NEWSLETTER # FEBRUAR Y 20 1 6 EDITO At the dawn of 2016, wine lovers can rejoice: 2015 should be a very good vintage. From Burgundy to Bordeaux, the quality promises to be outstanding. The grapes in the south of the country even reached maturity a few days earlier than usual thanks to spring rains followed by a very hot summer. This is exactly where Tonnellerie Sylvain, ever at the cutting edge of innovation and attuned to the new needs of customers, decided to test its latest arrival on the market: a large 600-l barrel with properties specifically adapted to varietals that fear oxidation. You will find the technical details of this latest Tonnellerie Sylvain creation in this Newsletter and you can follow the different phases in the alchemy of wood and wine in forthcoming editions. In the course of these few pages you will notice that Tonnellerie Sylvain is moving forward: it is now in a position to completely manage all logs without any waste thanks to progress at Merranderie Sylvain… The new graphic charter is established. Its dynamic design using the changing shades of ripening grapes adorns the walls of the buildings erected in 2014, lending new impetus to our logo while still respecting tradition… Vinexpo was a wonderful event… We continued our sponsoring activities by extending them for the first time to South Africa, as partner of the RisCura Red Hot Wine Awards and the equivalent white wine awards. In addition, I had the great pleasure of announcing during 2015 the arrival of my daughter, Claire, on the team, following her brother, Rémi, who is taking on new responsibilities with the acquisition of Foudrerie Marc Grenier, the inescapable quality reference in the world of wine, especially in Burgundy. My two children will now be helping me to perpetuate the family know-how and put Tonnellerie Sylvain’s technological progress, professionalism and quality at your service. NEWSLETTER # S E P TI E MB R E 2 01 5 Jean-Luc Sylvain 1/8 www. t onnel l erie-sylvai n.fr TONNELLERIE SYLVAIN : POSITIONING, LOGO, GRAPHIC CHARTER In 2014, Tonnellerie Sylvain constructed a modern and innovative 2.000m² structure, equipped with the best technology and traceability, enabling it to anticipate and consolidate production capacities in line with applicable standards and regulations well in advance of barrel construction. In 2015, the building is clad in the new design, illustrating the spirit of the Tonnellerie. The logo and graphic charter are deliberately modern, evoking a message that spans tradition and modernity, highlighting the know-how and the precise work of artisan coopers, Sylvain’s core competence. NEWS NEWSLETTER # FE B R U A R Y 2 0 1 6 REINFORCING THE FAMILY STRUCTURE: SELF-EVIDENT IN 2015 In the 80s Jean-Luc Sylvain followed in the steps of his father, Gérard, and joined the family cooperage installed in the heart of the Bordeaux vineyards. He perpetuates its tradition of quality while taking an interest in export. A shrewd man and a veritable globe-trotter, he conquered faraway destinations like the United States, South Africa, New Zealand, Australia, Chile and Argentina. However, he did not forget the historic wine-growing countries of the old continent, like Italy, Germany, Switzerland and Spain, where the notion of «craftsmanship» and «the art of French coopering» take on their full meaning. His attachment to these values, to cutting-edge innovation, and his trade expertise earned him the national distinction of Artisan of the Year and the Entrepreneur of Aquitaine prize. Equally demanding with himself and his teams, he led the company to prosperity. Exports now reach 65 to 70% of production per year. Given these positive perspectives, Rémi Sylvain, Jean-Luc’s son, took whole-heartedly to the trade. A graduate of the École Supérieure du Bois in Nantes (school of wood science and technology), a degree in coopering and a diploma in wine-tasting (Diplôme d’Aptitude à la Dégustation), he works as a manager in the Foudrerie Marc Grenier in the heart of the Burgundy region. Having reached the age of retirement, Marc Grenier put Tonnellerie Sylvain in charge of running his business and continued to assist Rémi. Still in 2015, his sister Claire joined the family business at the Libourne site. Having trained as an engineer in chemistry and biology and after working for six years in Research and Development, Claire also has dual skills in project/commercial management. Her background and qualities enable her to have a global vision and the necessary hindsight required especially to streamline the management system and customer follow-up. She sets a priority on human relations while consolidating the company’s marketing/communication and trade strategy. Both Rémi and Claire are worthy representatives of the third generation, completely committed and perpetuating the values that Jean-Luc Sylvain transmits to them on a daily basis. 