PROCESSING NOTES
This “Pensilvania” estate coffee found its
way to our cupping lab last spring. During
a blind cupping, this coffee immediately
displayed truly unique characteristics. This
experience set in motion a five month
journey, tracking it down
and making the necessary
arrangements to get the coffee
into our roasteries. I have not
personally been on the farm-however, I did meet the people
responsible for producing it
while in Tolima (a neighboring
producing region) just a month
or so ago. My plan to actually
go visit the farm was cut
short by time constraints and
difficulties in travel logistics.
So goes life and business in
Colombia. This offering is one
of many that we will have over
the next few months as a result
of my recent travels.
The coffee is a fully washed 100% Caturra variety.
Caturra is considered a dwarf Bourbon coffee. It
is smaller in stature than traditional bourbon and
allows for less pruning and easier harvest. Once
pulped, the coffee is then dried on elevated beds.
CUP CHARACTERISTICS
The cup is delicate and balanced with a definitive
fruity quality not unlike ripe strawberry or
raspberry. Clean and fresh, this classic cup, indeed,
is a reminder of why coffees from Colombia are
considered some of the finest in the world.
