What are Tapas?
A ‘tapa’ is not a type of food, but a way of eating. Originally a tradition from Spain, tapas are
small platings of a dish. They are not "hors d'oeuvres," and are meant to be enjoyed until full!

A Virginia native, Chris began his culinary career in various bars, grills, and high end restaurants in Roanoke,
VA, and Pittsburgh, PA. Chris formally trained at Le Cordon Bleu’s Pennsylvania Culinary Institute in
Pittsburgh, PA. Prior to joining the Liberty Mountain Resort team, he was Sous Chef at Hyatt Dulles outside
Washington D.C. for 3 years and Executive Chef at Capital Retreat Center in Waynesboro, PA, for nearly 5
years. Chris is passionate about using the freshest ingredients possible while supporting local farmers. He also
strives to “stay true to ingredients,” but put a new spin on the ordinary. Chris’ spirit and energy shine through
in both his food and his staff.

depending on the angle of view. The fused glass pieces are made by cutting multiple

is made from fine grade Texas flint stone, knapped by a local flint knapper.
The handle is sculpted out of the base of a mature deer antler. The hafting glue is
derived from a composition of Spruce pitch and other additives. The binding material,
at the base of the blade, is cut and stretched raw hide, from a local snapping turtle.
This knife is the real deal and would be similar to what would have been carried by
prehistoric, early Americans.

How you made an Impact!
Strawberry Hill raised $3,150 at last year’s Auction Fundraiser. Following the
fundraiser, our members contributed an additional $3,400 to support the project.
The $6,550 was used to hire the architecture firm of Eric Jarvinen Associates Inc.
to design the facility pictured below and obtain the permits to begin construction.
The support received by you to create the design has helped Strawberry Hill to
obtain $30,000 from Thomas & Florence Metz and the Robert C. Hoffman
Charitable Trust to build the project.
Strawberry Hill has now raised 60% of our goal of $50,000 to build the new

2013 Paddle Call
Strawberry Hill Nature Preserve is excited and proud to
announce its newest environmental education project: a
brand new Barred Owl exhibit and educational program!
The Barred Owl (Strix varia) is a raptor species native to
Barred Owls are considered an indicator species for the health
of forests because they are very sensitive to the effects of
Their distinctive call of ‘Who cooks for you? Who cooks for
you all?’ can often be heard after dark at Strawberry Hill.
We need your help to make this plan a
reality! The projected cost of this project is
$4,500. This money will cover the following
aspects of the project:
Acquiring state and federal permits
Renovations to our current aviary
Veterinary care
Marketing and program materials
General bird upkeep
At least 12 owl programs will be offered annually.
These programs will be offered to people of all
ages, both on and off Strawberry Hill grounds.
The program is expected to reach a minimum
of 1,200 people every year and bring in about
$4,000 annually.