2 /12 www. t onnel l erie-sylvai n.fr ADAPTING OUR KNOW-HOW TO THE EVOLUTION OF OUR CUSTOMERS’ TECHNIQUES NEW PRODUCT Tonnellerie Sylvain has always produced 600-litre barrels with a 27 mm shell and two 34 mm heads. They are designed for vinifying white varietals like Sauvignon, Sémillon and Chenin, and for aging other Bordeaux and Italian wines. In this particular case, the winemaker seeks controlled micro-oxygenation in order to polish the tannins and aromatise the wine lightly with the wood. In response to the new technical requirements of its customers, Tonnellerie Sylvain has extended its range with a traditional 600-l barrel known as a demi-muid that is up to 45 mm thick (raw), elaborated from the best wood from French forests. Two types of barrels have been tested: - demi-muids made of stave oak produced from split wood, perfectly watertight. This traditional technique is slightly more expensive in terms of production due to the lower yield of stave wood compared to logs. These barrels accommodate reduction aging, therefore without introducing oxygenation, for varietals that do not tolerate oxidation. A comparative test is underway in Italy, at the winery Poliziano (Tuscany). Feedbacks will be published in the next newsletter. From experience and tradition, Tonnellerie Sylvain recommends stave oak for the US because it is well suited to the grapes varieties. Given that the oak is sawn, it is difficult to follow the grain of the wood 100%, but the greater thickness makes up for the slight difference in watertightness. Medullary rays Wine penetration NEWSLETTER # FE B R U A R Y 2 0 1 6 Philippe Gard, agronomist and oenologist, viticulture consultant at Saint-Émilion and owner of the Domaine Coume Del Mas in Banyuls, chose to age his Grenache in Grande Réserve barrels and in Tonnellerie Sylvain demi-muids. The grapes come from an old plot called La Salette, with a South-East exposure and considerable density of 7,000 to 9,000 vines/ha on schist soil. It was selected for the remarkable maturity of the skins, promising a fine classic balance with a good degree of alcohol and freshness preserved thanks to the altitude of its location (300 m). Marie Thomas, Tonnellerie Sylvain’s sales manager for South Africa and South of France, applied all her skill and technical knowledge for this procedure. I tasted other wine-growers’ wines from 600L barrels and I appreciated the less marked woodiness compared to the smaller Burgundy barrel. That’s what made me want to try the Sylvain 600L demi-muid this year. How do you set about your work? From the beginning of the maturing process, I simultaneously monitor the wine from a Sylvain Sélection Burgundy barrel and a demi-muid. The result is very different. Thanks to the thickness of the staves, the 600L barrels have a less woody character. 2015 is a powerful vintage with a very nice consistency. We’re looking for a very slightly woody Saint Joseph with fine, softer tannins and a fruity edge to it. NEWSLETTER # FE B R U A R Y 2 0 1 6 What are your first observations? On tasting it, we notice the silky and velvety tannins of the demi-muid with notes of small red fruits. I’m very satisfied with the way the wood is integrated, and its delicate effect on the aromas. At the same time, it has a remarkable sweet and velvety effect. The Sélection barrel gives us a wine with a more marked, less integrated woodiness, with more structural tannins and less sweetness but, amazingly, a more intense perception of the fruit. The maturing will last one year, until October 2016. The wines will change. This large-scale art borrows from techniques that are specific to cabinet making and carpentry, and is part of the great tradition of French craftsmanship. ” Since 1982 Marc Grenier has made his reputation for himself in the heart of Burgundy, no more than a few kilometres from Beaune and its famous Hospices. Imbued with the artisan’s love and respect for wood, it is here that he produces vats and foudres (large wooden vats) for aging and fermenting wine. These impressive containers lend subtle aromas to wines, provide unequalled thermal inertia and unique micro-oxygenation. There is no room for mechanisation here; 80% of the work is done by hand, ancestral know-how being the sure guarantee of quality, precision and the exceptional finish of the products. Such a talent is known throughout Europe. The characteristic tawny blonde wood of Foudrerie Marc Grenier products sheds a ray of light in the most beautiful cellars of 14 countries. Its customers in France go by the names: Cheval Blanc in Saint-Émilion, Romanée-Conti in Burgundy, Alphonse