Got what it takes to be a Bavarian Chef? Test your skills at home with our authentic Jägerschnitzel recipe!
DIRECTIONS:
Starting with the Spatzle batter, in a medium mixing bowl add flour, salt,
white pepper and nutmeg. Using a standard kitchen mixer, mix in six wellbeaten eggs until batter is smooth. Batter should be firm but fluid enough
to be pressed through a Spatzle press. Let batter rest for 15 minutes. In
meantime, bring a large pot of salted water to a boil, set down to a simmer.
INGREDIENTS (SERVES 4)
• 4 boneless pork chops (approximately 8oz each)
• Salt & pepper
• 1 cup flour
• 8 slices bacon, prefer applewood smoked
MUSHROOM SAUCE
• 16 oz sliced domestic mushrooms
• 1 cup onions, chopped
• 2 T cooking oil, canola is fine
• 2 T porcini powder
• ½ stick butter or margarine
• ½ cup flour
• 1 cup half and half
• 1 cup 2% milk
• ¼ cup chopped parsley
• Salt and pepper to taste
SPATZLE BATTER
• 6 whole eggs
• 4 cups flour
• 2 T salt
• 1 tsp white pepper
• 1 pinch nutmeg, ground

Next, in a medium sauce pan, begin the mushroom sauce by sautéing
diced onions in cooking oil over medium-high heat until they caramelize.
Add sliced mushrooms and sauté until they begin to take on a little color.
Add porcini powder and butter, stir until melted. Reduce heat to low and stir
in flour. Slowly add half and half along with the milk and stir. Cook on low
until it cooks to thick gravy. Add milk if too thick. Season well with salt and
pepper and add chopped parsley before serving. Set aside and keep warm.
For the Spatzle, use non-stick cooking spray. With the seasoned water
simmering, scoop up enough batter to fill press ¾ full. Pull top down over
batter and press the batter through halfway. Dip press into the water and
back out to separate the strands of batter. Press through remaining batter.
Let water come to a boil again and stir Spatzle noodles slightly to keep
separated. Cook for about one minute, remove with a slotted spoon and
set aside. Continue process until all of the batter is pressed through. Sauté
noodles with butter just before serving.
Crisp the bacon in frying pan and set aside. Pound pork chops lightly with a
meat tenderizer until they’re 1/2 inch thick. Season the pork chops with salt,
pepper and flour then lightly dredge in batter. Fry for about 3 minutes on
both sides until the pork is just cooked through.
SERVING:
At Hofbräuhaus, we spoon a portion of Spatzle on the top half of plate, one
cutlet on the bottom and spoon mushroom gravy over. Top with crisp bacon
and enjoy!

thanks to the arrival of one of the world’s most
popular beers — Pilsner. Brewed in 1842 by
Bavarian native Josef Groll in Pilsen, Bohemia, it
was the first pale, golden-colored lager to begin
a beer revolution. Over 90% of beers consumed
worldwide derive from Pilsner-styled brew. Along
with its golden sheen, the Pilsner is further revered
by others due to its seasoned nature, containing
the most refined hops available. In fact, the Pilsner
is so hoppy, the aroma it exhales tells it all before
the first sip. With a lingering dryness and upfront,
firm bitterness, the Pilsner takes no prisoners with
its full-bodied flavor. Imitated by many but matched
by none, this bold brew boasts an alcohol volume
of 5%, making its summer arrival a holiday of its
own. TASTE THIS LEGENDARY FLAVOR,

Take a journey back to old-style Bavaria this
August with Urbräu! This month’s featured flavor,
Urbräu, was the beer before Pilsner took over the
lager scene. Urbräu is a more old-fashion brew,
sporting a rich copper color and a distinct fullmalt body like traditional Bavarian lagers. Unlike
July’s Pilsner, the hops are subtle with a more
subdued aroma and no bitterness. With a spicier
flavor accompanied by a sweet, crisp, refreshing
finish from its hops, the Urbräu packs a punch of
5.25% alcohol by volume. DON’T MISS THIS
