Stuffed Manicotti with Homemade Crepe Shell and Filling

Ingredients:
Directions:
All-Purpose Flour
Eggs
Water
Salt
Pepper
Dried or Fresh Parsley
Ricotta Cheese
Mozzarella Cheese
Parmesan Cheese
1 - 2 Jars of Sauce or
Homemade Sauce
Cooking Spray
Tin Foil
1 - Combine 2 cups all-purpose flour, 2 cups water, 6 eggs and 1/4 teaspoon of salt in
Crepes:
2 cups All-Purpose Flour
2 cups Water
6 Eggs
1/4 teaspoon Salt
Filling:
1 large container of Ricotta
Cheese
1 cup Parmesan Cheese
1 - 1 1/2 tablespoons Parsley
2 whole Eggs
1 teaspoon Salt
1/4 - teaspoon Black Pepper
mixing bowl till ingredients are combined throughly and mixture is smooth. Let
mixture stand for atleast a 1/2 hour or more.
2 - After batter rests, heat an 8inch or larger skillet on low heat. Spray pan with cooking
spray. Pour approximately 4-5 tablespoons of batter in pan, rotating pan quickly
spreading batter evenly. Cook crepe on one side till it curls slightly and flip, making
sure not to over cook. Desired color is golden not brown. Flip on to wire rack to cool
and continue cooking till batter is gone, spraying between each shell.
3 - Preheat oven to 350 degrees.
4 - In a large mixing bowl, combine ricotta, mozzarella, parmesan cheese, eggs, salt,
pepper and parsley. Beat till mixture is blended well. Place mixture in ziplock bag and
cut off small corner.
5 - Line sauce in the bottom of large baking pan. Grab ziplock bag full of filling and pipe
a generous amount down the center of each crepe. Roll up crepe placing them seam
side down into a pan. You will have more crepes than what will fit in your pan. Layer
crepes on top of each other or use a seperate sauce lined pan. Add sauce to top of
crepes.
6 - After crepes are finished, sprinkle with remaining 1/4 cup parmesan cheese. Then top
whole pan with shredded mozzarella cheese and cover with tinfoil making sure tinfoil
is not touching cheese. Use tooth picks if need be to keep tinfoil from touching.
Place in the Oven.
7 - Bake for 1 hour - 1 1/2 hours in a 350 degree oven. Remove tinfoil at 1 hour mark and
allow cheese to become golden and bubbly.
