a fabric called “The Lion and the Muses”. The
photographs, representing views of Paris, are late 1870s by Quinet, Lorgnier and unknown.
The small game table is Louis XVI and the books on the way to the bathroom are from the
repertoire of the French theater.
During your visit you will discover much more about the apartment, its furnishings and the
Ile Saint-Louis. The island is its own microcosm, offering great dining, people-watching and

AN IMPERIAL OF 2009 CHATEAU MOUTON ROTHSCHILD
“This is the most backward and unevolved of all the Left Bank (Medoc) first-growths. In 10-20
years, the 2009 Mouton Rothschild should rank alongside the greatest vintages of the last three
decades (1986 and 1982). Yields were a small 30 hectoliters per hectare, the final blend is 88%
Cabernet Sauvignon and 12% Merlot, and the finished alcohol is 13.2% (not particularly high in
this vintage). The pH is 3.81, and the index of tannins, the highest ever measured, a whopping 20%
higher than the next highest vintage. The tannins, while present, are silky and well-integrated, one of
the hallmarks of the 2009 vintage. An inky/purple color is accompanied by classic aromas of crème
de cassis, violets, and hints of graphite and background oak. The overwhelming impression is one of
layer upon layer of fruit, full-bodied opulence, and good structure. It tastes as if it were 2-3 months
old rather than a post malolactic, fully assembled barrel sample ... it’s that young, but so incredibly
promising. A 50- to 100-year wine? Probably.” Robert Parker, The Wine Advocate

MOUTON ROTHSCHILD – DIAMONDS ARE FOREVER
In the last scene of the movie Diamonds Are Forever (1971), Bond uses his knowledge of the
inimitable Château Mouton Rothschild wine to expose his enemies.
While James Bond (Sean Connery) and Tiffany Case (Jill St. John) are relaxing on a cruise liner,
Mr. Wint and Mr. Kidd bring a full dinner consisting of Oysters Andaluz, Shashlik, Prime Rib Au
Jus, Salade Utopia, and a Bombe Surprise for dessert (complete with a real bomb). Mr. Wint
(played by Bruce Glover) poses as the wine steward and opens a bottle of Château Mouton
Rothschild ’55 for Bond and Tiffany: “Wine, sir? Mouton Rothschild ’55. A happy selection, if I
may say?” After Wint removes the cork with a needle-type air pressure opener and offers it
to 007, Bond replies, “I’ll be the judge of that. That’s rather potent. Not the cork, your aftershave. Strong enough to bury anything.” Tasting the wine, Bond adds “But the wine is quite
excellent. Although, for such a grand meal I had rather expected a claret.” Wint takes 007’s
bait: “Of course. Unfortunately, our cellars are rather poorly stocked with clarets.” Bond
rebukes, “Mouton Rothschild is a claret. And I’ve smelled that aftershave before and both
times I’ve smelled a rat!”
When Mr. Kidd (played by Putter Smith) attacks Bond with two flaming skewers of Shashlik,
Bond breaks a bottle of Courvoisier and sprays the contents on the henchman. The cognac
catches fire, immolating Mr. Kidd.
Well then, in keeping with the fun: Wine anyone – Mouton Rothschild 2004? A happy selection,
if we may say. And it comes direct from Baron Philippe de Rothschild.

BEAUTY AND THE BEAST: A FEAST AT BETONY
Betony is a Modern American restaurant overseen by Executive Chef Bryce Shuman (formerly
Executive Sous Chef of Eleven Madison Park) and General Manager Eamon Rockey (formerly
of Eleven Madison Park, Atera, and Aska). It received a James Beard Award nomination for
“Best New Restaurant”, and a three-star review in the Times among many other accolades.
To support The Perlman Music Program, Betony will be presenting a unique dining experience
to tonight’s lucky winning bidders, all curated around a whole animal presentation. Chef
Shuman will select a whole beast from one of his farmers and prepare it in its entirety for the
table along with bountiful accouterments. Beverage pairings will accompany this amazing feast.

If there was ever a bottle of wine that embodied the scope and gravitas of a Beethoven
Symphony, it’s this Imperial of 1995 Château Margaux. Simply put, this is a magnificent wine.
“The 1995 Château Margaux displays an attractive dark purple color, and a sweet, jammy
nose of black-cherries, cassis, and a whiff of blueberries. Rich, powerful, and dense, as well as
surprisingly supple in the attack, this low acid wine seduces the taster before some heavy duty tannin
makes its presence known in the finish. The official analysis indicates this is the most tannic Château
Margaux since 1986. Overall, the wine reminds me of the 1985 vintage, but with more grip. I suspect
