There lies the city of Modena, which is considered to be the birthplace and undisputed capital of balsamic culture. Balsamic owes its name to its pleasing and appetizing smell (balsam means "fragrance"). The term Aceto Balsamico di Modena is a "protected geographical indication" and guarantees high quality balsamic vinegar - as opposed to the balsamic varieties that are often offered in supermarkets, which are merely a mixture of regular wine vinegar and thickened grape must.