Mellot in Sancerre, Vignobles Alain Graillot in Crozes-Hermitage, Domaine Auguste Clape in Cornas, Le Clos du Caillou in Châteauneuf-du-Pape, Château Puech’Haut in Languedoc and Mas Amiel in Maury... to mention but a few. Marc Grenier began to envisage retirement in 2015. With no one to take over his activity, he decided to transfer his foudrerie to the Sylvain family, thus ensuring the continued transmission of his know-how and the ongoing maintenance of the quality of his products. NEWSLETTER # FE B R U A R Y 2 0 1 6 The two families share the same philosophy, the same desire to preserve the enterprise on a human scale and to maintain high quality craftsmanship. The foudrerie provides the Sylvain family with a new domain of expertise. For their part, they will supply the foudrerie with the oak they buy directly from forests. The wood is matured naturally for 4 years, divided up by the Sylvain stave mill using the splitting method in order to produce staves for the foudres like those of the barrels that have made the reputation of the Tonnellerie Sylvain, with the same traceability and the same high standards of quality. Coming from the third generation of coopers, Rémi Sylvain will take over the management of the foudrerie. Marc Grenier will assist him for several years in order to pass on the torch. The production team remains the same, the spirit of Marc Grenier lives on and the virtuosity is ensured. Many wine-growers in Europe are returning to large containers for traditional vinification or to age grape varieties that find it hard to adapt to small volumes, like Pinot Noir or Chardonnay, Sangiovese in Italy, Syrah in the Côtes-du-Rhône. Today the Sylvain family wishes to offer its majestic foudres to the United States and the rest of the world. A subtle alchemy of age-old know-how and high modern standards makes each of these many-talented giants a unique piece that enables great wines to reveal their quintessence. 5 /12 www. t onnel l erie-sylvai n.fr MASTERING THE RAW MATERIAL FROM A TO Z… AN HISTORIC HERITAGE COMMITTED TO TOMORROW’S ENVIRONMENT. Given the changing climate in France and around the world, Jean-Luc Sylvain is conscious of and attentive to preserving the ecosystem on which his trade is based, while still retaining his competitive edge. Nowadays people are interested in producing new resources from local waste and using vegetal biomass as an agrofuel. steam ovens, enables regional companies to be self-sufficient in terms of energy. The historical French forestry heritage is managed by the ONF (National Forestry Office). Oak takes nearly 200 years to reach maturity, even more in rare cases, whereas the demand for barrels continues to increase inexorably. “ To make 1 m3 of stave, we need 4 to 5 m3 of logs! Which means a loss of 75 to 80%! The elimination of the bark, sapwood and heartwood, sawing off the rough face of the split wood and obtaining the desired thickness explains this percentage (cf. diagram). The stave maker must not neglect the economic and ecological aspects of the raw material. We must also provide the noblest pieces of wood as required by the specifications for manufacturing Sylvain barrels. ZOOM stave bark + sapwood Due to Tonnellerie Sylvain’s high quality and strategic positioning, Jean-Luc Sylvain’s criteria do not authorize the use of «waste» wood for alternative products. In days gone by it was used for heating purposes or carbonization (charcoal) in Aquitaine. Today, the by-products resulting from the transformation of the raw material are used to good effect by the Merranderie Sylvain Bois. The process is simple: after a necessary stop at the cutting station, a conveyor belt conveys them away to be disposed in 30 to 50 cm briquettes. AUGUST… A PARTNERSHIP IN SOUTH AFRICA… Tonnellerie Sylvain offers the first prize! The winners of the contests RisCura Red Hot Wine Awards and RisCura White Hot Wine Awards, jointly organized in South Africa by the financial services company RisCura and the magazine Winemag.co.za, received great prizes offered by Tonnellerie Sylvain. A 225-l Grande Réserve Château Tradition barrel was awarded to the red wine MR de Compostella 2013, by Bruwer Raats and his friend and associate Mzokhona Mvemve, while the white Mulderbosch Faithful Hound 2013, from the eponymous vineyard belonging to Charles A. Banks’s Terroirs Selection group, won a “Blanc” barrel. The Concours Mondial du Sauvignon: A competition in honour of the Sauvignons of the world, on 22 and 23 May in Friuli Venezia Giulia. MEMENTO 2015 As a partner of the competition since its creation in 2010, Tonnellerie Sylvain wished to continue to participate in its expansion and in promoting the wines from quality Sauvignon grapes. This competition aims to highlight the quality of wines of the best wine/oak expression by attributing, each year, medals that are reliable and thus representative. Thursday 15: Technical Morning for Oenologists of the Champagne Region The Tonnellerie supports and partners this event open to all vitiviniculture professionals on the theme of «Champagne and Terroir», during the VITeff, at the Millesium, in Epernay. 