cool-climate factor is
distance from the equator.
We Canadians can appreciate that the further you are
from the tropics, the colder
the average temperatures
will be. Examples of
latitude-cooled regions
include Ontario, British
Columbia, Champagne and
Burgundy in the northern
hemisphere; and Patagonia,
Tasmania and New Zealand
in the southern hemisphere.
As any mountain climber
or hiker will tell you, the
higher you go, the cooler
the air. Vineyards on

cool by virtue of their

A cool climate brings out lovely notions of white flowers
and yellow flowers in Chardonnay, and lovely crisp fruit.
Perhaps most importantly, it keeps its precision.

THE INSIDE STORY
GOOD TASTE
In the life cycle of a vineyard, one of the
most anticipated times is floraison, those few
days in early June when the tiny flowers that
will become grapes emerge. They’re a winemaker’s first reward for the meticulous care and
effort expended in the vineyard, and it’s from
these blossoms that Esprit de June is created.
The flowers are so fragile that they must
be hand-harvested as soon as they appear to
preserve their aromas and flavours. They’re
then slowly steeped in a neutral grape spirit to
extract their flavours. Though the actual recipe
for Esprit de June is a well-kept secret, the
flowers are from Ugni Blanc, Merlot and Cabernet
vines (with others such as Folle Blanche and
Sauvignon Blanc added to maintain consistent
flavour from vintage to vintage), each variety
imparting its own unique character. Once the
flavours have been extracted, the neutral spirit
is distilled in a Florentine pot still, similar to
those used by perfume producers, to further
concentrate the flavours and aromas. The
resulting liqueur is a fragrant mixture of berry
and flower notes, and a beautiful expression of
that magical time in the vineyard.
This complex and intensely flavoured
liqueur has a lovely interplay of floral
and fruit notes. Exquisitely balanced and
round, vibrant, smooth and elegant.
SERVE IT UP
Born of vine flowers, this is delicious on
the rocks, or added to wine to create an
elegant and intriguing cocktail. Simply
mix 4½ oz (135 mL) either red or chilled
dry white wine with 1½ oz (45 mL)
Esprit de June and stir gently. For more

13th bonded winery back in 1959, and the Klein
family has owned it ever since 1989. They strive for
sustainable agriculture and thus became Sonoma
County’s first carbon-neutral winery. There’s terrific

finish of this wine. Alluring aromas of mocha-coffee

graphite, pen ink, spicy oak, licorice, and earth,
the wine is full-bodied, rich, and should be an
impressive value even at the full mark-up of $40
when released in a year or so. This wine should

CUMIN-CILANTRO CHICKEN BURGERS
CEDAR-PLANKED SALMON

Topping these burgers with avocado and
iceberg lettuce gives them some great
texture. For added flavour, add your
favourite mild salsa or chutney – nothing
too strong or it will overpower the wine.
Cooking salmon on a cedar plank is a very
old method – originally it would have been
done over an open fire. Soak the plank in
water for 30 minutes before using to avoid
burning.
2 lb (1 kg) ground chicken
1/4 cup (60 mL) Vidalia or Spanish onion,
finely chopped
1 tsp (5 mL) ground cumin
1 tbsp (15 mL) fine cornmeal
1 egg yolk
2 tbsp (30 mL) fresh cilantro, finely
chopped
1 tbsp (15 mL) lime juice
1 tsp (5 mL) salt
6 cheese buns, halved crosswise
Iceberg lettuce
Tomato slices
1 ripe avocado, peeled, pitted and sliced
lengthwise
2 tbsp (30 mL) grainy mustard
2 tbsp (30 mL) ketchup
1 tbsp (15 mL) chopped fresh rosemary
2 tbsp (30 mL) olive oil
1/2 tsp (2 mL) chili powder
Kosher salt and freshly ground pepper
One 2 lb (1 kg) piece of salmon
1. In a large bowl, mix together chicken,
onion, cumin, cornmeal, egg yolk,
cilantro, lime juice and salt.
2. Once ingredients are combined, form
the mixture into 6 equal-sized patties
about 1" (2.5 cm) thick. Don’t compress
the patties too tightly, to keep them
tender.
3. Heat the barbecue on high. Place patties
on the grill and cook for 6 minutes on
each side or until cooked through and
no longer pink inside.
4. While burgers are finishing, warm
cheese buns on cooler part of the grill.
5. Serve burgers on cheese buns topped
with iceberg lettuce, tomato and
avocado.
Serves 6
1. Combine mustard, ketchup, rosemary,
olive oil, chili powder, salt and pepper.
Spread over salmon and marinate for
30 minutes.
2. Heat grill to high.
3. Place soaked cedar plank on grill and
leave for 3 to 4 minutes or until you can
smell or see smoke. Immediately turn
plank over, salt it liberally and place fish
on top, skin-side down.
4. Close cover and cook for 12 to 15 minutes
or until fish is just cooked. Remove
plank from grill and slide salmon onto
serving platter.

