June Sudoku Puzzle The objective is to fill the grid with digits so that each column, each row, and each of the nine 3×3 sub-grids that compose the grid contains all of the digits from 1 to 9. Answer: Flax Seed 14 Health & Fitness Summer begins in June and brings with it the opportunity for healthy eating with straight-from-thegarden produce. Your best choice for fresh fruits and vegetables is always locally-grown. Grocery store and supermarket produce is required to show Country of Origin Labeling so you will know if you are getting goods grown at home or far away. The produce manager and staff where you shop is the best source of information when choosing fresh produce. Organic fruits and vegetables are getting more popular and easier to find. The “USDA Organic” label is used on produce that contain 95%-100% organically produced ingredients and processing aids. Organic produce is usually more expensive than non-organic. You can save money if you limit your organic purchases to the fruits and vegetables most likely to contain unnatural and potentially harmful additives. The Environmental Working Group’s Shoppers’ Guide lists the Dirty Dozen: fruits and vegetables most likely to have a high level of pesticide residue. Apples Peaches Nectarines Strawberries Grapes Celery Spinach Bell Peppers Cucumbers Snap Peas Cherry Tomatoes Potatoes (not sweet) Buy these items labeled “USDA Organic” when possible. If you cannot find fresh, local produce, the next best choice is frozen (without cheese or butter!), followed by out-of-area fresh. The least healthy choice is canned, due to processing. When canned is the only option, look for low-sodium vegetables, and fruit in juice rather than syrup. Check the dates on your canned items every 6 months and get rid of anything that has expired. Hope you enjoy the summer season and are able to take advantage of all the good things it has to offer. Have a “well” day! Spice It Up Reap some major health benefits by adding more thyme to your diet. This small leaf adds big flavor as well as anti-oxidant and antimicrobial properties. The primary volatile oil in thyme has been found to protect and significantly increase the percentage of healthy fats found in cell membranes. In particular, the amount of DHA, an omega-3 fatty acid, in brain, kidney and heart cell membranes was increased after dietary supplementation with thyme. For thousands of years, thyme has been used to help preserve foods and protect them from microbial contamination. Now research proves that it is effective. Studies found that thyme essential oil was able to decontaminate lettuce inoculated with Shigella, an infectious organism. In addition, thyme contains an impressive range of health-supportive nutrients, including vitamin C, vitamin A, iron, copper and manganese. Try sprinkling thyme into soups, pasta sauces and in salad dressings. Quiz: Next month we’re featuring a tiny seed with huge benefits. Can you guess what it is? Answer on opposite page. 15