7/12 www. t onnel l erie-sylvai n.fr EVENTS 2015: VINEXPO WAS HELD FROM 14 TO 18 JUNE LAST IN BORDEAUX. The 2015 edition of the leading trade fair for operators in the wine and spirits sector was attended by 48,500 professionals and 2,350 exhibitors representing 42 producer countries. The participants welcomed the profile of the visitors, both more professional and more international than at previous editions. Friday June 19, Jean-Luc Sylvain himself conducted visit to the Tonnellerie. After an excursion on Saturday afternoon to the Bassin d’Arcachon, the trip continued in the historic French forest of Tronçais, which owes much of its fame to Colbert, one of Louis XIV’s ministers. It is highly regarded for the quality of the excellent oak it provides to Sylvain Tonnellerie. The following days: an intensive immersion in Burgundy with a visit to Tonnellerie Meyrieux, prestigious estates and the Marc Grenier Foudrerie along with Rémi Sylvain, site manager. The total commitment of Jean-Luc Sylvain (proprietor), Rodrigo Luna (Export Manager), Rémi Sylvain (Manager of Foudrerie Marc Grenier) and Claire Sylvain (Process and Communication Manager at Tonnellerie Sylvain) made this immersion trip a complete success. A very professional, warm and friendly excursion. SIMEI (INTERNATIONAL EXHIBITION OF MATERIAL FOR OENOLOGY AND BOTTLING) The 26th edition of the SIMEI, the biennial meeting dedicated to oenology equipment and bottling, was held in Fiera Rho Milano from 3 to 6 November, 2015. For four days it was the reference for vitiviniculture professionals and companies from all over the world. An interaction with 31,000 professionals from 90 countries and more than 600 high-level exhibiting companies. Among them, Tonnellerie Sylvain welcomed a great many of its Italian customers to its stand, as well as others from neighbouring countries. The event was a formidable opportunity to meet new clients and to connect with potential distributors/ agents in Russia, India and Poland. As it happens, 151 nationalities frequented the aisles of the fair, with a noticeable increase in visitors from China (+14%), Japan (+5%), the United States (+15%), Africa (+18%), and Oceania (+28%) but also from Southern Europe (+7%). In an increasingly global market, Vinexpo positions itself as the world’s meeting place for the profession, with an international DNA, ideal for companies wishing to develop major export sales. The Tonnellerie Sylvain sales force and agents seized the occasion to meet their customers from all over the world at an «off» event… presenting the art and craft of Tonnellerie Sylvain. A made-tomeasure programme, instructive, very hands-on, from 16 to 24 June inclusive, for American, Canadian, Chilean and Argentine winemakers. Fifteen customers had an in-depth encounter with the world of Bordeaux, visiting renowned estates on both the right and left banks, using Jean-Luc Sylvain’s Château La Perrière estate near Saint-Émilion as their base. A «cosy» and wine-tourist estate for a barrel tasting experience with the added charm of a warm welcome and French gastronomy. NEWSLETTER # FE B R U A R Y 2 0 1 6 8 /12 www. t onnel l erie-sylvai n.fr A SUCCESSFUL SYRAH EVENING On 17 December 2015, the Tonnellerie Sylvain organized a «Syrah in the World» evening at the Domaine Courbis in the Northern Rhone Valley, with the cooperation of the owners, Laurent and Dominique. 50 people, representing 25 estates, came together for a friendly evening of sharing around a grape variety with a worldwide vocation. The guests were captivated by the presentation of the Tonnellerie, French forests and the origin of the woods by Jean-Luc Sylvain himself. Then Marie Thomas, sales manager for South Africa and South of France, further piqued their curiosity with a fascinating presentation of the origins of Syrah. For, although Cabernet Sauvignon and Merlot initially constituted Tonnellerie Sylvain’s core business, its involvement in export has led it to work outside France with this varietal. Today, Syrah represents 50% of French grape varieties, mainly in Languedoc-Roussillon, Rhone and the South West region. Where we find more and more wine growers wishing to work these grapes while respecting the fruit, without excessive wood or heating. Ever attentive to its customers’ desires, Tonnellerie Sylvain wishes to offer them effective products that are adapted to their needs.