GRILLED RIB-EYE WITH
PEPPERCORN BUTTER

Great steaks happen when you buy excellent
meat. If the meat is good, salt and pepper
are all the seasoning you need. For extra
colour and heat, you could also add 1 tsp
(5 mL) pink peppercorns to the butter.
Peppercorn Butter
2 tsp (10 mL) black peppercorns
2 tsp (10 mL) white peppercorns
2 tsp (10 mL) green peppercorns

1 tsp (5 mL) coriander seeds
1/2 cup (125 mL) unsalted butter,
cut into chunks
Steaks
Four 10 oz (300 g) rib-eye steaks, about
1" (2.5 cm) thick
1 tbsp (15 mL) oil
Kosher salt and freshly ground pepper
1. Place peppercorns and coriander seeds
in a food processor and process until
broken apart but with some texture.
Add butter and combine. Place butter
on sheet of plastic wrap and roll into a
log. Refrigerate for up to a week (can
be frozen if not used). Cut slices off to
place on steaks as soon as they come
off the grill.
2. Brush steaks with oil, then grind a little
pepper over them. Salt just before grilling.
3. Heat barbecue to high. Place steaks
on barbecue and cook on one side for
4 minutes, turn, and continue to grill for
3 to 4 minutes longer or until done to
taste. Salt again. Serve with a pat of
Peppercorn Butter on top.

GRILLED GARDEN
VEGGIES ON COUSCOUS

To make this dish into a more substantial
main course, simply crumble some feta, or
stir chickpeas into the couscous. You’ll
need three skewers to grill the onions.
Vegetables
1 small red onion
3 skewers
1 fennel bulb
2 red peppers
1 large green zucchini
1 large yellow zucchini
1⁄3 cup (80 mL) olive oil
4 tsp (20 mL) ground cumin
2 tsp (10 mL) smoky or sweet paprika
1 tsp (5 mL) coarse sea salt or 1/2 tsp
(2 mL) table salt
Couscous
1 1/2 cups (375 mL) orange juice or
chicken broth
2 tbsp (30 mL) butter
1/2 tsp (2 mL) salt
1 cup (250 mL) couscous

2 green onions, sliced, or 1/2 cup (125 mL)
snipped chives
2 tbsp (30 mL) olive oil
1/2 cup (125 mL) roughly chopped
fresh mint
1. Preheat barbecue to medium. Slice
onion into rounds, about 1/2" (1 cm)
thick. Peel off the skins. To hold slices
together, carefully thread a skewer
through one side of the slice and push
through to the other side. If room on the
skewer, add a second slice. Repeat with
remaining slices. Set in a large bowl.
2. Remove fronds and any tough outer
pieces from the fennel and discard.
Trim root end. Cutting across the
thinnest part of the fennel, slice into
1/2"-thick (1 cm) pieces. Add to bowl
containing the onion.
3. Slice peppers in quarters and remove
seeds. Trim ends from zucchini, then
diagonally slice into thick ovals. Add to
the vegetable bowl.
4. In a small bowl, stir 1⁄3 cup (80 mL) oil
with cumin, paprika and salt.
5. Before barbecuing, oil the grill and
drizzle cumin oil over vegetables in the
bowl. Use your fingers or a brush to rub
evenly over all.
6. To barbecue, spread vegetable and
onion skewers out on the hot grill (they
may have to be done in two batches)
and cook over medium, uncovered and
turning occasionally, until grill marks
form on both sides and vegetables are
tender, 5 to 7 minutes a side. As each
is done, remove to the bowl.
7. Prepare couscous by heating orange juice
with butter and salt in a saucepan until
boiling. Stir in couscous. Remove from
the heat and cover. Let sit 7 minutes, then
fluff with a fork, separating any clumps.
8. This dish can be served warm or at
room temperature. Before serving, stir
green onions into couscous and spoon
onto a large platter or serving dish. Toss
2 tbsp (30 mL) oil with the vegetables
until coated, then sprinkle with mint.
Arrange over couscous and serve. If you
want to heat the dish, spoon couscous
into a large ovenproof dish and top with
vegetables. Lay a piece of foil loosely
overtop. Bake in a 350°F (180°C) oven
for 25 to 30 minutes.

