ALMOND GOJI CAROB TRUFFLES (Gluten-free, Vegan, Sugar-free, Dairy-free & Raw) Contrary to what the name “truffles” may conjure, these balls are only very delicately sweet – I’ve created the recipe out of a desire for a little power pack of protein that’s easy to grab after a good workout. (If you desire a sweeter version, add more dates.) 1 cup almonds (dry) ½ cup cashews (dry) ½ cup sesame tahini 1-2 Tbsp. coconut oil 2 handfuls goji berries (can omit if not available, or switch with other dried fruit if preferred) 2-3 dates, pitted and chopped 2 Tbsp. chia seeds 2 tsp. cinnamon 1 tsp. mixed spices ¼ tsp. sea salt (to taste) ¾ cup carob – for rolling Process almonds in food processor until coarsely chopped, then add tahini, coconut oil, goji berries and dates. Continue processing until thoroughly chopped and fairly smooth. Add chia seeds, spices and sea salt. Process until these ingredients are all thoroughly and evenly mixed together. Consistency should be thick and you should be able to roll into balls. Take a small portion of the mix, roll around in your hands to form a small ball, then dip into carob powder and roll around until thoroughly covered. Place truffles into glass, sealable container and keep in the fridge! Truffles last a week in the fridge (if they don’t get eaten first!!).