GRILLED HALIBUT WITH
HERB & CAPER VINAIGRETTE

Halibut grills nicely, and the mustard-based
marinade helps lock the moisture in.
Marinade
1 tbsp (15 mL) Dijon mustard
1 tbsp (15 mL) lemon juice
1 tbsp (15 mL) chopped tarragon
1 tsp (5 mL) chopped garlic
1/2 tsp (2 mL) grated lemon rind
3 tbsp (45 mL) olive oil
Salt and freshly ground pepper
Six 6 oz (175 g) portions of halibut
Vinaigrette
2 tbsp (30 mL) red wine vinegar
1 tbsp (15 mL) chopped chives
1 tbsp (15 mL) chopped tarragon
1 tbsp (15 mL) capers, rinsed and
chopped
1 tsp (5 mL) grainy Dijon mustard
1/4 cup (60 mL) olive oil
1. Combine mustard, lemon juice, tarragon,
garlic and lemon rind in a small bowl.
Whisk in olive oil until uniform and
season with salt and pepper to taste.
Spread mixture over halibut and allow
to stand at room temperature while
preparing vinaigrette.
2. Combine vinegar, chives, tarragon,
capers and grainy Dijon mustard in a
small bowl. Whisk in olive oil and season
with salt and pepper to taste. Reserve.
3. Preheat barbecue on medium-high
heat. Oil the section of the barbecue
where you’ll cook the fish. Place halibut
skin-side up on barbecue and grill for
5 minutes or until the flesh is grillmarked and fish is easy to flip. Cook
halibut on skin side for 5 minutes
longer or until fish is firm and opaque.
Remove from grill, drizzle fillets with
vinaigrette and serve.

You’ll need two 12" x 6" (30 x 15 cm)
maple planks for this recipe. One to two
hours soaking time is enough to prevent
the wood from burning too quickly, but
allowing them to soak overnight is ideal.
The ribs cook for four hours, so start
making them well before dinner.
Barbecue Sauce
1 cup (250 mL) apple juice
3/4 cup (175 mL) ketchup
3 tbsp (45 mL) cider vinegar
2 tsp (10 mL) light soy sauce
1 tsp (5 mL) Worcestershire sauce
1 tsp (5 mL) molasses
1/2 tsp (2 mL) chili powder
1/2 tsp (2 mL) garlic, minced
1/4 tsp (1 mL) black pepper
Rub
1 tsp (5 mL) paprika
1 tsp (5 mL) chili powder
1 tsp (5 mL) thyme
1 tbsp (15 mL) garlic powder
1 tsp (5 mL) brown sugar
1 tsp (5 mL) dry mustard
1 tsp (5 mL) kosher salt
1 tsp (5 mL) black pepper
2 full slabs baby back ribs
1. To make sauce, combine all ingredients
in a medium saucepan. Cook over high
heat until reduced by half, or to about
1 cup (250 mL).
2. To make rub, add all ingredients to a
small bowl and stir to combine.
3. Peel the thin membrane off the back of
the ribs (this helps the meat cook more
evenly and absorb more flavour while
cooking). Using your fingertips, rub the
meat liberally with the rub, wrap in plastic
wrap and refrigerate for 1 to 3 hours.
4. Meanwhile, soak maple planks in water
for 1 to 2 hours.
5. Ignite grill, turn to high and preheat for
10 minutes. Turn one side off leaving the
other on, and place planks on the side that
has been turned off. Close lid and wait for
the planks to begin to crackle and smoke,
between 3 to 5 minutes. Turn planks over
and place a rack of ribs on each plank,
reduce heat to low, and close lid. Cook for
3 hours, maintaining a temperature
between 275-300°F (140-150°C).
6. Brush both sides of ribs liberally with
barbecue sauce and continue cooking
with the lid closed for an additional hour.
Ribs are done when the sauce has
become sticky and the meat separates
easily from the bones.
